Number Of Ingredients 7

2 cups Keebler® Sandies® Simply Shortbread cookies (or any flavor), crushed (16 to 20 cookies)
4 tablespoons butter or margarine, melted
1 package fudge brownie mix (approximately 1 pound 3 oz.)
Water, per brownie package directions
Vegetable oil, per brownie package directions
Eggs, per brownie package directions
1 can (12 oz.) cherry pie filling

Steps:

  • Combine crushed Sandies® Cookies and margarine in a mixing bowl and press into sides of 13x9x2-inch baking pan coated with cooking spray. Prepare brownies following directions on box using water, vegetable oil, and eggs. Pour batter on top of the Sandies® Cookies crust. Evenly place dollops of cherry pie filling into brownie batter. Bake at 350°F for 28 minutes or until toothpick inserted comes out clean. Remove from oven and cool. To serve, dust with powdered sugar (cover cherries with a paper circle cut out to avoid covering with powdered sugar). If desired, cut bars into hearts with heart-shaped cookie cutter.

These are a favorite everytime I take them somewhere.....they are always the first to disappear. I usually cut them into squares and put them in individual cupcake papers to make serving easier. They are easy to make, too. Prep/cook time does NOT include 4 hours for chilling.

2 (8 ounce) packages low-fat cream cheese or 2 (8 ounce) packages cream cheese
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
1 cup unsalted butter
6 ounces unsweetened baking chocolate
2 cups sugar
3/4 teaspoon vanilla extract
3/4 teaspoon salt
4 large eggs
1 1/4 cups all-purpose flour
1 (21 ounce) can cherry pie filling

Steps:

  • Heat oven to 350°.
  • Line a 13 x 9" baking pan with foil, letting ends extend a bit over sides. Lightly coat the foil with nonstick cooking spray.
  • Topping: Beat together all topping ingredients in medium mixing bowl until blended and smooth. Set aside.
  • Brownie: In a large microwavable mixing bowl, melt butter and chocolate using med power -- about 2 minutes---check every 45 seconds and stir. (Can also do in a saucepan over low heat.) Heat until chocolate is melted and smooth -- stir to make a smooth mixture.
  • With wooden spoon, stir in sugar, vanilla and salt into melted chocolate mixture. Add eggs, one at a time, stirring briskly after each egg, until well-blended. Stir in flour.
  • Spoon brownie mixture into prepared baking pan.
  • Scatter heaping Tbsp of topping mixture on top of brownie mixture. Next, scatter Tbsps of cherry pir filling over top. Run tip of a knife through topping and pie filling to create a marbelized look.
  • Bake at 350 for 45-50 minutes or until brownie edges begin to pull away from sides and edges of cream cheese are slightly brown. THE CENTER WILL STILL "JIGGLE" WHEN SHAKEN EVEN WHEN THEY ARE DONE!
  • Cool in pan on wire rack. When cooled, chill for at least 4 hours before cutting.
  • After chilling, simply lift out by using the foil that lines the pan. Place on cutting board and cut into squares, and place into individual cupcake/muffin liners.

This recipe was given to me by a friend several years ago. We enjoy the brownie, cheesecake and cherry combo very much. I have doubled the cheesecake layer (and baked longer) and served as dessert. Leftovers should be stored in the refrigerator. However, flavor is best at room temperature. Cook time includes chill time.

1 (19 1/2 ounce) package fudge brownie mix
1/2 cup vegetable oil
1/4 cup water
2 large eggs
2 teaspoons vanilla
1 large egg
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) package cream cheese
2 (21 ounce) cans cherry pie filling

Steps:

  • Heat oven to 350°F.
  • Grease bottom of a 13x9 inch pan.
  • Brownie Layer: Combine brownie mix, oil, water and eggs in a large bowl just until all dry mix is moistened.
  • Spread in greased pan.
  • Bake for 20 minutes.
  • Cheesecake Layer: Beat vanilla, egg, milk and cream cheese in large bowl until smooth.
  • Pour over baked brownie layer.
  • Bake until topping is set, about 25 minutes.
  • Cool 2 hours.
  • Cherry Layer: Spread pie filling over bars.
  • Cut into 1 1/2 or 2-inch squares.
  • Store in refrigerator.

6 ounces cream cheese, softened
1/2 cup sugar
1/4 cup butter, softened
2 tablespoons all-purpose flour
1 large egg, room temperature, lightly beaten
1/2 teaspoon vanilla extract
BROWNIE:
1/2 cup butter, cubed
1 ounce unsweetened chocolate
2 large eggs, room temperature, lightly beaten
1 teaspoon vanilla extract
1 cup sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 cup chopped walnuts
TOPPING:
1 cup semisweet chocolate chips
1/4 cup chopped walnuts
2 cups miniature marshmallows
FROSTING:
1/4 cup butter
1/4 cup 2% milk
2 ounces cream cheese
1 ounce unsweetened chocolate
3 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°. In a small bowl, combine the first 6 ingredients until smooth; set aside. , In a large saucepan over medium heat, melt butter and chocolate. Remove from the heat and let cool. Stir in eggs and vanilla. Add sugar, flour, baking powder and nuts, stirring until blended. , Spread batter in a 13x9-in. baking pan coated with cooking spray. Spread filling over batter. For topping, in small bowl, combine chocolate chips and nuts; sprinkle over filling. , Bake until almost set, about 28 minutes. Sprinkle with marshmallows; bake 2 minutes longer. , For frosting, in a large saucepan, heat butter, milk, cream cheese and chocolate until melted, stirring until smooth. Remove from heat; stir in confectioners' sugar and vanilla. Immediately drizzle over marshmallows. Chill well; cut into bars.

  • Prepare brownies following directions on box using water, vegetable oil, and eggs. Pour batter on top of the Sandies® Cookies crust. Evenly place dollops of cherry pie filling into brownie batter. Bake at 350 degrees F for 28 - 30 minutes or until toothpick inserted comes out clean.
