REESE'S™ PEANUT BUTTER LAYER BARS
These gooey bars, made with Betty Crocker™ double chocolate chunk cookie mix, are our new favorite way to indulge whenever a peanut butter-chocolate craving strikes.

Steps:
- Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
- In large bowl, mix cookie mix, oil, water and egg with spoon until soft dough forms. Press dough in bottom of pan. Bake 15 minutes.
- In small bowl, mix condensed milk and peanut butter. Pour evenly over baked crust, carefully spreading to edges. Sprinkle chopped peanut butter cups, chocolate chips, peanut butter chips and peanuts evenly over top. Bake 18 to 22 minutes or until bubbling along edges. Cool completely on cooling rack, about 1 hour. Cut into 6 rows by 4 rows.

- Preheat oven to 375 degrees F (190 degrees C). Spray the bottom and sides of a 9x13-inch baking dish with cooking spray.
- Mix flour, brown sugar, peanut butter, butter, milk, egg, vanilla extract, salt, and baking soda together in a bowl. Fold chocolate chips into the batter. Pour batter into the prepared baking dish.
- Bake in the preheated oven until lightly browned and a toothpick inserted in the middle comes out clean, 20 minutes.

RETRO SCHOOL CAFETERIA PEANUT BUTTER BARS
It's taken me a while to find this recipe. There are many versions of "the peanut butter bar" but, I believe this recipe comes the closest to what I remember eating in the 1960's (via our elementary school lunchroom). Boy those ladies could really cook back then!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 15x10-inch baking pan.
- Cream white sugar, brown sugar, butter, and eggs together in a mixing bowl. Mix in peanut butter and vanilla extract. Add flour and blend well. Add oats, baking soda, and salt and mix to combine. Spread into the prepared pan.
- Bake in the preheated oven until golden and the edges start to pull away from the sides of the pan, about 20 minutes. Remove from the oven and let cool or chill in the refrigerator, about 30 minutes.
- While bars cool, blend powdered sugar, butter, milk, and peanut butter together in a bowl, adding more milk to give frosting the desired consistency. Frost cooled bars and cut into 20 pieces.

No bake-very easy! They have a lower sugar to peanut butter ratio than other recipes I have seen but are still very rich(!) and quite similar to reeses pb cups.

- Mix the crumbs and sugar (sifted is better).
- Add the melted butter and peanut butter.
- Mix well and press into a 9x13 inch pan.
- Melt the chocolate chips in microwave on 70% (about a minute 15 seconds in mine.).
- Spread chocolate over the bars.
- Refrigerate till hard, then take out about 15 minutes before you want to cut them, so the frosting won't crack.
CHEWY PEANUT BUTTER-MARSHMALLOW BARS
Classic cereal treats for the peanut butter fanatic, these marshmallow bars call for cornflakes instead of Rice Krispies, making for a wonderfully chewy-crunchy contrast. Cornflakes are delicate, so the key here is to avoid crushing the cereal too much when mixing the ingredients. The end result should be airy and chewy, but not dense, with visible chunks of marshmallow throughout. This recipe comes together quickly, so have your ingredients measured and ready to add to the pot when you begin. Once the chocolate topping has set, these bars pack well for picnics or potlucks, but if you're concerned about the chocolate melting, you can skip it altogether and finish the bars with a sprinkle of sea salt.

- Grease a 9-inch square pan with butter and sprinkle 1/2 cup/17 grams of the cornflakes on the bottom of the pan.
- In a large pot, melt the 6 tablespoons/85 grams butter over medium-low heat. Add the marshmallows and kosher salt, and cook, stirring often, until about half of the marshmallows have melted but the mixture is not completely smooth. Add the peanut butter and mix until just combined, keeping some lumps of marshmallow.
- Take the pan off the heat, and working quickly, add about half the remaining 5½ cups cornflakes, folding them into the marshmallow mixture as gently as possible to avoid crushing the cereal. Repeat with the remaining cornflakes. If the mixture becomes too sticky to work with, briefly return the pot to the heat on low.
- Working quickly, transfer the mixture to the prepared pan, using a wet spoon or spatula to spread and pat into an even layer, again being careful to avoid crushing or packing the cereal.
- Place the chocolate in a small heatproof bowl and microwave it in 15-second intervals, stirring between intervals, until melted and smooth. Drizzle the chocolate over the bars in overlapping lines. (If using chocolate chips, scatter the chips onto the surface of the bars while they are still warm and let sit for 5 minutes, allowing the heat of the cornflakes to melt the chocolate before dragging a fork or toothpick through it to create lines.) Sprinkle the bars lightly with flaky sea salt, and set aside at room temperature (in a cool spot, if possible) until completely set, about 2 hours.
- Cut into bars and serve. Bars will keep, wrapped well at room temperature, for up to 3 days.
KELSEY'S PEANUT BUTTER BARS
This is my DIL's recipe. She knows that any time our family gets together she is expected to bring these. Simple to make and yummy!

- Combine flour, baking powder and salt, set aside.
- Cream together peanut butter and butter. Add sugar, brown sugar, eggs and vanilla. Mix until well combined.
- Stir in dry ingredients.
- Pour into a greased 9x13 pan and bake at 350 degrees for approximately 25 minutes. Remove from oven and allow to cool completely.
- ICING:.
- Combine all icing ingredients and mix until smooth. Spread over cooled bars.
