These are very good, and very easy; the meatballs are made in cooked in a slow cooker. I sometimes like to add a can of chunk pineapple when I make them, and then I substitute pineapple juice for the water.

1 (16 ounce) can whole cranberry sauce
27 ounces Bavarian-style sauerkraut, undrained
1 cup water
1 cup packed brown sugar
1 (16 ounce) package frozen meatballs

Steps:

  • In a medium size mixing bowl, combine chili sauce, cranberry sauce, sauerkraut, water, and brown sugar. Mix well. Pour sauce and meatballs in a slow cooker, stir.
  • Cook, covered, at a medium temperature for 4 hours. Stir occasionally to coat meatballs.

This dish has delighted guests as well as family. I don't remember where this recipe came from, but it has been a family favorite for many years. It's an excellent German dish, similar to sauerbraten, but you don't have to marinate the meat for several days. The meat is very flavorful and tender.

3/4 pound beef stew meat, cut into 3/4-inch cubes
1 tablespoon canola oil
1-1/4 cups beef broth
1/3 cup thinly sliced onion
1 bay leaf
1/2 teaspoon caraway seeds
1/8 teaspoon pepper
1/4 to 1/3 cup white vinegar
1/2 teaspoon sugar
1/4 medium head red cabbage, cut into 2 wedges
1/4 to 1/3 cup crushed gingersnap cookies (about 8 cookies)

Steps:

  • In a large saucepan, cook beef in oil until browned; drain. Stir in the broth, onion, bay leaf, caraway seeds and pepper. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 hours or until meat is almost tender., Combine vinegar and sugar; stir into beef mixture. Place cabbage on top of meat mixture. Bring to a boil. Reduce heat; cover and simmer for 18-22 minutes or until meat and cabbage are tender. , Remove beef and cabbage; keep warm. Discard bay leaf. Stir gingersnaps into cooking liquid; cook and stir until thickened. Stir in beef. Serve with cabbage.

  • In a large bowl, combine the first six ingredients.
  • Crumble beef over mixture and mix well.
  • Shape into 1-in. balls.
  • Place on a greased rack in a shallow baking pan.
  • Bake at 400° for 15 minutes; drain.
  • Meanwhile, in a large saucepan, combine the remaining ingredients.
  • Add meatballs.
  • Bring to a boil.

1 slice white sandwich bread, torn into small pieces
8 ounces 20-percent-fat ground beef (about 8 ounces)
2 sweet mild Italian sausages, casings removed
One 15-ounce can diced tomatoes, drained
1/4 teaspoon dried crushed red pepper flakes
1 1/2 cups chicken broth
1 egg
1 tablespoon chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 tablespoon all-purpose flour
4 tablespoons extra-virgin olive oil
1 small onion, sliced (about 1 cup)
1 large red bell pepper, cored, seeded and cut into 1/2-inch strips
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 pound large white mushrooms, quartered
One 8 to 10-ounce russet potato, peeled, halved lengthwise and sliced into 1/3-inch slices
4 ounces green beans, trimmed, cut into 1-inch-long pieces

Steps:

  • For the meatballs: Place the bread and 3 tablespoons water into a medium bowl. Mash to a paste with a spatula. Add the beef, sausage, egg, parsley, salt and pepper. Blend the mixture thoroughly with your hands or a flexible spatula. Form the mixture into 10 to 16 meatballs. Arrange the meatballs on a parchment paper-lined baking sheet until ready to use.
  • For the hearty meatball stew: Sprinkle the meatballs with the flour and turn to coat with any flour still on the foil. Heat a large heavy nonstick skillet over medium heat for 1 minute. Add 2 tablespoons of the olive oil. Drop the meatballs into the skillet, spaced apart. Cook until the bottoms are set and brown, about 2 minutes. Using a flexible thin spatula, turn each meatball onto an uncooked side and cook until the bottoms are set and brown, about 2 minutes longer. Turn and cook a third side, until set and brown, about another 2 minutes, so the meatballs are browned and set all over. Transfer the meatballs to a large plate.
  • Heat the remaining 2 tablespoons oil in the same skillet over medium-high heat. Add the onions, peppers, 1/4 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook until soft, 4 minutes. Add the mushrooms and the remaining salt and pepper. Cook, stirring occasionally, until the mushrooms have softened, about 5 minutes. Add the potatoes, beans, tomatoes, red pepper flakes and broth. Bring the mixture to a boil. Reduce the heat to a simmer, cover the pan and cook until the potatoes are tender and the meatballs are cooked through, about 20 minutes.

2 medium potatoes , peeled and cut into bite-size cubes
1 tbsp olive oil
250g small lean beef meatball
1 onion , chopped
2 garlic cloves , chopped
1 tbsp chopped rosemary
560ml jar passata
200g frozen pea
few parmesan shavings, to serve (optional)

Steps:

  • Boil the potatoes for 10 mins until tender. Meanwhile, heat the oil in a large saucepan. Season the meatballs, then brown them all over for about 5 mins. Remove from the pan, drain off any excess fat, then add the onion, garlic and rosemary. Fry gently for 5 mins.
  • Add passata to the pan, bring to a simmer, then add the meatballs. Simmer for 5 mins or until everything is cooked through. Add the potatoes and peas, then simmer for 1 min. Pack into a flask or reheat at work, add Parmesan, if using, and eat with good crusty bread.

