¼ cup Coconut Flour
1 teaspoon Cinnamon Powder
1 teaspoon Baking Powder
¼ cup Brown Erythritol
¼ cup Butter, melted
3 Eggs
½ cup Grated Zucchini
½ cup Powdered Erythritol
2 tablespoon Almond Milk

Steps:

  • Pre-heat oven to 350F. Line a loaf pan with parchment.
  • Whisk together eggs, butter, and erythritol in a bowl.
  • Whisk together almond flour, coconut flour, cinnamon powder, and baking powder in a separate bowl.
  • Blend the dry ingredients into the wet mixture.
  • Fold in the grated zucchini.
  • Pour the mixture into the prepared pan.
  • Bake for 30 minutes.
  • Whisk together powdered erythritol and almond milk in a bowl.
  • Allow bread to cool and top with glaze.
