CRISPY ZUCCHINI FRIES (KETO + LOW CARB)

These Crispy Zucchini Fries are breaded with almond flour, parmesan and spices and baked until perfectly crispy! The perfect keto, low carb side dish! Only 3 net carbs per serving!

2 medium zucchini
1 egg
1 tablespoon of low carb ranch dressing, jalapeño ranch dressing or mayonnaise
1 cup almond flour
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 cup parmesan cheese

Steps:

  • Prehat oven to 400 degrees
  • Slice two zucchini into fry shapes (as shown in video)
  • Pat the zucchini dry
  • Set up your breading station by setting up two shallow bowls and a baking sheet with a silicone baking sheet or sprayed well with cooking spray.
  • In the first bowl combine the egg and the ranch dressing, mix until completely combined
  • In the second bowl combine the almond flour, spices and paremsan, mix well.
  • Dredge the zucchini in the egg then the almond flour crust and place on the pan.
  • Lightly spray the breaded zucchini fries with cooking spray to help crisp them.
  • Bake 15 minutes, turn carefully with a fork and bake for 10 minutes more or until golden brown and crisp.
  • Dip in ketchup or ranch dressing!

2 medium zucchini
1 large egg, beaten
½ cup almond flour
½ cup grated Parmesan cheese, see note
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon salt
Avocado oil spray

Steps:

  • Slice the zucchini into strips about ½ inch thick and 3-4 inches long, depending on the length of your zucchini. Pat dry.
  • Add the egg to a shallow bowl and whisk until smooth.
  • Add the almond flour, Parmesan, garlic powder, onion powder, and salt to a second shallow bowl and stir to combine.
  • Dip the zucchini first into the egg and then into the almond flour mixture. Press the flour mixture onto the zucchini to help it stick.
  • Place the zucchini in a single layer in an air fryer basket and spritz liberally with oil spray.
  • Air fry at 400 degrees for about 10 minutes or until crispy and browned.

Our Keto Zucchini Fries are a delicious and healthy, oven baked recipe. They are an ideal side dish whether you are eating Big Burgers or Battered Fish!

2 medium Zucchini
1 large Egg
1 tablespoon Heavy Cream
1 cup Almond Flour
½ cup Parmesan Cheese (grated/powdered)
1 teaspoon Garlic Powder
1 teaspoon Italian Herb Mix
½ teaspoon Salt
Olive Oil Spray

Steps:

  • Preheat your oven to 220C/420F. Line a cookie sheet with parchment paper and set aside.
  • Slice the zucchini into fries. We find it best to cut them in half, then cut each half lengthwise into 2 or 3 slices, and each slice into 2-4 thick matchsticks.
  • In a small bowl, whisk together the egg and cream.
  • In another bowl add the almond flour, parmesan, garlic, herbs, and salt. Mix well.
  • Bread each of the zucchini fries but first dipping in the egg mixture and then pressing into the almond flour mixture.
  • Place the breaded fries onto your prepared cookie sheet and spray generously with olive oil.
  • Bake for 25-30 minutes, turn over about halfway through.
  • Serve hot with a side of Garlic Aioli, or Feta Cheese Dip!

Steps:

  • Preheat oven to 425°F.
  • Whisk eggs in a small bowl. In a separate bowl, combine parmesan cheese, almond flour, Italian seasoning, parsley, and salt & pepper.
  • Cut zucchini into wedges. Dip in beaten egg and then in parmesan cheese mixture.
  • Place on a pan and bake 20-25 minutes or until crisp.
  • Serve with low carb tomato sauce.

2 Medium Zucchinis (400g), Cut into Sticks
1 Egg, Beaten
1 Cup (112g) Blanched Almond Flour
1 Cup (100g) Grated Parmesan Cheese
1 Tsp (3g) Garlic Powder
Salt, To Taste

Steps:

  • Preheat your oven to 400°F (204°C).
  • Line a baking sheet with parchment paper and coat it with non-stick baking spray.
  • Cut the zucchini fries about 1/2 inch thick and 3 inches long - and if wet, pat them dry with a paper towel.
  • In a small bowl, beat the egg and set aside. In another small bowl, mix the flour, cheese and garlic powder.
  • Dip the zucchini fries in the egg so that it is covered on all sides.
  • Then, put the fries in your dry ingredients mixture, and coat them thoroughly on all sides.
  • Once well coated, place the zucchini fries on the baking sheet, and repeat this process with the rest of your fries - be sure to spread them out on the tray.
  • Bake for about 20 minutes. Broil for the last couple of minutes until golden. Sprinkle with salt before serving.
  • Follow all of the same steps as described in 1-5 above.
  • Then, add the zucchini fries to your air fryer, and cook at 375°F for around 15-20 minutes - making sure to give the fries room in the basket. You may need to cook them in several batches to do that.
  • Sprinkle with salt before serving.
