The best dumplings are made with baking mix! I've never written down a recipe before so please use your own judgment on the thickening. My husband's mother always did the milk and flour balls in the chicken, he liked mine much better and always asks me to make it. He also loves it when I add more water and rice!

6 skinless, boneless chicken breast halves
6 cups water
1 tablespoon butter
salt and pepper to taste
2 cups all-purpose baking mix
⅔ cup milk
½ cup all-purpose flour
½ cup cold water

Steps:

  • In a large pot over medium heat, simmer chicken in 6 cups water until no longer pink. Remove chicken, cool and shred.
  • Return shredded chicken to pot and stir in butter, salt and pepper. Cook until chicken reaches desired tenderness, 15 to 60 minutes.
  • In a bowl, stir together baking mix and milk until smooth. In a separate bowl, stir together flour and 1/2 cup cold water until smooth. Stir flour mixture into soup; bring soup to a rolling boil.
  • Drop baking mix mixture by tablespoonfuls into the boiling water, neatly around the chicken. Reduce heat to a simmer and cook, uncovered, 10 minutes. Then cover and cook 10 minutes more. (Sneak a spatula under the dumplings to prevent chicken from sticking to the bottom of the pot.) Serve hot.

This recipe is my own creation. It is one of the signature recipes of One Pan Wonders - http://www.onepanwonders.com I created this to impress a certain someone on a one-night Pacific Crest Trail trip. He had jokingly asked for chicken and dumplings for dinner My hiking buddies were drooling in my pan. That night we watched the full moon rise, lighting up the mountains around us. Simply amazing. I'm married to that man now. :)

1 (7 ounce) packet cooked chicken (foil pouch)
2 1/4 cups Bisquick baking mix
1 teaspoon dried parsley
3 teaspoons chicken bouillon
1 tablespoon dried vegetable flakes
1 tablespoon dried onion flakes
1/2 teaspoon celery salt
1/4 teaspoon black pepper
1/4 teaspoon dried thyme

Steps:

  • At home: put the Bisquick, and parsley in a zip locking plastic bag. In a second bag put the remaining ingredients. Carry the chicken pouch seperately.
  • In camp: bring 3 cups of water to a boil, add the broth/veggie mix. Reduce heat and keep simmering.
  • Add the chicken. Meanwhile, make the dumplings by adding 2/3 cup of water to the bag of Bisquick. Zip shut and squish to combine well. Snip off a corner off the bag and squeeze out dumplings.
  • Let them simmer, covered, for a couple of minutes or until they puff up and float to the top.

1 cup instant brown rice
0.5 (1 2/3 ounce) package instant vanilla pudding (about 1/4 cup)
2 tablespoons powdered milk
1/4 teaspoon cinnamon
1/4 cup dried mixed berry
2 tablespoons chopped honey roasted peanuts

Steps:

  • Place 1 cup of rice in a zip lock bag. Seal and set aside.
  • Combine the remainder of the dry ingredients in a separate zip lock bag.
  • To make one serving, bring 1 3/4 cups water to a boil. Add the bag of rice and heat for approximately 10 minutes until the rice is fully cooked.
  • Next, add the bag of mix containing the pudding. Remove from heat.
  • Stir and serve.
