This is a great recipe, different than the usual biscuit. Serve piping hot with butter, jam, or honey.

2 cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon baking soda
1 dash salt
1 tablespoon white sugar
½ cup butter
¾ cup buttermilk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a bowl, mix the flour, baking powder, baking soda, salt, and sugar. Cut in 1/2 cup butter until the mixture resembles coarse crumbs. Mix in the buttermilk. Turn out onto a lightly floured surface, and knead 2 minutes. Transfer to an ungreased baking sheet, roll into a 6x6 inch square, and cut into 12 even sections. Do not separate.
  • Bake 15 minutes in the preheated oven, until a knife inserted in the center of the square comes out clean. Separate into biscuits, and serve hot.

1 teaspoon baking powder
1 teaspoon ground cardamom
4 1/2 ounces unsalted butter, diced
1 teaspoon fresh lemon zest, grated
3 tablespoons sugar
1 egg
2 cups whole milk

Steps:

  • Preheat oven to 400 degrees F.
  • Sift flour and baking powder into a bowl; add cardamom and stir.
  • Add butter and mix until it resembles coarse crumbs; add grated lemon zest and sugar and mix thoroughly.
  • In another bowl, whisk together milk and egg; add to flour mixture and form a dough.
  • Turn onto a lightly floured surface and knead until smooth and elastic; divide dough into two pieces.
  • Roll each, with your hands, into a sausage like shape, about 1 inch in diameter.
  • Slice each sausage into about 30 pieces; transfer to a greased baking sheet.
  • Bake until cookies are dried and golden brown, about 10 to 15 minutes; cool on a wire rack.
