1 cup dry bread crumbs
1 teaspoon salt
1/4 teaspoon pepper
2 large eggs, lightly beaten
1-1/2 pounds ground beef
1 teaspoon dried minced onion
1 can (15 ounces) tomato sauce, divided
1/2 cup sugar
2 tablespoons brown sugar
2 tablespoons cider vinegar
2 teaspoons prepared mustard

Steps:

  • In a large bowl, combine the bread crumbs, salt, pepper and eggs; crumble beef over top and mix well. Add onion and half of the tomato sauce. Press into a 9x5-in. loaf pan. , Bake at 350° for 50 minutes. In a saucepan, combine the sugars, vinegar, mustard and remaining tomato sauce; bring to a boil. Pour over meat loaf; bake until no pink remains and a thermometer reads 160°, about 10 minutes longer., Freeze option: Securely wrap and freeze cooled meat loaf in plastic wrap and foil. To use, partially thaw in refrigerator overnight. Unwrap meat loaf; reheat on a greased 15x10x1-in. baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

1 ½ pounds ground beef
1 cup dry bread crumbs
1 teaspoon salt
¼ teaspoon ground black pepper
2 eggs
1 teaspoon dried minced onion
1 (15 ounce) can tomato sauce
2 tablespoons brown sugar
2 tablespoons cider vinegar
½ cup white sugar
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ground beef, bread crumbs, salt, ground black pepper, eggs, onion flakes and 1/2 of the can of tomato sauce. Mix together well and place into a 5x9 inch loaf pan.
  • Push the meatloaf down into the pan forming a well for the sauce around all the edges.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes.
  • Meanwhile, in a small saucepan over medium heat, combine the remaining tomato sauce, brown sugar, vinegar, white sugar and mustard. Bring to a boil and remove from heat.
  • After meatloaf has cooked for 40 minutes, remove from oven and pour sauce over the top of the meatloaf.
  • Return to oven and bake at 350 degrees F (175 degrees C) for 20 more minutes. Let sit 5 minutes before removing from pan.

1 lb. lean ground beef
1/2 lb. lean ground pork
1/2 cup Progresso™ Plain Bread Crumbs
1/4 cup purchased sweet-and-sour sauce
1 tablespoon instant minced onion
1/2 teaspoon garlic-pepper blend
1/4 teaspoon salt
4 tablespoons purchased sweet-and-sour sauce
3 or 4 green or red bell pepper rings
3 or 4 drained canned pineapple slices

Steps:

  • Heat oven to 350°F. Beat egg in large bowl. Add all remaining meatloaf ingredients; mix well. Press mixture firmly in ungreased 8x4-inch loaf pan. Bake at 350°F. for 40 minutes.
  • Remove meatloaf from oven. Spread about 3 tablespoons sweet-and-sour sauce over loaf. Arrange bell pepper rings and pineapple slices over sauce. Brush with remaining tablespoon sauce.
  • Return to oven; bake an additional 25 to 30 minutes or until meatloaf is thoroughly cooked in center and meat thermometer registers 160°F. Cover with foil; let stand 5 minutes before cutting meatloaf into slices.

1 cup oats
½ onion, chopped
3 tablespoons pear applesauce
3 tablespoons chili powder
1 egg, beaten
1 teaspoon minced garlic
1 teaspoon Italian seasoning

1 teaspoon ground black pepper
2 teaspoons olive oil
2 tablespoons chopped onion
¼ cup brown sugar
½ cup barbeque sauce (such as Sweet Baby Ray's®)
1 teaspoon chili powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix ground turkey, oats, 1/2 chopped onion, pear applesauce, 3 tablespoons chili powder, egg, garlic, Italian seasoning, salt, and black pepper together in a bowl; press into an 8-inch square baking dish.

1 tablespoon cider vinegar
1/4 teaspoon prepared mustard

2 tablespoons finely chopped onion
1 tablespoon crushed butter-flavored crackers
1 tablespoon minced fresh parsley
1/4 teaspoon salt
Dash pepper
1/2 pound lean ground turkey

Steps:

  • In a small bowl, combine the tomato sauce, brown sugar, vinegar and mustard; set aside. This creation started out as a weight watchers recipe for sweet and sour meatballs. When it came time for me to roll the 48 little balls, I decided a loaf would be much better, and quicker.

1 spray cooking spray
1 1/2 pound raw extra lean ground turkey or any ground meat combo
3/4 cups rolled oats
2 large egg whites
1 cup onion, finely chopped
1 medium garlic clove, minced
2 tbsp dried parsley
2 tsp dried oregano
8 oz canned tomato sauce
2 tbsp Splenda
3 tbsp mustard, spicy brown
1 1/4 tsp chili powder
1/2 tsp hot pepper sauce

Steps:

  • Preheat oven to 350°F. Spray baking dish with cooking spray or line with aluminum foil.
  • In a medium bowl, combine turkey, oats, egg whites, onion, garlic, parsley and oregano; mix thoroughly. Shape mixture into loaf; place on baking dish.
  • Combine remaining ingredients in a small bowl. Poke deeps holes in the meatloaf. Pour about half of the sauce over loaf and spread over the top and sides.
  • Bake for 30 minutes, pour the rest of the sauce over the loaf. Bake for an addition 15-20 minutes or until cooked thoroughly.

1 cup dried breadcrumbs
1 cup frozen chopped spinach, thawed and squeezed dry
1/2 cup chopped cremini mushrooms
1/2 cup pitted prunes, chopped
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon Worcestershire sauce
2 large eggs, lightly beaten
1 clove garlic, minced
1 medium onion, grated
1/2 cup ketchup
Kosher salt and freshly ground black pepper
2 tablespoons apricot preserves
2 teaspoons soy sauce
1 teaspoon ground ginger
1 teaspoon rice vinegar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, breadcrumbs, spinach, mushrooms, prunes, dill, parsley, Worcestershire, eggs, garlic, onion, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more.
