SUNNY'S EASY OOEY GOOEY JALAPENO POPPER DIP

Steps:
- For the dip: Bake or slow cook.
- To bake, preheat the oven to 400 degrees F. In a large bowl, mix the cream cheese, sour cream, shredded cheese, seasoning mix and jalapenos. Pour into an 8-inch square dish and bake until bubbly, about 20 minutes.
- To slow cook: Turn a 6-quart slow cooker to high and add the cream cheese, sour cream, shredded cheese, seasoning mix and jalapenos. Stir, cover and cook until everything melts, 2 to 3 hours. Stir again.
- For the topping: When ready to serve, top with the shredded cheese and fried jalapenos.
JOHNNY JALAPENO'S ROUND-EM UP DIPPING SAUCE (AND HAM GLAZE)
This thick, chutney-like sauce goes great brushed on roast chicken, grilled ribs, or shishkabobs. Great to serve centered in a deli meat platter. Decorating a baked ham with pineapple slices and cherries is nice, but if you want something different with a little kick to it, then this is the recipe for you.

Steps:
- DIPPING SAUCE: To a medium saucepan mix water and cornstarch until cornstarch is dissolved. Place on burner over medium low heat and add remaining sauce ingredients.
- Let simmer 20-30 minutes, stirring occasionally until thickened. Let cool slightly and place in a food processor or use an emulsion blender to get a smooth consistency.
- Serve warm or cold for a meat or vegetable platter. As a glaze for grilling, simply brush on the last few minutes of grill time. For a roast chicken or turkey (whole or parts), follow glazing directions for ham.
- BAKED HAM: Preheat oven to 325°F Using a sharp knife, score a 3 lb pork shoulder (or other ham roast) skin 1/4" deep in a diagonal direction. Repeat about 2" apart. Now cut opposite lines to create a diamond pattern. Place about 2 tablespoons whole cloves in the points of the diamonds, pushing them into the ham.
- GLAZING: Remove ham 30 minutes before done and spread (or brush) about 1 cup of the sauce all over the ham. Sprinkle with 1/2 cup brown sugar and continue to bake for another 30 minutes.
- Remove from oven and drizzle about 1/3 cup honey over ham. Let rest 20-30 minutes before slicing. Serve with additional glaze at the table for a dipping sauce or garnish.
HAM AND CHEESE JALAPENO POPPERS
Steps:
- Combine the cream cheese, ham, Swiss, mozzarella, pickles, mustard, cayenne and paprika in a medium bowl.
- Stuff the jalapeno halves with the filling and place on a baking sheet lined with parchment.
- Set up 3 bowls. In the first, mix together the flour with a pinch of salt and a few cracks of pepper. In the second, beat the eggs with the milk, a pinch of salt and a few cracks of pepper. In the third, place the cracker crumbs.
- Coat the stuffed peppers first in the flour mixture, then in the egg mixture and then in the cracker crumbs.
- Heat 2 inches of oil in a heavy-bottomed pot until a deep-frying thermometer registers 365 degrees F.
- Fry the stuffed jalapenos in batches until golden brown on all sides, about 2 minutes per batch. Alternatively, you can bake the poppers in the oven at 350 degrees F for 30 minutes.

- In a medium glass or enamel lined sauce pan over high heat, combine oil, peppers, garlic, onion and salt; saute for 4 minutes. Add the water and cook for 20 minutes, stirring often. Remove from heat and allow mixture to cool to room temperature.
- Transfer the mixture to a food processor and puree until smooth. With the processor running, slowly add the vinegar.
- Pour into a sterilized jar with a tight lid. This sauce will keep for 6 months when stored in the refrigerator.

RETRO HAM GLAZE

Steps:
- To glaze ham, remove from the oven one half hour before done. Pour off the drippings.
- With a sharp knife, score the fat in a diamond pattern.
- Cover the ham with a mixture made of brown sugar, mustard, and grated orange rind.
- Insert whole cloves in each diamond, and pour on orange juice.
- Return to oven and baste often for the remaining half hour.
- Remove from oven 15 minutes before serving to make carving easier.

- Set aside 1 jalapeno pepper. Cut the stems off the rest; slice in half lengthwise, and remove the seeds.
- Place all of the peppers in a large pot of boiling water. Boil peppers about 15 minutes. Reserve about 2 tablespoons of boiling water, and drain the rest.
- Cut the stem off the remaining whole pepper, and place all of the the peppers into a blender. Pour in reserved water and canola oil, and season with salt and pepper. Blend until smooth and creamy. Serve hot or chilled.
