BAKED SHELLS AND MEATBALL CASSEROLE

My kids love meatballs and shell pasta, so we came up with this dish one night - it is a cross between a baked pasta and meatball sub casserole!

1 1/2 lbs prepared frozen or homemade meatballs
1 (16 ounce) box large shell pasta
2 cups ricotta cheese
2 cups shredded mozzarella cheese
1/2 cup sour cream
1 teaspoon italian seasoning
1 (28 ounce) jar prepared spaghetti sauce or 1 (28 ounce) jar homemade spaghetti sauce
grated parmesan cheese, to taste

Steps:

  • Preheat oven to 350°F.
  • Boil pasta according to directions- making sure to not overcook (al dente)!
  • If meatballs are frozen, thaw--I like to brown mine either on the stove or in the oven.
  • Combine the ricotta, sour cream and Italian seasoning- I add an extra dash of garlic and freshly ground pepper.
  • Spray a 9x13 deep baker with Pam.
  • Spread a thin layer of sauce on the bottom of baking pan.
  • Top this with 1/2 of the pasta shells drained.
  • Top with the ricotta mixture.
  • Top with all the meatballs.
  • Then layer with remaining 1/2 of shell pasta.
  • Top with all the sauce.
  • Top with the mozzarella and Parmesan cheese (I just sprinkle a little on top).
  • Bake at 350°F for 30 minutes until heated through and cheese is bubbly!

3 1/2 cups torn stale Italian bread (about 1/4 loaf)
1 cup whole milk
2 large eggs
2 pounds ground beef chuck
1 small bunch parsley, chopped(about 1 cup)
1/2 cup grated parmesan cheese
1 clove garlic, grated
Kosher salt
1/2 teaspoon red pepper flakes
4 mini mozzarella balls (bocconcini)
2 tablespoons extra-virgin olive oil
3 cloves garlic, thinly sliced
1/4 to 1/2 teaspoon red pepper flakes
1 28-ounce can crushed tomatoes
3 to 4 sprigs basil, plus chopped leaves for topping
Kosher salt
Ricotta cheese, for topping

Steps:

  • Make the meatballs: Preheat the oven to 400 degrees F and brush a baking sheet with olive oil. Pulse the bread in a food processor to make coarse crumbs. Transfer to a small bowl, add the milk and set aside to soak. Lightly beat the eggs in a large bowl, then add the beef, parsley, parmesan, garlic, 1 teaspoon salt and the red pepper flakes; mix with your hands to combine. Add the bread-milk mixture and mix until just combined (do not overmix).
  • Dampen your hands and shape the meat mixture into 4 large balls. Make an indentation in the center of each with your thumb and stuff with a mini mozzarella ball, then mold the meat around the cheese. Arrange the meatballs on the prepared baking sheet and bake until browned and firm, 25 to 30 minutes.
  • Meanwhile, make the sauce: Heat the olive oil in a large deep skillet over medium-high heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic softens, about 1 minute. Add the tomatoes, 1 cup water, the basil sprigs and 1/2 teaspoon salt. Bring to a boil, then reduce the heat to low and simmer until thickened, about 30 minutes.
  • Remove the meatballs from the oven and add to the sauce, spooning some of the sauce on top. Continue cooking, occasionally spooning the sauce over the meatballs, until tender and cooked through, about 6 minutes. Serve with ricotta and chopped basil.
  • You can form all of these meatballs a day ahead; cover and refrigerate until ready to cook.

2/3 cup chopped onion
2 cups water
2 cans (6 ounces each) tomato paste
1 tablespoon beef bouillon granules
1-1/2 teaspoons dried oregano
1 carton (15 ounces) ricotta cheese
2 cups shredded part-skim mozzarella cheese, divided
1/2 cup grated Parmesan cheese
1 large egg, lightly beaten
24 jumbo pasta shells, cooked and drained

Steps:

  • In a large skillet, cook beef and onion over medium heat until the meat is no longer pink, breaking meat into crumbles; drain. Stir in the water, tomato paste, bouillon and oregano. Cover and simmer for 30 minutes. , Meanwhile, in a large bowl, combine the ricotta cheese, 1 cup mozzarella, Parmesan cheese and egg. Stuff shells with the cheese mixture., Arrange shells in a greased shallow 3-qt. or 13x9-in. baking dish. Spoon meat sauce over shells. Cover and bake at 350° for 30 minutes. 12 precooked turkey meatballs, thawed
12 jumbo pasta shells
1 1/2 cups ricotta cheese
1 cup marinara sauce
1/2 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350.
  • Spray a 9x13 baking pan with nonstick cooking spray.
  • Boil the jumbo pasta shells according to the package directions.
  • Drain and rinse shells with cool water.

