EASY KETO & LOW CARB SWEET CHILI SAUCE
A recipe for keto-friendly, low-carb, and no-sugar-added Sweet Chili Sauce. Perfect as a dipping sauce or as a component in keto recipes like Bang Bang Shrimp & Asian Sticky Chicken Wings

Steps:
- Add all ingredients to a large mixing bowl.
- Whisk until all ingredients are fully incorporated. If you are using Bone Broth Collagen it will be lumpy at first but just keep whisking.
- Heat a sauce pan to medium heat
- Cook the sauce uncovered for 10-15 minutes.
- Remove the pan from the heat and allow it to cool. As the sauce cools, it will thicken the sauce.

Steps:
- Start by dicing up the peppers and grating the ginger and the garlic.
- Then, in a pan on high heat, add the vinegar, sweetener, and coconut aminos.
- Next, add the chili peppers, ginger, and garlic. Bring the mixture a boil and allow to boil without burning for 2 minutes.
- Lower the heat and allow to simmer for another 2 minutes.
- While the spicy sweet chili is simmering dissolve xanthan gum into hot water. I heated up the water in this glass measuring cup in the microwave for 1 minute.
- Do your best to dissolve the xanthan gum into hot water.
- Then, add water xanthan gum mixture into the pan with chilli sauce.
- Dissolve the xanthan gum as much as possible into the mixture.
- Take the chili sauce off the heat and allow to cool before canning.

- In a small bowl, place the 2 tablespoons of water and gelatin, and leave it for 5 minutes to bloom. Set aside.
- Add the vinegar, water, sweetener, garlic, coconut aminos, chili flakes, yacon syrup, and cayenne pepper (if using) into a medium saucepan.
- Heat over medium heat while stirring, to combine everything together. Increase the heat to medium-high and bring it to a boil. Let it simmer for about 2 minutes then remove it from the heat and whisk in the bloomed gelatin.
- Pour the sauce into a glass jar with an air-tight lid.
- Cool to room temperature and store in the fridge for up to two weeks.

- Combine the powdered gelatin with the first amount of water in a small dish without stirring the gelatin. Let the gelatin bloom for a couple minutes as you begin the next steps.
- In a small pot over low heat, combine the second amount of water with the vinegar and stevia. Keep the pot under a simmer as you whisk until the stevia has dissolved.
- Remove 1 TB of hot liquid and stir it into the bloomed gelatin until the gelatin dissolves. Return the gelatin water to the pot of liquid. Whisk in the chili sauce as well. Whisk over low heat for another 1-2 minutes until you feel the sauce thicken.
- Pour the sauce into a container and allow it to cool to fully thicken, or you may use immediately as a warm dipping sauce.

- Store the sauce in the fridge for up to 2 weeks in a clean airtight jar. If the sauce crystallizes or clouds up at all (because this is what most sweeteners do) simply heat it up a little in the microwave and the sauce will clarify again. Sauce can also be frozen but you will probably have to heat it up to clarify it.
