Fresh kale gets added flavor with bacon and onions, cooked in a cast-iron skillet.

2 large bunches fresh kale (about 2 pounds)
3-4 slices extra-thick-cut bacon, cut across into ¼-inch-wide julienne
1 medium yellow onion, split lengthwise and thinly sliced
kosher or fine sea salt
freshly ground black pepper
splash of water

Steps:

  • Wash the greens in several changes of water until no gritty soil remains on the leaves. Strip away any large, tough stems. Leave small leaves whole or tear them in half, and stack, roll, and cut larger leaves across into 1-inch-wide strips. Set aside in a large bowl.. Cook the bacon in a skillet over medium heat, stirring frequently, until browned and its fat is rendered, about 5 to 10 minutes. Add the onion, reduce the heat to medium-low, and cook slowly, stirring occasionally, until golden, about 5 minutes.. Raise the heat to medium-high, add a handful of kale, and toss until it is wilted. Continue adding kale by the handfuls, stirring constantly, and allowing each addition to wilt before adding more.. When all the kale is in the pan, season it with salt and pepper to taste, add a splash of water, and reduce the heat to medium-low. Cook until the greens are nearly tender, 3 to 8 minutes, depending on the youth and freshness of the kale. It should be tender but still retain its lovely green color.

1 bunch spring onions (finely chopped)
300 g kale (washed and shredded)
6 bacon medallions (diced)
sea salt (to taste)
freshly ground black pepper (to taste)
1 tbsp horseradish sauce (optional)
1 sachet butter buds (optional)
low calorie cooking spray

Steps:

  • Cook the potatoes in some boiling, salted water, until they are soft enough to mash.
  • While the potatoes are cooking, spray a large frying pan with low calorie cooking spray.
  • Cook the bacon and spring onions in the frying pan until they are cooked through.
  • Put the kale on top of the onions and bacon, then cover with a lid.
  • Cook on a medium heat for 5 minutes.
  • Drain the potatoes and mash them roughly.
  • Season with a little salt and pepper. If you're using horseradish and butter buds add them now and stir well.
  • Mix the potato in with the bacon, spring onions and kale.
  • Fry for 5 minutes, then serve with some extra veg!

6 cups kale (stems removed and coarsely chopped)
6-8 slices of bacon (I used a thicker cut bacon)
1 small onion (diced)
3 cloves garlic (minced)
Salt and pepper (to taste)

Steps:

  • Start by dicing up your bacon into smaller pieces. Then you will toss them in a skillet over medium heat and cook until browned and fully cooked.
  • Once the bacon is cooked, remove it from the skillet and place it on a paper towel-lined plate.
  • Now you can remove some of the bacon grease or leave it all in the pan. But you will then add in your onion and saute till softened. This takes 5 minutes roughly.
  • White you bacon and the onions are cooking wash, and prep your kale. Toss in the pan with the onion and bacon grease along with the garlic.
  • Cook for around 5 minutes or until the kale softens down to your preference. Then top with bacon and serve.

Steps:

  • Rinse the kale, remove the leaves, cut out the thick stems and slice the leaves into strips.
  • Blanch the kale in a pot of boiling salted water until crisp-tender, 3-5 minutes.
  • With a slotted spoon lift the kale from the pot, drain and place immediately in a bowl of ice water.
  • Pour into a colander and drain.
  • Peel the onion and finely chop. In a large saucepan, cook the bacon until starting to brown. Add the onion to the pan and cook, stirring occasionally until translucent.

This recipe is for a vegetarian quiche, but you can easily adapt it to a vegan version, or use meat to make it non-veggie. My whole family loved this, and they don't normally like quiche very much. I served it with a wild & long grain rice cooked with dried cranberries, and some carrots and peas.

1 (10 inch) flaky pie crusts
1 bunch kale, cut horizontally into 1/2 inch strips (about 12-15 medium-large leaves)
1 medium onion, chopped
2 teaspoons garlic, minced
1 -2 tablespoon olive oil
2 tablespoons flour
3 large eggs (or equivalent amount egg replacer)
1 1/2 cups soymilk or 1 1/2 cups non-dairy milk substitute
1/4 cup cheddar cheese, grated
3 tablespoons imitation bacon bits (for nonveggie version) or 3 tablespoons bacon bits (for nonveggie version)
liquid smoke, to taste (optional)
salt and pepper, to taste

Steps:

  • Preheat oven to 375°F
  • If pie crust is not pre-baked, use baking beans or weights and pre-bake crust for about 5-10 minutes, then remove from oven.
  • Meanwhile, heat olive oil in a large pan over medium heat. Add onion and garlic, and saute 3 minutes. Add kale strips, and saute another 3-4 minutes.
  • Season this mixture with salt and pepper. Let cool.
  • In a mixing bowl, mix eggs, cheese, milk, flour and liquid smoke, if using. Add imitation bacon bits and stir. Add this mixture to the kale, onion and garlic, and pour everything into the pie crust.
