EASY CRAB PATE
A quick and easy crab pate suitable for appetizers and sandwiches

Steps:
- Put the crabmeat, celery and red pepper in a bowl.
- Add the Dijon mustard, lemon, a good pinch of salt and a grinding of black pepper.
- Stir lightly together.
- Add the mayonnaise, a bit at a time, just until the mixture clings together nicely.
- Taste for seasoning.
- Serve as desired as a paté, in canapés, salads and sandwiches garnished with a bit of parsley or paprika if liked.
CRAB PATE
Delicious starter served with hot brown toast or great for lunch with a salad, good in a sandwich - yummy way to stretch a crab.

Steps:
- melt butter in a saucepan large enough to hold all the ingredients.
- Stir in the crab meat.
- heat gently stirring all together.
- beat the egg yolks, cream and sherry together and pour into the crab mixture.
- continue to cook and stir until it thickens.
- Keep the heat low.
- add the cheese until it melts and then take off the heat.
- season with Tabasco and lemon juice.
- allow to cool
- give the mix a final good stir and put into souffle dish or individual ramekin pots and chill for 6 hours or overnight.

KAREN'S LIFE-OF- THE- PARTY CRAB PATE`

Yield This will serve approximately 15 to 20 people.

- Place the crab meat into a large bowl a little at a time carefully looking for pieces of shell. Mix the remaining ingredients (except the topping) together well. You may find that kneading the ingredients will help to gain the smooth consistency needed to form nicely into a ball. Shape and mold into a ball. Place ball on a plate and place in the refrigerator with a loose cover until topping is finished. Topping: Over medium heat, mix butter, milk and gelatin together in double boiler. Continue to wisk until mixture is thickened. (be sure to place gelatin in with milk and butter while still cold. Otherwise, gelatin will not mix well). Set pan aside to cool for 5 minutes. Take plate of crab pate` ball out of the refrigerator. Spoon topping over crab pate` ball. The topping will set up once it comes in contact with the crab. You may not want to use all of the topping, only enough to provide a smooth textured covering. Let set 10 minutes. Cover with plastic wrap and place in refrigerator for several hours. I usually prepare the night before I am going to serve it and let it chill all day. Serve with a cheese knife on your favorite crackers. Enjoy!
CRAB & BEETROOT PâTé
Pair beetroot with crab to make this healthy and vibrant pâté. Serve with crudités and crisp breads for dunking

- Mix together the crabmeat, beetroot, crème fraîche, lemon zest and juice, dill and parsley. Season with black pepper.
- Blanch the runner beans in boiling water for 1 min, then drain and cool in iced water. Serve the pâté with the veg and the vegetables and crispbreads for dunking, if you like.

Steps:
- Heat and stir soup over low heat.
- Add the cream cheese, stir to blend.
- Cook and stir for 5 minutes.
- Remove from heat, cool slightly.
- Add the rest of the ingredients.
- Stir to blend,.
- Spoon into a 5 cup mold.
- Cover and place in fridge 3-4 hours or until set.
- I've put this into a regular small casserole dish and it freezes well also.

KARYN'S CREAM OF CRAB SOUP
This cream of crab soup is so rich and delicious! I make this a lot, especially in the winter with some nice, hot rolls! Use more Old Bay to suit your taste. I also recommend using lump crabmeat. Enjoy!!

- In a medium bowl, blend flour and hollandaise sauce mix with 2 cups half-and-half.
- Melt butter in a medium, heavy saucepan over medium heat. Slowly add hollandaise mixture, stirring constantly until thickened. Add remaining half-and-half, Old Bay, dry mustard, celery seed, and whipping cream. Bring to a simmer and reduce heat to low. Add crabmeat and sherry, stirring gently until warmed through. Serve immediately.
