These Skinny Double Chocolate Banana Muffins are the muffins of your dreams! A healthy, refined sugar free muffin recipe that's naturally sweetened with maple syrup and bananas + loaded with chocolate.

3 bananas, mashed
1/2 cup of maple syrup
1 teaspoon vanilla extract
4 tablespoons coconut oil, melted
1 egg
2 tablespoons of cocoa powder
1 teaspoon of cinnamon
1 2/3 cup of white whole wheat flour
1/4 teaspoon of sea salt
1 teaspoon of baking soda
1/3 cup of mini chocolate chips

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, add bananas. Using a fork mash up bananas until just very small lumps are left. Add maple syrup, vanilla extract, coconut oil and egg.
  • Using a fork mix until combined.
  • Add in cocoa powder, white whole wheat flour, salt, cinnamon and baking soda. Using a spatula, mix until wet and dry ingredients are completely combined!
  • Fold in the mini chocolate chips.
  • Line each muffin tin with a cupcake liner (or spray with pam so muffins don't stick to pan if not using liner).
  • Fill each muffin tin 3/4 of the way full.
  • Bake for 15-17 minutes. Serve.

1 cup almond flour
1/2 cup unsweetened cocoa powder
1/2 cup Erythritol (granulated)
1 1/2 teaspoons Baking Powder
1 teaspoon vanilla extract
3 large eggs
2/3 cup Heavy Cream
3 ounces Unsalted Butter ( melted)
1/2 cup Sugar-Free Chocolate Chips

Steps:

  • Preheat oven to 175C/350F.
  • In a bowl, combine almond flour, cocoa powder, erythritol and baking powder.
  • Add the vanilla extract, eggs, and heavy cream. Mix well.
  • Add the melted butter and combine.
  • Add the sugar-free chocolate chips and stir well.
  • Spoon the mixture into 12 holes of a standard muffin pan that have been lined with cupcake papers.
  • Bake for 20 minutes, the muffins will look puffed up and slightly spring back when touched.
  • Allow to cool in the muffin tin, or eat them straight away - beware of the molten chocolate chips. The muffins will shrink back a little as they cool.

These muffins are so moist and full of flavor! I have looked at dozens of recipes and most had too much sugar for my liking. There is absolutely no need for a lot of sugar to make these muffins delicious. Because they have bananas and chocolate chips, I just added 1/2 cup of sugar, which turned out perfect!

1 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup white sugar
½ cup canola oil
1 egg
¼ cup milk
1 teaspoon vanilla extract
2 large very ripe bananas, mashed
¾ mini semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
  • Combine flour, cocoa, baking powder, baking soda, and salt together in a large bowl.
  • Whisk sugar, oil, egg, milk, and vanilla extract together in a separate bowl. Stir into flour mixture until just moistened. Fold in bananas and chocolate chips.
  • Divide batter among the muffin cups, filling each about 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes.

1 cup sugar
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1-1/3 cups mashed ripe bananas (about 3 medium)
1/3 cup canola oil
1 large egg, room temperature
1 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Whisk together the first 6 ingredients. In a separate bowl, whisk bananas, oil and egg until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm.
