JACKET POTATO: THE CANADIAN RECIPE BY TASTY
Here's what you need: sweet potatoes, cooking spray, kosher salt, maple syrup or cinnamon butter, maple bacon bit, ice cream, mini chocolate chip

Steps:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Thoroughly clean and dry potatoes. Slice in half lengthwise. Spray potatoes liberally with cooking spray season with salt. Place potatoes cut side down on prepared baking sheet.
- Roast potatoes for 30 minutes or until the skin is crispy and the center is tender. Set aside to cool for 5 minutes.
- Spoon the flesh out of the potato leaving a ¼ inch (½ cm) border of potato in the skin. Place flesh in a bowl and set the skin aside.
- To the bowl with the scooped out potato, add maple syrup or cinnamon butter and stir until smooth. Spoon seasoned potato back into the skins.
- Top with maple bacon, a scoop of ice cream, and garnish with chocolate chips, to taste.

MAMA MABEL'S SWEET POTATO PIE
Steps:
- Preheat oven to 350 degrees F. After your potatoes are done cooking and you've mashed them (make sure you mash them well or your pie will be stringy), add your butter mixing it until it melts.
- Next take all your spices and mix them together in the smaller bowl. Add your vanilla to your spices and then add it to the potatoes. Beat your eggs well and mix them into your sweet potato mixture. Slowly begin to add your evaporated milk to the mixture. Be careful how much you add you don't want it to get to juicy. If you feel like you need to add more go ahead.
- Pour mixture into your pie shell and put pies into preheated oven. Let bake 35 minutes.

MAPLE-ORANGE MASHED SWEET POTATOES
This recipe is from Cook's Illustrated and I made them today and it is fabulous! I omitted the pepper but stuck by the rest of the recipe. "Cutting the sweet potatoes into slices of even thickness is important in getting them to cook at the same rate. A potato masher will yield slightly lumpy sweet potatoes; a food mill will make a perfectly smooth puree. The potatoes are best served immediately, but they can be covered tightly with plastic wrap and kept relatively hot for 30 minutes. This recipe can be doubled in a Dutch oven; the cooking time will need to be doubled as well."

- Combine butter, cream, salt, sugar, and sweet potatoes in 3 to 4 quart saucepan; cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with fork, 35 to 45 minutes.
- Off heat, mash sweet potatoes in saucepan with potato masher, or transfer mixture to hopper of food mill and process into warmed serving bowl. Stir in pepper, maple syrup, and orange zest; serve immediately.

- Boil unpeeled potato until soft. Let cool slightly then peel and mash.
- Stir in confectioners' sugar into the mashed potato and mix until stiff. On a piece of waxed paper or plastic wrap roll out potato mixture into 1/4 inch thick rectangle. Spread peanut butter over entire area (adjust thickness to suit taste). Roll up jellyroll-fashion wrap with plastic wrap and refrigerate for few hours. Cut into slices to serve.

- Preheat the oven to 400°F. Scrub the potatoes, place them on a baking sheet and bake until the thickest part is easily pierce with a knife, about 1 hour 15 minutes. Remove the pan from the oven and allow the potatoes to cool completely. Break them up by hand into rough 1- or 2-inch pieces. (this step can be done a day in advance; refrigerate the potatoes until needed.)
- In a small bowl, whisk to combine the mustard and vinegar. While whisking, add the olive oil in a steady stream to form an emulsion.
- In a deep-fryer or pot over medium-high heat, heat about 4 inches of peanut oil or lard to 360°F. Fry the potatoes in batches until golden brown and crisp, using a slotted spoon or frying spider to turn them often, about 4 minutes. When the potatoes are done, use a slotted spoon to transfer them to a paper towel-lined plate.
- In a large bowl, combine the potatoes, scallions and enough vinaigrette to lightly coat (about 2 tablespoon) and toss to combine. Pour onto a platter, sprinkle with flaky salt and serve.