Steps:

  • In a medium bowl, mix together the beef, pork, bread crumbs, onion, Parmesan cheese, garlic, parsley, eggs, salt, and pepper until just combined.
  • Preheat the oven to 425°F (220°C).
  • Take a walnut-sized portion of the meat mixture and roll into a ball. Repeat with remaining meat and transfer to an oiled wire rack set over a baking sheet.
  • Bake the meatballs for 10 minutes, until golden brown.
  • Make the ricotta-herb mixture: combine the ricotta cheese, basil, parsley, Parmesan cheese, and salt in a medium bowl and mix well.

2 cups cooked cubed chicken breasts (see recipe), or use 2 cups cooked pork or stewed beef
1/2 pound spinach, picked over to remove any tough stems, rinsed and drained
8 tablespoons freshly grated Parmesan cheese
1/2 teaspoon freshly grated nutmeg
Salt to taste, if desired
Freshly ground pepper to taste
1 teaspoon finely minced garlic
2 eggs, lightly beaten
6 tablespoons heavy cream
4 cups Bolognese sauce or cooked meat and tomato sauce (see recipe)

Steps:

  • Preheat the oven to 400 degrees.
  • Drop the jumbo shells into boiling water and cook about 10 minutes or until tender but not overcooked. Drain.
  • Grind the chicken and set it aside.
  • Drop the spinach into a little boiling water and cook, stirring, until wilted. Drain well. Let cool. Chop the spinach. There should be about half a cup. Add the spinach to the ground chicken. Add six tablespoons of the grated cheese, the nutmeg, salt, pepper, garlic, eggs and cream. Blend well.
  • Spoon a layer of sauce over the bottom of a casserole large enough to hold the stuffed shells in one layer.
  • Fill each shell with an equal portion of the chicken mixture. Arrange the shells stuffed side up in a casserole. Spoon the remaining sauce over the shells. Sprinkle with the remaining two tablepsoons of grated cheese. Bake 25 minutes.

1/4 cup coarsely chopped onion
2 cloves garlic, coarsely chopped
4 (28-ounce) cans whole peeled plum tomatoes
2 bay leaves
1/2 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
2 pounds ground beef chuck
1/2 cup freshly grated Romano cheese, plus more for serving
1 cup dried plain breadcrumbs
1/4 cup finely chopped fresh flat-leaf parsley leaves
1/4 cup finely chopped onion
2 large eggs
1 teaspoon coarse salt
1/2 teaspoon freshly ground pepper
1/4 cup olive oil, for frying
1 pound cooked spaghetti, for serving

Steps:

  • Make the sauce: Heat olive oil in large saucepan over medium heat. Add onion and garlic and cook, stirring, until translucent. Using your hands, crush tomatoes and add to saucepan, along with their juices; stir to combine. Add bay leaves, salt, and pepper. Cover, bring to a boil, and immediately reduce to a simmer.
  • Make the meatballs: Place beef, cheese, breadcrumbs, parsley, onion, eggs, salt, and pepper in a large bowl. Gently mix together by hand to combine. Wet hands with cold water and roll meat mixture into 1 3/4-inch balls.
  • Heat olive oil in a large nonstick skillet over medium heat. Working in batches if necessary, place meatballs in skillet. Cook until browned on all sides, but not cooked through. Transfer meatballs to a paper towel-lined baking sheet to drain.
  • Transfer meatballs to sauce and gently stir from the bottom up to coat with sauce. Cover and let simmer for 30 minutes. Uncover and reduce heat. Continue cooking, stirring every 15 minutes, for 3 hours more. Serve with spaghetti, sprinkled with more cheese, if desired.
