Our Crustless Pizza is a fun alternative way to enjoy family pizza night! Besides being a quick and easy weeknight meal, it can be easily adapted by adding your favorite toppings. This keto crustless pizza is a fantastic recipe for all of you low carb dieters!

12 oz ground Italian sausage
½ tsp garlic powder
½ tsp Italian seasoning
1 ½ cups sliced baby bella mushrooms
½ cup sliced onions
⅓ cup keto tomato sauce
¼ cup chopped basil
1 ½ cups shredded whole milk mozzarella cheese
16 slices Boar's Head pre-sliced pepperoni

Steps:

  • Preheat the oven to 400 degrees.
  • Cut and prep all your veggies.
  • In your cast iron skillet add the ground sausage and the spices. Fully cook it making sure to brown the sausage.
  • Drain the cooked sausage getting rid of the extra oil. Transfer the sausage back into the skillet. Set aside. (This step isn't mandatory but highly recommended.)
  • In a small frying pan add the mushrooms and onions with 1 tsp of olive oil and saute until tender.
  • Spread the keto tomato sauce over the sausage.
  • Evenly lay the cooked mushrooms and onions on top of the sauce.
  • Sprinkle the chopped basil.
  • Cover the top with shredded mozzarella cheese. Then add the sliced pepperoni.
  • Bake at 400 degrees for 10 minutes.
  • Serve and enjoy!

Steps:

  • 1) Preheat oven to 400 degrees. 2) Add 1/2 cup marinara to the bottom of a cast-iron skillet and heat on the stove until sauce is bubbling. 3) Sprinkle mozzarella cheese on top, reserving 1/4 cup. 4) Add toppings to the crustless pizza. 5) Sprinkle the remaining mozzarella cheese on top and the Italian Seasoning. 6) Bake on the top rack of the oven until the mozzarella cheese begins to bubble and turn brown (approximately 5-10 minutes depending on the oven and how browned you like the top of your pizza).

These Single-Serve Pepperoni Pizza Cups are a keto classic. Serve as a snack, light lunch or for dinner with a side.

39 slices pepperoni (3 cm diameter slices)
4.5 tablespoons Rao Homemade pizza sauce
4 grams basil leaves (fresh, chopped)
1/8 teaspoon black pepper (cracked, or to taste)
1/2 red pepper (diced small)
8 green olives (pitted and chopped)
1 cup mozzarella cheese (shredded)

Steps:

  • Preheat oven to 350F /180C / 160 fan
  • Line the non-stick 5 inch individual pie dishes/mini tart tins (12 cm) with pepperoni making sure they overlap with no gaps. Par bake for 4 - 5 minutes until part cooked.
  • Add the pizza sauce, chopped basil, peppers, olives and top with mozzarella. Bake for a further 5 - 6 minutes until the cheese melts. Option to finish under the broiler for 1 - 2 minutes until slightly golden and fully melty. Garnish with more black pepper and more basil.
  • Storage: best fresh but if you like cold pizza and cheese, can be stored in the fridge for up to 2 days.
