Ingredients

Butter, for pan
5 medium russet potatoes, sliced thinly
4 tablespoons flour
5 hot dogs, sliced
1 head broccoli, chopped
1 cup shredded Cheddar cheese
1/2 cup milk

Steps:

Preheat oven to 400 degrees F.
Lightly butter a 9-by 13-inch baking dish. Layer half the potatoes and sprinkle with half the flour. Add a layer of half the hotdogs and broccoli. Add half the cheese, and repeat the layered ingredients, ending with cheese. Pour the milk over all, cover with foil, and bake until potatoes are tender and casserole is bubbly, about 40 minutes. The kids will love this one.

Ingredients

5 hot dogs
5 -6 slices bacon
3/4 cup celery, chopped
1/2 cup onion, chopped
1 tablespoon flour
1/2 teaspoon pepper
1/2 teaspoon salt
1 (12 ounce) can evaporated milk
1 (10 3/4 ounce) can cream of celery soup
3 cups macaroni noodles, cooked
1/2 cup cheddar cheese, grated

Steps:

Fry bacon until crisp.
Slice 3 of the hot dogs.
In a skillet, using some of the fat from the bacon, sauté the hot dogs, celery and onion.
Stir in flour, salt and pepper.
Add the milk and can of soup, cook for about 10 minutes, stirring constantly.
Crumble bacon and add to the mixture.
In a 1 1/2 quart casserole dish, alternate layers of macaroni noodles and cream sauce.
Top the casserole with slices of the remaining hot dogs and cover with cheese.
Bake at 350°F for 20-25 minutes.

This is one of my children's favorite meals. It has protein, vegetable and starch so I'm happy too. Easy to prepare and can be frozen for make-ahead cooking.

Ingredients

1 1/2 lbs lean ground beef
1 1/2 cups chopped onions
1 garlic clove
1 (10 3/4 ounce) can tomato soup
1/2 teaspoon salt
1/4-1/2 cup chili sauce
1 (16 ounce) can green beans, drained
1/4 teaspoon pepper
2 cups mashed potatoes (use leftovers or instant)
1 cup cheddar cheese, shredded

Steps:

Brown ground beef and onions, drain off excess fat.
Add in remaining ingredients except potatoes and cheese.
Mix thoroughly and pour into 1 1/2 quart casserole dish.
Spread mashed potatoes on top of meat mixture.
Bake at 350°F for 15 minutes.
Sprinkle cheese over top and cook for another 15 minutes.
To make and freeze: Freeze with cheese attached in separate bag.
When thawed, bake as instructed above.
