PAUL'S AMAZING CHICKEN
The other night, Paul, one of my sharemates made this delicious chicken dish. It was so tasty, and everyone loved it so much!!! Param n' Kaval made Indian bread called Chapati, we had this with this chicken curry. I asked Paul how to make it n it seems so simple n' easy!!! I want everyone to try this wonderful Indian dish!!!

Steps:
- Put all the ingredients in a large pot, stir well.
- Cook for about 15 minutes until gravy comes out.
- Separate gravy in a different pan.
- Cook chicken and gravy separately for about another 10 minutes until gravy gets a little bit thicker.
- Put gravy back into chicken, add chopped fresh coriander, stir, cook for another 2 or 3 minutes.
- Serve hot with Chapati.

MY MOTHER'S CHICKEN CURRY
Though my family imported their curry powder from Malaysia, you can use any kind you like. Each curry powder is different because there are so many different spices in it, usually 14 or more. Though the flavors are complex, it is a fast and easy meal to prepare.

Steps:
- Heat a large, heavy-bottomed pot over medium heat. Add the oil and onion and cook until the onions are soft and translucent, about 5 minutes. Add the curry powder and cook until fragrant, stirring constantly.
- Add the chicken, bay leaf, and enough water to cover the chicken. Season with salt and bring to a boil. Reduce the heat and simmer until the chicken is cooked and tender, about 30 minutes.
- Add the potatoes and coconut milk to the pot and simmer until the potatoes are tender, 5-10 minutes.
- Season with salt and pepper. Serve with white rice. The curry can be stored in an airtight container in the refrigerator for up to 3 days.
CHICKEN KATSU CURRY
Curry was introduced to Japan by the British more than a century ago, and has become a favorite dish to make at home. This recipe combines a rich curry sauce with a crispy, fried chicken cutlet. Perfect to serve with steamed Japanese rice and radish pickles. Serve with steamed Japanese rice, red and yellow daikon pickles, tonkatsu sauce, soft-boiled eggs, and Japanese 7-spice seasoning.

- Heat oil in a pot over medium-high heat. Add onions to the hot oil and fry until soft and starting to caramelize, about 8 minutes. Add potatoes and carrots. Pour in water and bring to a boil. Reduce heat to low, cover, and cook until potatoes are soft, about 45 minutes.
- Remove from the heat and add curry sauce mix; stir well until all pieces are dissolved. If you'd like to add seasonings, add ketchup, Worcestershire, jam, and soy sauce. Simmer for 10 to 15 minutes, or longer if you'd like it thicker.
- While the curry is infusing, flatten the chicken breasts with a kitchen mallet to a thickness of 1/4 inch. Season with salt and pepper. Drench in flour, then egg, and then coat generously with panko bread crumbs.
- Heat oil in a separate saucepan to 355 degrees F (180 degrees C). Carefully lower breaded cutlets into the hot oil and fry until golden brown, about 3 minutes per side.
- While the chicken is cooking, stir 1 teaspoon curry powder into the sauce.
- Slice cooked chicken into strips and spoon curry sauce over top.

LILY KWOK'S CHICKEN CURRY
Twenty-eight year old lawyer Helen Tse is third generation British Chinese. This curry recipe came from her grandmother, Lily, and uses spices she collected at the ports the boat stopped on her journey from Hong Kong to Britain. Her grandmother was the first woman to open a Chinese restaurant in Manchester, which is now run by Helen's twin sister.

- Heat the oil in a heavy-based pan and cook the chopped onion for a few minutes over a high heat.
- Add the ginger, garlic and red chilli.
- Stir for 30 seconds then reduce the heat to very low. Cook for 15 minutes, stirring from time to time, making sure nothing browns or burns.
- Add the turmeric, cumin, coriander, curry powder and chilli powder and cook very gently for a further 5 minutes.
- Don't burn the spices or the sauce will taste acrid; sprinkle on a few drops of water if you're worried.
- Remove from the heat and cool a little.
- Put the water in a food processor or blender and add the contents of the pan. Whiz until very smooth. Add the two flours and blend again.
- Put the puréed mixture back into the pan and cook for 20-30 minutes (the longer the better) over a very low heat, stirring occasionally.
- You can add a little hot water if it starts to catch on the pan, but the idea is to gently "fry" the sauce so that it darkens in colour to an orangey brown.
- Once you've achieved a thick paste, gradually stir in the stock and simmer until the sauce has cooked down.
- For the chicken: season the cornstarch with salt and pepper. Toss the chicken strips in the cornstarch to coat.
- Heat the oil in a frying pan and cook the chicken for a few minutes until it turns white.
- Add the onions and peas and stir-fry for a few minutes. Add the curry sauce and heat until piping hot.
- Serve with boiled white rice.

CHICKPEA AND CHICKEN CURRY

- Heat the olive oil in a skillet over medium-high heat. Cook and stir the onion and chicken until the onion is dark brown, and the chicken is golden, about 5 minutes. Reduce the heat to medium, and stir in the garlic, curry powder, cinnamon, and clove. Cook and stir until the spices are fragrant and the garlic has softened slightly, 1 to 2 minutes. Add the garbanzo beans, ketchup, tomato paste, lemon juice, salt, black pepper, and water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and cook 10 minutes. Uncover, and increase heat to medium-high, and allow the sauce to reduce to your desired consistency. Stir in additional water if too thick. Garnish with cilantro to serve.

K-PAUL'S CHICKEN CURRY
Steps:
- Combine seasonging mix and set aside. In 4-quart saucepan, combine butter, chicken fat, onions, jalapeno, seasoning mix. Cook high until butter melts (5 min) stirring frequently. Reduce heat to medium, simmer 20 min, stirring occasionally. Add 1 c of apples, bananas, raisins, pecans. Simmer until mushy (20 min), stirring frequently. Combine salt, garlic, peppers, basil. Mix well and work into chicken with hands. When vegetable mix finishes simmering, raise heat to high. Stir in chicken and remaining apple. Cook 3 min, stirring frequently. Add stock and coconut. Stir. Reduce heat to low and simmer 15 min, stirring occasionally. Serve immediately with rice
