CREAMY BACON AND KALE PASTA



Creamy Bacon and Kale Pasta image

The creaminess of this dish is thanks to creme fraiche so this comes together swiftly for an easy weeknight dinner.

6 rashers smoked bacon
3 1/2 cups curly kale, stalks removed and finely chopped
4 cloves garlic, roughly chopped
1 small onion, finely chopped
250 grams / 8.8 ounces creme fraiche
1 teaspoon sea salt
300 grams / 10 ounces fresh tagliatelle pasta

Steps:

  • Heat a little oil in a frying pan on medium heat and add the bacon rashers.
  • Place the bacon in a large frying pan on medium heat and cook until almost crispy, flipping until the bacon is evenly brown on both sides, approximately 3-4 minutes each side.
  • Remove the bacon to cool and then slice into bite size pieces. Keep the heat on the frying pan steady.
  • Place the onion, garlic, and kale into the same frying pan, stirring until the kale is beginning to wilt, approximately 7 minutes.
  • Add in the bacon, stirring through until just heated.
  • Cook the fresh pasta until al dente according to instructions and remove from the heat, do not drain.
  • Add the creme fraiche and remove the pasta from the hot water with tongs and 1/2 cup of the pasta water, stirring to combine and coat everything with the creme fraiche.
  • Continue cooking for approximately 3 minutes until the pasta is well coated and everything is hot.
  • Serve immediately.

Throw together bacon lardons, leafy greens and crunchy pine nuts for this easy, quick pasta recipe - use wholewheat pasta for extra fibre

300g pasta (we used wholewheat fusilli)
1 tbsp olive oil
180g pack smoked bacon lardons
2 large garlic cloves , finely chopped
1 red chilli , deseeded and finely chopped
4 tbsp pine nuts
200g chopped curly kale
3 tbsp cream cheese
½ lemon , juiced

Steps:

  • Boil a large pan of water and cook the pasta following pack instructions.
  • Heat the oil in a non-stick frying pan over a medium-high heat and cook the lardons for a few mins until golden and a little crisp. Stir in the garlic, red chilli and pine nuts, then cook for 1 min more until the garlic and chilli are softened and the pine nuts just toasted.
  • Turn up the heat and add the kale to the pan with a splash of water, cover and cook for 3-4 mins until wilted. Drain the cooked pasta and add to the pan with the cream cheese and lemon juice. Toss together, taste, and season with black pepper.

2 bunches kale, trimmed and torn
8 bacon strips, diced
2 large onions, chopped
4 garlic cloves, minced
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large saucepan, bring 1 in. of water to a boil. Add kale; cook for 10-15 minutes or until tender. Meanwhile, in a large nonstick skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 1 teaspoon drippings. In the drippings, saute onions and garlic until onion is tender. , Drain the kale; stir into onion mixture. Add the salt, pepper and reserved bacon; heat through.

Cheesy Pasta with Bacon and Kale - ready in 15 minutes!

350 g pasta - such a fusilli or penne (use gluten free pasta if required)
1 tbsp vegetable oil
8 rashers bacon
150 g kale
100 g sharp cheddar cheese
120 ml cream

Steps:

  • Bring a large pan of water to the boil and cook the pasta according to the pack instructions (usually 10-12 minutes).
  • Whilst the pasta is cooking, heat the oil in a frying pan until very hot, then cook the bacon until browned and crispy (about 5 minutes). Turn a couple of times during cooking. Remove from pan and chop into small pieces.
  • Keep the frying pan on the heat, but turn the heat down to low (there should still be some bacon fat in there). Place the kale in the bacon pan and let it cook in the hot oil for 1 minute. Turn off the heat.
  • When the pasta is cooked, drain it, reserving 1 cup of the cooking water.
  • Put the pasta back in the pan and place over a low heat. Stir in the cheese and cream, then once the cheese has melted, stir in the kale and bacon. Heat through for 1 minute. If the pasta looks a little dry, add in a good splash of the pasta cooking water.
  • Divide between four bowls and serve.
