1 tablespoon fresh lemon juice
2 tablespoons olive oil
2 tablespoons extra-virgin olive oil
1 medium head Bibb lettuce, leaves torn if large (6 cups)
1 1/3 cups packed flat-leaf parsley leaves
2/3 cup packed mint leaves
1/2 seedless cucumber, halved lengthwise and thinly sliced

Steps:

  • Whisk together lemon juice, oils, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Toss lettuce, herbs, and cucumber with just enough dressing to coat.

Steps:

  • Coarsely chop the watercress and the mint, place in a large bowl.
  • Slice the radish into 4 or five circles. Slice the cucumber into half moons, add these to the watercress and mint. Also adding the onion.
  • Pour in the lemon juice and sprinkle in the sea salt. Toss until all are thoroughly mixed.
  • Serve immediately, sprinkling on the pomegranate seeds, if using.

One of the most popular greens in Mexico, peppery watercress joins here with the fresh tastes of parsley and mint; an exotic and interesting combination that is also a good way to use up any excess herbs in your garden. Parboiling the garlic mellows its sharpness and heightens the earthy flavor and buttery consistency.

regular table salt
1 head garlic, separated into cloves, peeled and thinly sliced
3/4 cup olive oil
3 tablespoons fresh lemon juice
1 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1 bunch fresh flat-leaf parsley, about 1/4 lb, stemmed (Italian)
1 bunch of fresh mint, about 1/4 pound, stemmed
2 bunches watercress, about 10 oz total weight, stemmed

Steps:

  • Bring a small saucepan three-fourths full of water to a boil and add table salt to taste. Add the garlic and parboil for about 3 minutes to soften slightly and mellow the flavor. Drain and let cool.
  • Place the cooled garlic in a small bowl and add the oil, lemon juice, sea salt and pepper. Whisk to dissolve the sea salt and form a dressing.
  • In a salad bowl, combine the parsley, mint and watercress. Drizzle the dressing over the greens and toss to coat evenly. Serve immediately.

1 bunch medium red beets, trimmed and scrubbed (4 to 6 beets)
3 tablespoons white-wine vinegar
2 teaspoons whole-grain mustard
1 tablespoon finely chopped shallot
3/4 teaspoon coarse salt
1/2 teaspoon sugar
1/4 cup plus 2 tablespoons extra-virgin olive oil
1 bunch (6 ounces) watercress, tough stems trimmed
1 medium head (5 ounces) Bibb lettuce, leaves torn into 1-inch pieces
Freshly ground pepper

Steps:

  • Preheat oven to 425 degrees. Divide beets between 2 parchment-lined pieces of foil. Fold each in half, crimping edges to seal. Place packets on a baking sheet, and roast until beets are tender, about 1 hour, 20 minutes. Peel, then cut into 1/2-inch-thick rounds and wedges.
  • Whisk together vinegar, mustard, shallot, salt, and sugar in a bowl. Add oil, whisking until emulsified. Arrange greens and beets on a platter. Drizzle with dressing, and season with pepper.
