This is my husband's favorite cake. I've been making it for him for years and he can't resist it. I found this recipe after a trip to Greece and have made a few changes to make things easier. Enjoy!

1 (18 ounce) lemon cake mix
1 (3 3/4 ounce) box lemon pudding mix
1 cup chopped walnuts
4 eggs
3/4 cup water
1/2 cup oil
1/4 cup ouzo (Sambuca will also work)
1 cup sugar
1 cup water
2 inches cinnamon sticks
2 whole cloves
1 cup honey
2 tablespoons ouzo

Steps:

  • Preheat oven to 325 degrees.
  • Grease and flour a 10 inch tube pan.
  • Sprinkle walnuts evenly over the bottom of the pan.
  • Combine cake mix, pudding mix, eggs, water, oil, and Ouzo.
  • Pour batter into pan, over the walnuts.
  • Bake for 1 hour.
  • Place on a rack and cool for 30 minutes.
  • Invert onto a serving plate.
  • Prick several times with a skewer and pour honey syrup over the top.
  • To make honey syrup:.
  • Combine honey, water, cinnamon sticks, and cloves in a pot.
  • Bring to a boil and reduce heat.
  • Cool for 30 minutes without stirring, or until mixture is syrupy (230 degrees on a candy thermometer.).
  • Remove cinnamon sticks and cloves.
  • Stir in honey.
  • Stir in Ouzo.

6 eggs
1 1/2 cups sugar
1 cup unsalted butter, melted
3/4 cup warm milk
1 teaspoon vanilla
3 cups flour
2 tablespoons baking powder
1 (16 ounce) can peaches, drained and chopped

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, cream the eggs and sugar. Add the butter, milk and vanilla and beat for 5 minutes. Mix the flour, baking powder and peaches and add this to the egg mixture. Beat mixture together for 2 to 3 minutes.
  • Grease and flour a tube or bundt pan and pour the mixture evenly in and around the pan. Bake for 45 to 1 hour or until golden brown. Allow to cool before serving.

4 cups flour
2 cups sugar
2 teaspoons baking powder
gated peel of 1 orange
1/4 cup brandy
1 cup unsalted butter, softened (1 1/5 sticks)
1 1/2 cups milk
4 eggs
butter, for baking pan

Steps:

  • Preheat oven to 350F (180C).
  • Whisk together dry ingredients (flour, sugar, baking powder) to combine well.
  • In a mixing bowl, combine orange peel, brandy, and softened butter.
  • Beat until smooth. Continuing to beat, add milk slowly, and then eggs. Slowly beat in the flour mixture and continue to beat for 3 minutes at medium-high speed until the batter is smooth.
  • Pour into two lightly buttered loaf pans (or equivalent) and bake at 350F (180C) for 45 minutes or until a knife inserted in the middle comes out clean.

  • Make the cake: • Combine all of the dry ingredients in a bowl and whisk together. Pass them through a sifter into a bowl and set aside. • Combine all of the wet ingredients in a large mixing bowl and whisk until combined. Add the dry ingredients in 3-4 batches and whisk until all of the flour is combined. Take care not to overmix so that the cake is nice and light. • Pour the batter in a prepared 9 by 13-inch baking pan. • Bake in the center rack of the oven for 45 minutes or until a toothpick that is inserted in the center of the cake comes out clean. • As soon as the cake comes out of the oven scour it into serving pieces and poke with a toothpick. • Pour all of the syrup over the cake. • Allow the cake to absorb all of the syrup by setting it at room temperature for at least 2 hours. Serving it right away will cause all of the syrup to pool at the bottom leaving the top half of the cake dry. Serve the cake with a dollop of whipped cream and some fresh berries.
