Keto cast iron skillet meatloaf is one of the most filling and delicious meals you can make. It's totally keto and totally awesome!

1/2 cup no-sugar added ketchup
1/4 cup Lakanto Golden Monkfruit Sweetener
2 lbs ground beef
1 cup pork rind breadcrumbs
2 tbsp minced garlic
2 tbsp onion powder
4 oz mushrooms, pureed
pink Himalayan salt
fresh ground black pepper

Steps:

  • Preheat your oven to 350˚F
  • Combine all meatloaf ingredients together in a large mixing bowl
  • Mix well with your hands (gotta get dirty!)
  • Spread the mixture evenly into the bottom of a 10" cast iron skillet; place into the oven
  • Cook for 45 minutes or until meatloaf is browned and done inside
  • While this is cooking, mix the two topping ingredients together
  • Spread the topping on and place back into the oven for 5 minutes
  • Remove, cut, and serve!

Sweet and savory low carb cornbread with the same great flavor and texture as the old fashioned recipe.

Number Of Ingredients 8

1 1/2 cups almond flour
1 teaspoon baking powder
1/2 teaspoon salt
3 eggs, room temperature
4 tablespoons butter, melted
2 tablespoons keto granular sweetener, such as Swerve
1/2 cup cheddar cheese, shredded
2 oz. cream cheese, room temperature

Steps:

  • Add 1 tablespoon of butter to a 9" cast iron skillet and place in the oven. Preheat oven and skillet to 375 degrees.
  • In a medium bowl, mix together almond flour, baking powder, and salt.
  • In a separate bowl, whisk together eggs, melted butter, and keto granular sweetener.
  • Combine both dry ingredients and wet ingredients together. Fold in shredded cheddar cheese and cream cheese.
  • Pour batter into preheated cast iron skillet and bake on the middle rack for about 30 minutes.
  • Remove cornbread from the oven and let sit for 5 minutes before slicing.
  • Serve on its own slathered with butter, or with your favorite keto soup and enjoy!