2 lbs stewing beef, cut into 1-1/2 inch cubes
2 tablespoons vegetable oil
2 cups chopped onions
1 garlic clove, minced
2 tablespoons all-purpose flour
3 cups beef stock
1/2 cup red wine vinegar
1/4 cup molasses
2 tablespoons brown sugar
2 teaspoons caraway seeds
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1 bay leaf
salt & freshly ground black pepper
2 tablespoons butter
6 cups shredded red cabbage
2 apples, peeled, cored and sliced
1/2 cup chopped onion
1 cup hot water
1/4 cup brown sugar
2 tablespoons red wine vinegar
1 bay leaf

Steps:

  • In a large pot, heat oil over medium heat. Brown beef cubes in batches.
  • Place all beef in pot and stir in onions and garlic. Cover and cook over medium heat for 5 minutes or until onions are soft.
  • Sprinkle flour over meat and cook, stirring for 1 or 2 minutes.
  • Add stock and cook, stirring for about 5 minutes or until smooth and thickened.
  • Stir in vinegar, molasses, brown sugar, caraway seeds, cinnamon, ginger, cloves and bay leaf.
  • Bring to a boil. Reduce heat, cover and simmer for 1-1/2 to 2 hours or until tender.
  • Season to taste with salt and pepper and discard bay leaf.
  • If freezing: Cool. Spoon into freezer containers, seal and label. Freeze for up to 2 months.
  • To serve: Thaw in microwave or fridge. Reheat on stovetop. When hot, serve over egg noodles and top with red cabbage.
  • To make Red Cabbage:.
  • In a medium saucepan, melt butter. Stir in cabbage, apples and onions. Cover and cook over medium heat for 5-10 minutes or until softened.
  • Stir in water, brown sugar, vinegar and bay leaf. Cook,uncovered for 15 to 20 minutes until veggies are very tender and most of the liquid has evaporated.
  • You can freeze the cabbage in a seperate container and just thaw and reheat.

¾ cup all-purpose flour
2 tablespoons butter
1 large onion, minced
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground cloves
2 pounds ground pork
2 tablespoons dried parsley
1 egg
½ cup dry bread crumbs
6 cups reduced sodium chicken broth
1 bay leaf
¼ cup cold water
salt and ground black pepper to taste
4 potatoes, peeled and cubed

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spread flour out in a thin, even layer on a baking sheet.
  • Roast the flour in the preheated oven until medium brown in color, 10 to 15 minutes; stir often and watch carefully to avoid burning. Remove the flour from the baking sheet immediately once the desired color has been reached; set aside in a shallow bowl to cool.
  • Melt butter in a large, heavy pot over medium heat, and cook and stir the onion until translucent, about 5 minutes. Transfer the onion to a large mixing bowl. In a small bowl, mix the cinnamon, nutmeg, and cloves; stir the spice mix into the onion. Place ground pork, parsley, egg, and bread crumbs into the bowl, and mix to combine thoroughly. Form the meat mixture into 1-inch meatballs; roll each meatball in the roasted flour. Reserve unused flour.
  • Pour the chicken broth into the pot, bring to a boil over medium heat, and carefully drop in the meatballs, a few at a time, stirring to keep them from sticking on the bottom. Drop in the bay leaf. Simmer the meatballs for 20 minutes; mix in the potatoes, and simmer until potatoes are tender and the broth has reduced, an additional 20 minutes. Transfer the meatballs into a bowl with a slotted spoon.
  • Remove and discard bay leaf. Mix remaining roasted flour with cold water in a cup, and gradually whisk the flour mixture into the simmering broth to thicken. Bring the gravy to a full boil, and cook, stirring constantly, until the gravy thickens, about 5 minutes. Return the meatballs to the stew, and serve.

1 (8 ounce) can mushroom stems and pieces, undrained
6 store bought gingersnap cookies, crushed with a rolling pin
1/2 cup water
3 tablespoons packed brown sugar
1 1/2 teaspoons beef bouillon granules

Steps:

  • In a skillet, saute' onion in butter until tender.
  • Transfer to a bowl; add the torn bread, milk, mustard, salt and pepper.
  • Add beef and mix well.
  • Shape into (about 29) 1-1/4 inch size meatballs.
  • Place meatballs in a greased 2-1/2 quart rectangular baking dish.
  • In a small saucepan, add the mushrooms, crushed gingersnaps, water, brown sugar and bouillon granules.
  • Bring to a boil over medium heat, (stirring constantly) until sauce is slightly thickened.
  • Pour sauce over meatballs.
  • Cover, and bake 35 minutes in a 350 degree oven.
  • Note: I used Stauffer's Original Recipe Ginger Snaps, but you can also use the Rippin Good Brand. Each cookie is about 2-1/4 inch in size.

  • In a crockpot combine meatballs, onion, brown sugar, soup mix and Coke. Cover and cook on low for 3.5 to 4.5 hours or until heated through.
  • Place meatballs on each bun bottom and sprinkle with 1/4 C shredded cheese. Place on baking sheets and broil for 2 minutes or until cheese is melted. Replace bun tops and serve!
