ZOE'S EASY, RUSTIC MINI PIZZAS



Zoe's Easy, Rustic Mini Pizzas image

I created these delicious mini pizzas. They are more like a pizza bun. The dough is fluffy and tender, the sauce is fresh, and the cheese crisp and a little gooey. Very easy appetizer and absolutely delicious. A great appetizer, snack, or light supper!

Number Of Ingredients 15

3 cups all-purpose flour
2 cups warm water
3 tablespoons olive oil
2 tablespoons instant yeast
1 teaspoon kosher salt
1 teaspoon white sugar
1 ½ cups prepared tomato sauce
1 clove garlic, diced
2 tablespoons fresh oregano, diced
2 tablespoons fresh basil, diced
2 tablespoons olive oil
1 tablespoon white vinegar
1 teaspoon white sugar
1 cup shredded mozzarella cheese
1 cup chopped fresh spinach, or to taste

Steps:

  • Mix flour, water, olive oil, yeast, salt, and sugar together in a large bowl. Use an ice cream scoop to place 12 balls of dough onto the prepared pan, patting down slightly; dough will be very sticky. Let sit until risen, about 30 minutes, without kneading or punching down.
  • Preheat the oven to 425 degrees F (220 degrees C). Grease a baking pan. Toss an ice cube into the bottom of the oven to add some humidity.
  • Combine tomato sauce, garlic, oregano, and basil in a bowl. Add olive oil, vinegar, and sugar; stir very well.
  • Spread 1 to 2 tablespoons tomato sauce on each dough ball. Sprinkle 1 to 4 tablespoons mozzarella cheese on top and add spinach.
  • Bake in the preheated oven for 15 minutes. Let cool slightly before serving.

2 large store-bought pre-baked pizza shells
Your favorite jarred tomato sauce
1 pound grated mozzarella cheese
Grated Pecorino Romano or Parmigiano-Reggiano, as needed
Leaves from 1 large sprig fresh basil

Steps:

  • Preheat oven to 450 degrees F.
  • Cut rounds from pizza dough using a 2-inch round cutter to make tiny individual crusts. Place pizza rounds on a baking sheet, top with sauce, and cover with mozzarella. Sprinkle a light dusting of grated Pecorino or Parmigiano on top. Bake until cheese is perfectly melted, approximately 10 minutes.
  • Cut basil leaves into thin strips and sprinkle on top of pizzas with some more grated cheese before serving.

3 Triscuit crackers
3 pepperoni slices
3 teaspoons shredded cheddar cheese, or a mozzarella and cheddar mixture

Steps:

  • Top each of 3 Triscuit crackers with 1 pepperoni slice and 1 teaspoon shredded cheddar cheese or cheddar/mozzarella mixture. (I love mozzarella on regular pizza, but found that using all mozzarella cheese in this recipe tasted a little bland to me.).
  • Microwave on high 15-30 seconds or until cheese is melted.
  • When making a bunch, I filled up a microwaveable plate with as many crackers as I could, then cooked them for about 45 seconds, or until the cheese was melted. I didn't have to keep them warm between batches because as I brought each group out, they were eaten even before the next batch was done cooking.

My kindergarten teacher's son Joshua created these pizzas. You see when I was in kindergarten he wasn't born, but my niece, Mia, is in his class now. Small world huh? Anyways Josh created these "Little Pizzas" when Mia was at his house for a play date! This recipe is in the words of Joshua himself (with a bit of punctuation hehe!). He says: "deez Pizzis are fum Berklee (these pizzas are from Berkeley). Enjoy! Love Joshua and Mia and Andi. NOTE: All toppings should be ALREADY cooked! For the toppings you can add anything! Josh's sister Ella is lactose intolerant so we used pesto! Be creative--it's YOUR pizza!

catsup or tomato sauce
8 slices swiss cheese (Mia made that up!)
cheddar cheese (Josh did that 1! or mozzarella cheese)

Steps:

  • Heat oven to 350°F
  • Toast 2 English muffins for each person in a toaster or toaster oven.
  • Spread on tablespoon of catsup or tomato sauce on the English muffins.
  • Place desired amount of cheese on "pizza".
  • Add desired toppings.
  • Cook in oven for 5-10 minutes until cheese is melted.
  • Let cool and enjoy your creation!

  • Cover with another baking sheet (inverted). Wrap in plastic wrap and let sit at room temperature for 1.5-2 hours.
  • For the sauce, in a medium saucepot over medium heat add olive oil and once hot add roughly chopped garlic, and red pepper flakes. Stir and cook until fragrant.
  • Add in crushed tomatoes. Stir together and bring to a light simmer. Cook for 6-8 minutes then season to taste with salt and pepper. Cool completely.
  • On the dough, add a generous layer of sauce and sprinkle on grated mozzarella cheese topped with pepperoni.
  • Bake in a 500-550F degree oven for 20-25 minutes or until the crust is golden brown.
