16 oz. heavy whipping cream
3 tablespoons sugar
1 teaspoon vanilla
1 cup butter, softened
2 - 8 oz packages cream cheese, softened
2 - 16 oz boxes confectioners' sugar
1 teaspoon vanilla
1/4 cup key lime juice (optional)
green food coloring (optional for color)
2 cups all purpose flour
1-1/2 cups sugar
3/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 eggs
2/3 cup oil
2/3 cup key lime juice
3/4 cup sour cream

Steps:

  • For cake: Preheat oven to 350 degrees F. Grease and flour two 8-inch cake pans.
  • Sift flour, sugar, baking powder, baking soda and salt into mixer. Add eggs, oil and lime juice. Beat until smooth. Add sour cream and beat until smooth.
  • Pour into prepared pans and bake for 25 minutes or until a toothpick inserted comes out clean. Cool and frost.
  • For frosting: Beat butter and cream cheese until smooth. Beat in vanilla. For really creamy frosting, mix in 1/4 cup of key lime juice. You can also leave it out or add more confectioners sugar to make it thicker. Add a small amount of green food color if you'd like the frosting tinted.
  • For Whipped cream: Chill metal bowl and beaters in freezer for about 20 minutes. When ready to whip, add ingredients to the bowl and beat until stiff peaks form.
  • Divide cake into four layers and frost. Pipe top with whipped cream or add crushed graham crackers to the side of the cake if desired. Refrigerate.

1 package Betty Crocker™ Super Moist™ butter recipe yellow cake mix
2 tablespoons Key lime or regular lime juice (plus water to measure 1 cup)
1/2 cup butter or margarine, softened
2 teaspoons grated Key lime or regular lime peel
3 eggs
1 can (14 ounces) sweetened condensed milk
2 teaspoons grated Key lime or regular lime peel
1/2 cup Key lime or regular lime juice
1 1/2 cups whipping (heavy) cream

Steps:

  • Heat oven to 350°F. Grease bottoms only of two 8- or 9-inch round cake pans (dark or nonstick pans not recommended). Line pans with waxed paper. Grease waxed papers and sides of pans; lightly flour. In medium bowl, mix cracker crumbs, sugar and melted butter. Spread 2/3 cup of mixture in each pan.
  • In large bowl, beat cake mix, lime juice mixture, softened butter, 2 teaspoons lime peel and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour into pans.
  • Bake 8-inch rounds 36 to 43 minutes, 9-inch rounds 32 to 38 minutes, or until toothpick inserted in center comes out clean. Run sharp knife around sides of pans to loosen cakes. Cool in pans 15 minutes. Remove from pans to cooling rack, placing cakes crumb-mixture-side-up and removing waxed paper from tops of cakes. Cool completely, about 1 hour.
  • To make Creamy Key Lime Filling and Frosting, in small bowl, stir together condensed milk, 2 teaspoons lime peel and 1/2 cup lime juice; set aside. Beat whipping cream in chilled medium bowl with electric mixer on high speed until soft peaks form. Fold milk mixture into whipped cream just until blended.
  • Place 1 layer, crumb side up, on serving plate. Spread with 1 cup filling to within 1/4 inch of edge. Add second layer, crumb side up; frost side and top of cake with remaining filling. Store loosely covered in refrigerator.

2 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sour cream
3 eggs
2/3 cup vegetable oil
2 tablespoons Key lime zest
2/3 cup Key lime juice
For the Frosting:
3/4 cup unsalted butter (softened)
8-ounces cream cheese (softened)
6 cups powdered sugar (divided)
2 1/2 tablespoons Key lime juice
1/4 cup sweetened condensed milk
For the Garnish:
Graham cracker crumbs
Whipped cream
Key lime zest
Key lime slices

Steps:

  • Gather the ingredients. Preheat oven to 350 F. Grease and flour two 9-inch round cake pans and set aside.
  • In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt.
  • In the bowl of a stand mixer , combine the sour cream, eggs, vegetable oil, Key lime zest, and Key lime juice until smooth.
  • Add the dry ingredients to the wet and mix until smooth.
  • Pour the cake batter into the prepared pans and bake for 20 to 25 minutes or until a toothpick inserted comes out clean.
  • Cool for 5 minutes in the pan and then invert on a wire rack to cool completely.
  • To prepare the frosting, beat the butter and cream cheese until smooth.
  • Add half of the powdered sugar, the Key lime juice, and the sweetened condensed milk. Beat until smooth.
  • Add the remaining powdered sugar, 1 cup at a time, until the desired spreading consistency is achieved.
  • Place the first cake layer on the serving platter. Top with some of the Key lime frosting.
  • Place the second cake layer on top. Frost the top and sides with the remaining frosting.
  • Press the graham cracker crumbs around the base of the cake, about 1-inch high.
  • Pipe the whipped cream in a circle around the top of the cake.
  • Garnish with key lime zest and key lime slices.
  • Refrigerate until ready to serve. Enjoy!

Steps:

  • For the cake: Preheat the oven to 350 degrees F and grease and flour one 9-by-12-by-2-inch cake pan.
  • In a large mixing bowl, mix the gelatin, granulated sugar, flour, salt, baking powder and baking soda. Stir to mix well. Add the oil, orange juice, lemon juice, vanilla, and eggs. Mix until well combined. Pour the batter evenly in the pan and bake for 35 to 40 minutes. Test for doneness by lightly touching the tops or inserting a toothpick. Cool the cake in the pan for 5 minutes then turn out onto a cooling rack.
  • For the glaze: While the cake is still hot, mix the lime juice and confectioners' sugar together well. Pierce the cake with a fork to allow the glaze to soak in better and pour it over the cake on the cooling rack. Allow cake to cool completely as you prepare the icing.
  • For the icing: Cream the butter and cream cheese. Beat in the confectioners' sugar until mixture is smooth and easy to spread. Spread the icing on the top and sides of the cake.

½ (8 ounce) package cream cheese, softened
1 (3 ounce) package lime-flavored gelatin mix
¾ cup limeade
⅓ cup vegetable oil
4 large eggs
½ medium lime, zested and juiced
½ cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
4 ½ cups powdered sugar
4 ½ tablespoons Key lime juice
3 tablespoons graham cracker crumbs, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 10-inch Bundt® pan.
  • Combine cake mix, cream cheese, gelatin mix, limeade, vegetable oil, eggs, lime zest, and lime juice for cake in a mixing bowl; mix until smooth and well combined. Pour into the prepared pan.
