Yield Makes 3/4 cup

Number Of Ingredients 4

1/2 cup sugar
2 large eggs
2 teaspoons grated key-lime zest plus 1/4 cup freshly squeezed key-lime juice (6 limes)
4 tablespoons unsalted butter, cut into small pieces

Steps:

  • Combine sugar, eggs, lime zest, and juice in a medium nonreactive saucepan, and set over medium-low heat. Cook, whisking constantly, until mixture begins to thicken and holds the mark of the whisk, 10 to 12 minutes.
  • Remove pan from heat, and whisk in butter, a piece at a time, until well combined. Strain mixture through a sieve into a glass bowl. Lay plastic directly on surface to prevent a skin from forming. Chill 3 hours or overnight to set the curd.

I cut this out from my inlaw's newspaper. I found it to be a great dough to work with and it tastes great. Just remember the dough is easiest to handle if it is refridgerated overnight, so plan ahead.

1/2 cup shortening
1/4 cup butter
1/2 cup light brown sugar
1 large egg
1/4 cup molasses
3 tablespoons Kahlua
2 1/4 cups flour
1 tablespoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon ground ginger
1/2 teaspoon nutmeg
1/2 teaspoon mace
1/2 teaspoon ground cloves
1 lb powdered sugar
1/4 cup Kahlua
3 tablespoons shortening
3 tablespoons butter
2 teaspoons corn syrup

Steps:

  • Cream shortening, butter, and sugar together.
  • Beat in egg until fluffy.
  • Stir in molasses and Kahlua.
  • Add dry ingredients to creamed mixture and blend well.
  • Cover and chill for at least 2 hours but preferably overnight.
  • Roll out to 3/8 inch, on a well floured surface, a portion at a time.
  • Keep remaining dough chilled.
  • Cut with cookie cutter and place on lightly greased cookie sheet.
  • Bake at 350 degrees for 8 minutes.
  • Let stand for 1 minute to firm.
  • Decorate with Kahlua Icing.
  • For icing combine all ingredients and tint with food coloring if desired.
  • Pipe icing as desired.
  • to make icing spreadable add 1 or 2 tsp more Kahlua.

1 large egg
1/3 cup molasses
2 tablespoons water
2 teaspoons grated fresh gingerroot
1-1/4 cups all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 teaspoon salt
1/4 teaspoon baking soda
1 package (8 ounces) cream cheese, softened
1 teaspoon grated lime zest
2 tablespoons lime juice
2 tablespoons chopped pecans, toasted

Steps:

  • Preheat oven to 350°. Grease an 11x7-in. baking dish., Cream butter and 3/4 cup sugar until light and fluffy; beat in egg, molasses, water and ginger. In another bowl, whisk together flour, spices, salt and baking soda; gradually beat into creamed mixture. Transfer to prepared dish., Beat cream cheese, lime zest, lime juice and remaining 1/2 cup sugar until blended; cover and reserve 3/4 cup mixture for frosting. Drop remaining mixture by tablespoonfuls over batter; cut through batter with a knife to blend slightly (mixture will not swirl)., Bake until a toothpick inserted in cake portion comes out clean, 25-30 minutes. Cool completely on a wire rack., Spread with frosting; sprinkle with pecans. Refrigerate leftovers.

Gingerbread, it's not just for Christmas. Lime curd really lightens up this dessert which I've made this several times for dinner parties. Since not everyone loves gingerbread (go figure), I usually make at least two desserts when serving this to guests. The ingredient list seems long but it's really very easy and a great choice to make ahead. Please note the lime curd must chill thoroughly before serving. From Southern Living. Seem to remember a photo of the recipe in the magazine in which gingerbread triangles were arranged in a large multi-point star, with a dish of the lime curd in the center..kind of a Texas-theme.

1/3 cup firmly packed dark brown sugar
1 large egg
2 cups flour
1 1/2 teaspoons baking soda

1 cup molasses
2/3 cup hot water
1/3 cup Kahlua
2 tablespoons brewed coffee
2 cups sugar
1 cup butter, cut up
2/3 cup fresh key lime juice
1 tablespoon grated key lime rind (optional)
4 large eggs, lightly beaten
fresh mint sprig
key lime zest
whipped cream

Steps:

  • Beat butter at medium speed with an electric mixer until creamy; gradually add sugars, beating well. Add eggs, beating until blended.
  • Add flour and next 9 ingredients (flour through coffee) and beat until smooth. Pour into a greased and floured 13x9x2 inch baking pan.
  • Bake at 325 degrees for 35 minutes or until a wooden pick inserted in center comes out clean.
  • Cut into triangles; serve warm or at room temperature with Key Lime Curd and whipped cream. Garnish, if desired.
  • Key Lime Curd: Combine sugar, butter, lime juice and rind in a heavy saucepan. Cook over medium heat, stirring constantly, until butter melts. Gradually stir one-fourth of mixture into eggs; add to remaining hot mixture, stirring constantly.
  • Cook over low heat, stirring constantly, 10 minutes or until lime mixture thickens and coats a spoon.
  • Remove from heat; cool. Cover and chill at least 2 hours. Yield: 3 cups.
