A delicious bulgur salad that is filled with tomatoes, green onions, and cucumber. It is seasoned in the traditional way, with fresh mint and lemon juice.

1 cup bulgur
1 ⅔ cups boiling water
⅓ cup olive oil
⅓ cup lemon juice
1 cup chopped green onions
1 cup chopped fresh parsley
¼ cup chopped fresh mint
3 tomatoes, chopped
1 cucumber - peeled, seeded and chopped
1 teaspoon salt
ground black pepper to taste

Steps:

  • Combine bulgur and boiling water in a large bowl. Cover, and set aside to soak for 1 hour.
  • Add oil, lemon juice, onions, parsley, mint, tomatoes, and cucumber; toss to combine. Season to taste with salt and black pepper. Cover, and refrigerate for at least 1 hour.

1 cup bulghur wheat
1 1/2 cups boiling water
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup good olive oil
3 1/2 teaspoons kosher salt
1 cup minced scallions, white and green parts (1 bunch)
1 cup chopped fresh mint leaves (1 bunch)
1 cup chopped flat-leaf parsley (1 bunch)
1 hothouse cucumber, unpeeled, seeded, and medium-diced
2 cups cherry tomatoes, cut in half
1 teaspoon freshly ground black pepper

Steps:

  • Place the bulghur in a large bowl, pour in the boiling water, and add the lemon juice, olive oil, and 1 1/2 teaspoons salt. Stir, then allow to stand at room temperature for about 1 hour.
  • Add the scallions, mint, parsley, cucumber, tomatoes, 2 teaspoons salt, and the pepper; mix well. Season, to taste, and serve or cover and refrigerate. The flavor will improve if the tabbouleh sits for a few hours.

Tabbouleh was introduced to me by my best friend in the 70's and I loved it. However, I decided to give it my own twist, so I made an Asian style Tabbouleh which I love even more. You can serve this as a side dish in place of a salad or roll several tbsp in Napa cabbage leaves to serve along with your favorite Asian main dish. Yum, scrumptious! By most standards this would not be considered tabbouleh because it does not include mint but I believe we can make tabbouleh using any of the ingredients we prefer.

1 cup Bulgar wheat
2 cups boiling water
1 (8 ounce) can water chestnuts, chopped
1 (16 ounce) can bean sprouts, drained
1 (4 1/2 ounce) can sliced mushrooms, drained
8 green onions, chopped
1 large carrot, grated
2 garlic cloves, chopped
2 tablespoons fresh gingerroot, grated
4 tablespoons soy sauce, natural
4 tablespoons sesame oil, roasted
2 tablespoons fresh lime juice
napa cabbage leaf (Chinese) (optional)

Steps:

  • Rinse bulgar wheat several times, then pour boiling water over it, stir and put in the refrigerator for 30 minutes. The bulgar will soak up most of the water after 30 minutes but if it doesn't, drain it to make sure there is no longer any water present.
  • Add all of the other ingredients into the soaked bulgar wheat.
  • Put the tabbouleh into the refrigerator for an hour or so tossing every now and then.
  • Serve in place of a salad or use to make Asian (Chinese) tabbouleh cabbage rolls (no frying or cooking) in place of egg rolls.
  • As always, if you prefer fresh mushrooms or fresh bean sprouts (mung) please use those.

2/3 cup fine cracked wheat (bulgur)
1 cup water
1 1/2 cups finely minced Italian flat-leaf parsley
2/3 cup finely minced fresh mint
1/4 cup finely chopped scallions
1/4 cup finely chopped red onion
1 large tomato, peeled, seeded, chopped
1/4 cup extra-virgin olive oil
2/3 cup lemon juice or more to taste
1 teaspoon salt, if desired
Leaves of crisp romaine lettuce for serving

Steps:

  • Place cracked wheat in a bowl and cover with water. Set aside for approximately 30 minutes until wheat has swelled and softened. Drain wheat, squeezing it in your hands to expel as much water as possible.
  • Place the wheat in a large salad bowl. Add parsley and mint and mix well. Add scallions, onions and tomatoes, using a wooden spoon or your hands to press the vegetables slightly so that they give up their flavors.
  • Add olive oil, lemon juice and salt, if desired. Taste, and add more lemon juice if necessary. The lemon taste should be definite but not overpowering. Set aside, covered, in a cool place for an hour or so until ready to serve.
  • Serve the tabbouleh on a tray lined with crisp romaine lettuce leaves. Diners should use the leaves to scoop up the tabbouleh.

3/4 cup seeded and chopped ripe plum tomatoes
1 teaspoon minced garlic

Salt and freshly ground pepper to taste
1/8 teaspoon red hot pepper flakes
2 tablespoons olive oil
2 tablespoons chopped fresh mint or 1 tablespoon dried

Steps:

  • Place bulgur wheat in a bowl and cover with cold water. Let soak for the period of time indicated on the package. Drain and place the bulgur in a piece of cheesecloth and vigorously squeeze out extra water.
  • Put bulgur in a bowl and add all remaining ingredients except oil and mint. Toss mixture gently but thoroughly with a fork. Stir in oil and mint and serve.

1 1/2 cups bulgur wheat
4 tablespoons extra virgin olive oil
3 cups vegetable stock, boiling
1/2 cup scallion, chopped
3 garlic cloves, minced
3 cups flat leaf parsley, chopped
3/4 cup mint leaf, chopped
4 tomatoes, diced
1 seedless European cucumber, diced
1/4 cup lemon juice
salt & pepper, to taste

Steps:

  • Mix bulgar wheat and 1 tbsp olive oil in a bowl.
  • Pour boiling stock over, cover and let stand for 15-20 minutes, or until tender.
  • Drain well in a strainer.
  • Toss rehydrated bulgar with remaining ingredients and remaining oile oil.
  • Add salt and pepper to taste, and refrigerate until ready to serve.
