2/3 cup pecans or 2/3 cup walnuts
4 tablespoons sugar, divided
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 garlic clove, minced
3 1/2 tablespoons extra virgin olive oil
salt and pepper
1 (6 ounce) bag mixed baby lettuces and spring greens or 1 head bibb lettuce, torn into bite-sized pieces
2 red pears, peeled, cored and sliced
3/4 cup crumbled gorgonzola or 3/4 cup blue cheese
1 avocado, pitted peeled and sliced
1/4 cup thinly sliced green onion

Steps:

In a skillet over medium heat combine pecans and 3 tablespoons sugar. Cook and stir until the sugar melts and caramelizes about 3-4 minutes. Carefully transfer coated pecans to a sheet of wax paper or foil. Let cool; break into pieces.
Meanwhile, for the dressing, in a small bowl whisk together vinegar, mustard, garlic and remaining 1 tablespoon sugar. Slowly whisk in oil. Season with salt and pepper to taste.
In a large serving bowl layer lettuce, pears, blue cheese, avocado and green onions. Add dressing; toss to coat. Sprinkle with cooled pecans and serve.

2 cans (one 16 ounces, one 29 ounces) pear halves
1 package (8 ounces) cream cheese, softened
1 tablespoon sugar
1/2 cup seedless grapes, halved

Steps:

Drain the pear halves, reserving 1 tablespoon of syrup. In a small bowl, beat the cream cheese, sugar and reserved syrup until smooth. Fill pear halves; top with grapes.

If you love blue cheese, you will enjoy this quick and easy salad. The salad is topped with a creamy dressing and additional crumbled blue cheese. I have used pears and/or apples to make this salad, walnut and pecans both equally good.

1 (100 g) package blue cheese, crumbled, divided
2 ounces cream cheese, at room temperature
1/4 cup 2% low-fat milk, more if required
6 cups mesclun or 6 cups other mixed salad greens
3 firm ripe pears or 3 apples, unpeeled
1/2 cup nuts, toasted and coarsely chopped
fresh ground black pepper

Steps:

Whisk together in a small bowl, half the blue cheese with the cream cheese and milk until well combined. If you find the dressing too thick add a little more milk. May be made ahead and refrigerated. (If you buy the crumbled blue cheese you will need a 175g package).
Place 1 cup of the mesclun mix on individual salad plates.
Cut pears in half, remove core and cut into wedges.
Arrange pears on top of greens.
Drizzle dressing over pears. Top with remaining blue cheese, nuts and pepper.
