16 oz raw brussels sprouts

Steps:

  • Preheat oven to 400 degrees. Line baking sheet with parchment paper.
  • Halve brussels sprouts.
  • Using kitchen shears, cut bacon into small pieces lengthwise.
  • Add brussels sprouts and bacon to prepared baking sheet and season with salt and pepper.
  • Bake for 35-40 minutes, until brussels sprouts are slightly browned and bacon is crispy.

Creamy, cheesy, and with just the right amount of bacon, these keto Parmesan Brussels Sprouts with Bacon will be the hit of your table!

4 cups brussels sprouts
5 slices bacon
2 cloves garlic
1/2 cup parmesan cheese
1 cup gouda
1 cup heavy whipping cream
1 tbsp Dijon mustard

Steps:

  • 1. Trim the Brussels sprouts and remove outer leaves. Cut them in half if they are large.
  • 2. Chop the bacon and fry it in an oven-safe skillet, cooking it until just barely crispy. Remove all but 2 tbsp of bacon fat.
  • 3. Add the cleaned and sliced Brussels sprouts and minced garlic to the pan with the bacon. Cook over medium heat for 5-6 minutes, stirring frequently, until the sprouts have some golden brown color. Turn off the heat.
  • 4. Add the heavy whipping cream, Dijon mustard, and a touch of salt. Stir well to combine. Top with the shredded gouda and Parmesan cheeses.
  • 5. Bake at 350-F for about 15 minutes or until sprouts are just barely fork tender and are bubbly and brown on top.
  • 6. Serve and enjoy!

2 pounds of brussel sprouts
1 cup of heavy cream
1/2 cup of shredded mozzarella cheese
1/2 cup of shredded cheddar cheese
2 tablespoons butter
2 tablespoons of olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
pinch of nutmeg
4 slices of cooked bacon - chopped

Steps:

  • Preheat oven to 400 degrees.
  • Slice brussel sprouts in half and coat with olive oil and salt and pepper.
  • Roast on a baking sheet in the oven for about 15 to 20 minutes or until browned and crispy. Flip them over about halfway through so they cook evenly.
  • While brussel sprouts are roasting, add the heavy cream, shredded cheese, and nutmeg to to a small sauce pan and heat through on low until cheese is melted.
  • Add the roasted brussel sprouts to a 9x13 dish and pour cheese sauce over them. Top with the bacon.
  • Reduce oven temperature to 375 and cook brussel sprouts for an additional 15 minutes or until bubbly.

Steps:

  • Preheat the oven to 350 degrees.
  • Line a rimmed baking sheet with parchment paper (order here).
  • Slice the Brussels sprouts across and place them flat side down on the parchment.
  • Slice the bacon crosswise into bite sized pieces and distribute it evenly over the bacon.
  • Season the pan liberally with salt and pepper.
  • Bake for 45 minutes or until the Brussels sprouts are tender.
  • Serve and enjoy.
