Steps:
- Season steak with a pinch of salt and pepper.
- In a shallow bowl, combine eggs and heavy cream and whisk until well combined.
- In another bowl, combine pork rinds, cheese, onion powder, paprika, and garlic powder.
- Firstly coat the steaks in the pork rind mixture, dip into the egg-cream mixture and then again to the pork rind mixture. Continue doing the same with the remaining steaks.
- Heat up a cast-iron pan over medium heat. Add oil and once hot, add the breaded steaks (2 at a time) and cook 2 to 3 minutes per side, or until cooked through.
- Do the same with the remaining two steaks.
- Now let's make the gravy, add onion and garlic in the same pan (reduce the oil if you have added too much during frying) and cook for 2 to 3 minutes or until onions are softened.
- Stir in cream cheese until melted. Gradually whisk in beef broth, reduce the heat and simmer for a few minutes or until it reaches your desired thickness.
- Serve steak topped with gravy alongside steamed broccoli or mashed cauliflower.

- NOTE: It's helpful if you have one pan that is large enough to cook all of the steaks at once or two frying pans so that they all get finished at the same time.If you don't, you'll need to cook two steaks, and clean the pan before continuing on to the next two steaks because the almond flour that is left behind in the pan will burn and start smoking. Burnt almond flour doesn't taste good.
- Use two bowls that are wide enough for dredging steaks and set up a dipping station next to the stove. Beat the eggs and 2 tbsp of heavy whipping cream in one bowl. Whisk the almond flour, Parmesan and spices in the other.

- Crush the pork rinds into crumbs in a plastic bag (or in a food processor) and season them with salt and pepper. Mix in 1 tsp of xanthan gum (helps the pork rinds stick but isn't crucial for the recipe to work). Place the mixture into a shallow dish and set aside.
- Beat the eggs in a separate bowl and add a splash of milk. Dredge each piece of cube steak in the egg wash and then in the pork rind mixture.
- Heat a large frying pan over medium heat. Add a shallow amount of oil (about 1/4" thick) into the pan so it coats the bottom. I always like to test one piece out first to assess the temperature and make adjustments to the oil. Cook the chicken fried steak nuggets in about 3-4 batches. Continue to adjust the oil temperature as needed (or change the oil out if needed). I cooked the nuggets for about 3 minutes per side and placed the cooked nuggets onto a paper towel lined plate.

- Place the whey protein, spices and the remaining 1/2 tsp of salt into a large dish. Add the eggs into a separate dish.
- Dip one steak into the whey mix to coat on both sides, then into the egg, shaking off any excess, then repeat so each steak has two coats of whey and one coat of egg. Repeat for all 4 steaks. Any remaining whey mix keep to one side and add if you find they've gone a little transparent after chilling.
- Place the meat onto a cooling wrack with a baking tray underneath and chill in the fridge for 15 minutes. Option to place on a parchment lined baking tray but you will need to sprinkle with a little more whey mix before frying as the egg will soak up the whey.
