MEMORIES OF CHICKEN CASSEROLE
I got this from a Southern cooking website. I LOVE chicken casseroles and this one is my favorite. I especially love it with the cranberry relish! This is comfort food at its best!

Steps:
- Spread the chicken cubes in bottom of a 2-quart flat casserole dish.
- Dilute soup with milk and pour over top of chicken.
- Combine celery and onion, cook in broth until tender. (If you do not have broth and have used canned chicken cubes, use 1 cup water, 1/2 stick butter and 1 chicken bouillon cube instead). Make dressing by combining broth, celery, onion, egg, stuffing and parsley flakes.
- Spread the dressing on top of the soup, sprinkle with paprika.
- Bake at 350° for 35-40 minutes or until it's bubbling and brown. Serve with heaping spoons of Cranberry relish.

Steps:
- Coat the chicken in flour. Heat large fry pan; add the oil, and seal chicken until turning a golden brown. Place in casserole dish.
- Add all the vegetables and the bacon/ham and cook for 2 minutes. Add the wine, stock cubes oregano, cayenne pepper simmer for another couple of minutes.
- Add to the chicken, making sure that there is enough liquid to not quite cover the meat. Add a little extra water if necessary. Cook in a moderate oven 180°C for 1 hr 30 minutes, or until cooked.
- To microwave, bring to the boil on full, then set on 30% for 45 minutes to simmer.
- N.B a nice variation of the above recipe - use 1 can of tomatoes, with herbs and chili, blend briefly and add when cooking the vegetables. Cut down on the original amount of water.
- Serve with new potatoes or rice and fresh vegetables.

A rich, creamy chicken sauce is rolled in croissants and baked to form delicious puffs. Wonderful for get togethers!

- In a medium saucepan over medium heat, slowly cook and stir skinless, boneless chicken breast halves, onion and garlic. Cook until onions are tender and chicken is lightly browned.
- In a medium bowl, blend chicken mixture, cream cheese and butter until creamy.
- Preheat oven to 325 degrees F (165 degrees C).
- Unroll croissants and divide in half to create 12 rectangles. Place approximately one tablespoon of the chicken mixture on each rectangle. Fold into balls.
- Arrange balls on a large baking sheet. Bake in the preheated oven 12 minutes, or until golden brown.

"So simple, but so tasty!" At the Puffy Muffin, this is served with Cranberry Salad and a Roll, plus one side. I cooked my chicken the night before, then easy to just put together.

- Combine all of the ingredients and mix well.
- Pour into a greased 9" x 9" pyrex dish.
- Top the casserole with the cheese and crushed potato chips.
- Bake in a preheated 350 degree oven for 30 minutes or until bubbly.
