THE FLUFFIEST PANCAKES THAT WILL MAKE YOU HAPPY
This fluffy pancake recipe is done in 20 minutes. Great for weekend breakfast, brunch, or kids' party. Try it!

Steps:
- Put dry ingredients in a bowl and whisk
- Whisk the egg, add the milk, vanilla extract and melted the butter in a second bowl
- Now add the wet ingredients to the dry ingredients and whisk it into a thick batter
- Let it rest a couple of minutes while you heat a cast iron skillet to medium heat. Melt a little butter in the pan
- Take ⅓ measuring cup and pour it into the pan. Use the measuring cup to divide the batter evenly in the pan
- Cook for about a minute. You will see bubbles in the batter as it goes a little dry. Check regularly with a spatula to see if the pancake browns on the bottom
- Flip the pancake and cook the other side of the pancake for 1 more minute

Steps:
- In a bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a different bowl, whisk together buttermilk, egg, melted butter, and vanilla.
- Mix wet ingredients with dry ingredients until combined but slightly lumpy.
- Pour roughly 1/4 cup of batter into a non-stick or greased pan. Cook pancakes until bubbles start to form (2-3 minutes), then flip.
- Cook pancakes for another minute, until golden brown on bottom.
- Serve with your favouite toppings like maple syrup, nuts, and fruit.

I love pancakes. Who doesn't! These pancakes are actually inspired by a book character by Dean Koontz. The characters name is Odd Thomas and I imagine that if he were to serve me his fluffy pancakes in Pico Mundo that this is how they would be. Keep in mind that this recipe is just a method. You can add ANYTHING to these guys to jazz them up. I like blueberries, raspberries, and sometimes I even add scrambled eggs, crumbled sausage, and shredded cheese. Yum!

Steps:
- Heat griddle to 325F or cast iron pan on medium low. Use vegetable shortening for lube.
- Combine flour, baking powder, sugar, and salt in a bowl.
- In a separate bowl beat 2 eggs with melted butter until creamy.
- Add egg mixture to dry ingredients and pour in some milk. No measurements needed. (Even the weather effects how much milk you will need. Eyeball it until you get a proper consistency for a batter.).
- Use a spatula to stir all of your ingredients together just until combined. Lumps are OK and desired to yield a tender batter.
- Cover your bowl of batter and let sit for 30 minutes! Your patience will be rewarded.
- After the batter has been left to rest dip a heaping 1/2 cup measure of batter onto griddle for diner/restaurant size pancakes. Flip pancakes when golden brown and delicious.

- Beat egg.
- Stir in butter and milk.
- Combine flour, salt, sugar, and baking powder.
- Stir into egg mixture.
- Lightly grease a griddle.
- Heat griddle and drop about 1/4 cup batter onto griddle.
- Spread lightly with a spoon.
- When bubbles begin to appear around outside edge and break, turn with a spatula and cook on other side.
- (I also lift edge a little with the spatula and peek under it to see how it's doing.) You will need to adjust your heat so they do not cook too fast and burn.
- For me, the temperature usually ends up somewhere between medium and medium-high.
