CORN FRITTERS
Nothing warms up a cool night like a plateful of old-time corn fritters! Dig in, these are delicious!

Steps:
- Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
- In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
- Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

KALE-CORN FRITTERS
Adapted from an adaptation from Cait Johnson's book, "Witch in the Kitchen". These are yummy and while they taste awful for you- are pretty good, especially with all the super-nutritious kale they contain. They go well with traditional Southern dishes- I think they would be very good with fried catfish. They also freeze well. I just cook mine at about 350F for 5-7 min in my toaster oven still frozen and eat! Be sure to cut your kale small enough, because the large chunks can be kind of offensive. Times are estimates.

Steps:
- In a large bowl, stir together the flour, cornmeal, salt, kale and corn.
- In a medium bowl, lightly beat the eggs.
- Mix in the oil/butter, and milk.
- Make a well in the center of the dry ingredients and pour in the wet ingredients.
- This makes mixing in easier and faster.
- If you are using the onion, sautee it, then add to your batter.
- Also, if you are using the bacon, cook it and crumble it into the batter.
- Reserve some of the bacon grease.
- For both of these, it is better if you can cook your fritters in the same pan- the fact that you already cooked flavorful foods in that pan will add to the flavor of the fritters.
- Do not worry if the batter seems kind of thin.
- Due to the eggs it should fry up fine.
- However, if you try one and feel it is still too thin, feel free to add more flour- about a Tbs at a time.
- Heat a frying pan with oil and/or bacon grease over medium heat.
- Add dollops (about 1/4 cup) of the batter and fry.
- When the fritters are ready to be flipped they will begin to look firm and egg-like around the edges and begin to bubble slightly (This should be about 3 minutes).
- Flip and cook the other side (1-2 min).
- It is much like cooking pancakes, and is pretty easy to get the hang of.
- You may need to fiddle with your heat.
- Be sure these are cooked through as they do contain raw eggs.
- Serve warm.
- I like mine with sour cream, my boyfriend likes his with sour cream and cheddar.
- For Vegetarian Omit the bacon.

- Whisk 3/4 cup flour, 1 teaspoon kosher salt and 1/4 teaspoon each baking powder and pepper in a bowl. Whisk 1/2 cup milk and 2 eggs in another bowl; stir in the flour mixture. Add 2 cups corn, 1/4 cup each chopped cilantro and scallions, 1 chopped jalapeno and the zest and juice of 1/2 lime. Cook 1/4 cupfuls in a skillet with olive oil, 2 minutes per side. Serve with Greek yogurt.
CAULIFLOWER CORN FRITTERS
This is a "mashup" so to speak, of a few recipes. My husband hates cauliflower, but I love it. I made these to go with salmon one evening. He ate them without knowing they had cauliflower in them, even had seconds and said he'd have them again if I made them. Once he found out they were "tainted" he even grudgingly agreed he'd try them again.

Steps:
- Clean and separate cauliflower into florets and steam in microwave until cooked. Set aside to cool.
- Make sure the potato is chopped small (almost like you'd do hash browns, in fact you can sub out about 1/2-2/3 cup hash browns for the potato) and cook down. I like to cook it down with the leeks/onion, garlic, and shallots.
- Add to cauliflower and toss. Let cool a bit.
- Lightly beat eggs and add to cooled cauliflower and potatoes. Add the rest of the ingredients EXCEPT OIL and mix together by hand, breaking down any larger pieces of potatoes or cauliflower.
- Form into patties.
- Heat the oil in a pan set on med high heat and then add the fritters to the oil. Turn after about 4 minutes, drain on paper towels. So good!

SAVORY CORN FRITTERS
These corn fritters use fresh, whole kernels, mixed with spices, scallions and a simple batter. Corn fritters come in many types, from the cornmeal-based, deep-fried hush puppies, to the more patty-shaped, pan-fried fritters. Pan-seared in hot oil until crisp, these patty-like fritters contain Cheddar, which adds creaminess while still allowing the crunchy corn kernels to provide a pop of sweet flavor and texture with each bite. Fritters make an excellent side for a cookout, as they stand up to smoky barbecue flavors and can be enjoyed warm or at room temperature. Leftovers make an excellent breakfast, with a dollop of sour cream or plain yogurt on top.

- In a large bowl, whisk together the eggs, milk, salt, garlic powder, black pepper and ground cayenne. Whisk in the flour and baking powder until just combined. Stir in the corn, scallions and Cheddar.
- Heat a cast-iron skillet over medium-low and add enough oil to generously coat the bottom of the skillet.
- Once the oil is shimmering hot, add a heaping tablespoon of the batter to the skillet. Use the back of the spoon to flatten it into a round patty. Repeat to fry 3 to 4 fritters at once. Fry on each side until golden, about 2 minutes, then cook for an additional 2 minutes. Add more oil as needed.
- Remove from the skillet and transfer to a paper towel-lined baking sheet. Repeat until all fritters are fried. Serve warm or at room temperature.
