CINNAMON ROASTED SWEET POTATOES



Cinnamon Roasted Sweet Potatoes image

Slices of sweet potato baked with cinnamon and brown sugar. The caramelized brown sugar make these potatoes taste like candy! I attended a catered dinner and the caterer served these with a beautiful turkey dinner. I begged for the recipe, been making it ever since.

¼ cup vegetable oil
2 pounds sweet potatoes, peeled and sliced
2 tablespoons brown sugar
1 teaspoon ground cinnamon
¾ teaspoon salt
1 pinch freshly ground pepper
1 tablespoon fresh lime juice

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Pour the oil into a 9x13 inch baking dish, and place in the oven until hot, about 5 minutes.
  • Add potatoes to the oiled dish, and bake for 20 minutes in the preheated oven, turning after 10 minutes. In a small bowl, mix together the brown sugar, cinnamon, salt, and pepper.
  • After the 20 minutes is up, remove the potatoes from the oven, and sprinkle with the brown sugar mixture. Stir to coat. Return to the oven, and roast for another 10 minutes, or until potatoes are tender and golden brown. Stir potatoes as necessary to allow them to brown evenly.
  • Remove potatoes to paper towels to drain, then transfer to a serving dish, and sprinkle with lime juice.

Breakfast Sweet Potato Dip image

This is a good choice for breakfast (anytime, really) along with some fresh fruit. We particularly enjoy it with cinnamon tortilla chips (see Annie's Fruit Salsa and Cinnamon Chips on this site), toasted cinnamon-raisin bread triangles, mini bagels, apple wedges, etc.

1 medium sweet potato
⅔ cup low-fat vanilla Greek yogurt
2 tablespoons orange juice
1 tablespoon creamy peanut butter
½ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or foil.
  • Place potato on the baking sheet and, using a fork, repeatedly poke the top to release steam and keep the potato exploding in the oven.
  • Bake until sweet potato is fork-tender and cooked through, 45 to 50 minutes. Set aside until cool enough to handle, about 10 minutes.
  • Cut cooled sweet potato in half, scoop out the flesh, and place in a bowl. Using an electric mixer, whip until smooth. Add yogurt, orange juice, peanut butter, and cinnamon. Mix on low speed until blended and smooth.
  • Spoon sweet potato mixture into a bowl and serve.

  • Melt the butter into the buttermilk in a small saucepan over medium-low heat, stirring occassionally until the butter is melted. Be careful not to let it scorch. Remove from heat and let cool for 10 minutes.
  • In a medium bowl combine the brown sugar, granulated sugar and cinnamon by stirring with a whisk. Set aside until ready to use.
  • Place however many rolls you’d like to bake right away or the next day in a greased baking dish. Cover loosely with plastic wrap and place the dish on the stovetop and preheat your oven to 400℉. Alternatively, chill the pans of rolls in the fridge overnight.
