My mom's easy recipe--Chewy, yummy cookies with breakfast cereal flakes, chocolate chips and nuts...This recipe can be halved or doubled, depending on how many cookies you want! Enjoy!

½ cup canola oil
½ cup margarine
1 cup brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ½ cups cornflakes cereal
1 cup rolled oats
1 cup semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
  • In a large bowl, mix together the canola oil, margarine, brown sugar and white sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, baking powder and salt; stir into the sugar mixture. Mix in the cornflakes cereal, oats, chocolate chips and walnuts. Drop by heaping teaspoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven, until golden brown. Allow cookies to cool slightly on the cookie sheets before removing to wire racks to cool completely.

½ cup unsalted butter, softened
½ cup sugar
½ cup firmly packed light brown sugar
1 egg
½ teaspoon vanilla extract
1 cup flour
½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 cup rolled oats
1 cup cornflakes
½ cup sweetened flaked coconut
½ cup coarsely chopped pecans

Steps:

  • Preheat oven to 350° F. Line baking sheets with parchment; set aside.
  • In a large mixing bowl with an electric mixer or in the bowl of a stand mixer fitted with the paddle attachment, cream butter; add the sugars, beating well. Add egg and vanilla; beat well.
  • In a medium bowl, combine the flour, baking powder, baking soda, and salt. Add to the butter mixture, beating well. Stir in the oats, cornflakes, coconut, and pecans.
  • Use a cookie scoop to drop the dough onto the prepared baking sheets 2 inches apart. Bake for 10-12 minutes. Remove to wire racks to cool completely.

1/2 cup milk chocolate chips

Steps:

  • 1. Stir together flour, baking powder, soda and salt. Set aside.2. In large mixing bowl, beat together margarine and sugar until light and fluffy. Add eggs and vanilla. Beat well. Add flour mixture, mixing until combined. Stir in 2 cups of the crushed KELLOGG'S CORN FLAKES cereal and morsels. Portion, using 1/4-cup measure, into remaining cereal, rolling to coat. 4 cups cornflakes
1-1/2 cups sweetened shredded coconut
3/4 cup chopped pecans
1-1/2 cups sugar
1/2 cup light corn syrup
1/2 cup evaporated milk
1/4 cup butter
Dash salt

Steps:

  • Combine cornflakes, coconut and pecans; set aside. In a small heavy saucepan, combine remaining ingredients. Cook, stirring constantly, over medium heat until a candy thermometer reads 240° (soft-ball stage). Add syrup mixture to dry ingredients; stir well. Drop by tablespoonfuls onto waxed paper. Let stand until set.

6 cups corn flakes, crushed to equal 4 cups,divided
1/2 cup milk chocolate chips
1/2 cup peanut butter chips
vegetable oil cooking spray

Steps:

  • Combine flour, baking powder, baking soda and salt and set aside.
  • In large bowl beat tog margarine and sugar till light and fluffy, then eggs and vanilla.
  • Beat well.
  • Add flour mixture, mixing till combined.
  • Fold in 2 cups crushed cereal, chocolate and peanut butter chips.
  • Drop a 1/4 cup measure of batter into remaining cereal and roll to coat.
  • Place on cookie sheets and flatten to 3 inches in diameter, then bake at 350 degF for 15 minutes or till light golden brown.
  • Remove immediately from sheets and cool on wire racks.
