KIMCHI GRILLED CHEESE
Spicy heat plays well with melty cheese (think: queso dip, stuffed jalapeños, Buffalo wings and blue cheese). Here, kimchi and mozzarella cheese come together for a twist on the classic grilled cheese. Mildly flavored mozzarella is an especially good choice in this recipe because it lets the kimchi shine, but you could also add 1/4 cup of grated Cheddar, Monterey Jack or even pepper Jack for more kick. If you have grilled steak, roasted vegetables or practically any other savory leftover in your fridge, chop it up and add about 1/4 cup to your sandwich along with the kimchi. Smearing mayonnaise on the bread, instead of butter, might sound weird, but it won't burn as quickly as butter, allowing the cheese ample time to melt, and the bread to toast up to golden perfection.

- Heat a heavy skillet over medium-low heat. Thinly spread 1 side of each slice of bread with 1/2 tablespoon mayonnaise. Place the bread, mayonnaise-side-down, in the skillet and divide the mozzarella evenly over the slices.
- When the cheese has just melted (no individual shreds of cheese remain), 6 to 10 minutes, add the kimchi to one side. Use a spatula to top with the other slice of bread, cheese-side-down. Press with the spatula to meld, then let cook, covered, flipping as needed to prevent burning, until the bread is crusty-brown and the sandwich is warmed through, 2 to 4 minutes.

KIMCHI PIMENTO CHEESE
A classic Southern favorite and a Korean staple go hand in hand. For something extra special, use homemade kimchi (and fry your own potato chips!). I was inspired for this recipe by Mind of a Chef, a PBS show created by the geniuses behind the now defunct Lucky Peach empire. It's an adaptation of the Pimento Cheese recipe in Lucky Peach Issue 8: The Gender Issue.

Steps:
- Beat the cream cheese in a mixer with the paddle attachment until smooth and slightly aerated.
- Meanwhile, squeeze the liquid out of the kimchi with your hands (or in a sieve with the back of a wooden spoon) and reserve it for the next step. Pulse the kimchi several times in a food processor, or chop it finely.
- In a separate bowl, whisk together the Tabasco, mayonnaise, vinegar, and 2 Tablespoons of the kimchi liquid.
- Using a rubber spatula, scrape down the sides of the bowl. Turn the mixer on to medium, add the cheddar, and mix for one minute, then stop, scrape again, and mix for another minute.
- Without stopping the mixer, drizzle the liquid ingredients into the cheese mixture and continue to mix until completely incorporated.
- Remove the bowl from the stand and fold in the pimentos and chopped kimchi.
- Cover and chill in the refrigerator for at least 12 hours.
- Allow to rest out of the refrigerator for an hour before serving.
- Serve with your favorite potato chips or chicharrones.

Steps:
- Puree till smooth in processor the mayo, cream cheese, garlic, parsley and sauces.
- Turn into bowl.
- now, in food processor, process just till coursely chopped, 1 cup pecans; add pecans and pimentos, with juice, to mayo mixture.
- Now grate cheese in food processor Put into bowl with remaining ingredients.
- Stir well to combine.
- Let stand, refrigerated, at least 1 hour.
- Even better the next day.
CHEESY KIMCHI NOODLES
Instant ramen ranks highly among comfort foods because it can be quickly prepared and those little seasoning packets provide lots of flavor with minimal effort. No packets are used in this recipe, but the addition of gooey, melted Cheddar and funky fermented kimchi makes the dish even more satisfying. Sautéed scallions and garlic balance out the spicy Sriracha, soy and sesame sauce, while the runny yolk from a crispy fried egg adds richness and mellows the spice. The cheese becomes sticky as it cools, so these noodles are best served immediately while still warm and glossy.

- Bring a medium saucepan of water to a boil over high. Add the noodles and cook according to the package instructions until tender but still springy, about 2 to 3 minutes. Transfer to a colander and rinse in cold water until cool, then toss with a splash of canola oil to prevent the noodles from sticking together. Set cooked noodles aside.
- Meanwhile, prepare the sauce: In a small bowl, whisk the Sriracha, soy sauce, sesame oil and Shaoxing wine; set aside.
- Set a medium nonstick skillet over high heat. Add ½ tablespoon canola oil and, once shimmering, crack in the eggs. Reduce the heat to medium and cook until the whites are done and the edges are browned, 2 to 3 minutes. Transfer to a plate.
- In the same skillet, heat the remaining 1 tablespoon canola oil over medium-high. Add the scallions, kimchi, garlic and sesame seeds, and cook for 1 minute until just softened, stirring frequently. Add the noodles and sauce, and toss to combine for 1 minute. Stir in the grated cheese until it melts. Turn off the heat.
- Transfer the noodles to serving plates, top with the fried eggs and garnish with extra sesame seeds and scallions. Serve immediately.

- Mix first 5 ingredients in medium bowl. Mash with fork to blend well. Season with salt and pepper. Cover; chill until cold, at least 2 hours and up to 3 days. - Shred the cheddar cheese on the large holes of a box grater.
- Add the kimchi to a small bowl and use kitchen shears to cut into small pieces.
- Butter both sides of each slice of bread.
- Heat the olive oil in a medium nonstick skillet over medium-high heat. Add the kimchi and cook until softened, about 2-3 minutes. Add the sugar and cook for an additional minute, stirring to incorporate. Transfer the kimchi to a bowl and wipe out the skillet.
- Turn the heat to medium and add both slices of butter bread to the skillet. Cook until the bottom is golden brown, 3-4 minutes. Flip the bread, then add the American cheese to one slice and all but 2 tablespoons of the cheddar cheese to the other slice. Top the American cheese with the kimchi and remaining 2 tablespoons cheddar. Cook until the cheese starts to melt and the underside of the bread begins to turn golden, 3-4 minutes.
- Sandwich the slices of bread together and cook, flipping once, for another 2-3 minutes, until the cheese is gooey and fully melted and the bread is well-toasted.
- Transfer to a cutting board and cut in half.
- Enjoy!

- Preheat a 10 or 12-inch heavy-bottomed skillet over medium-high heat. Add 1 tablespoon butter and swirl until foaming. Add onions, 1/2 teaspoon salt and a 1/4 teaspoon pepper and 2 tablespoons water to skillet. Cook onions, stirring often, until water evaporates and onions begin to brown, about 3 minutes. Add 2 more tablespoons water and scrape up any browned bits from bottom of skillet. Cook, adding a little water and stirring, until onions are soft and deep golden brown, about 20 minutes total. Remove to a plate and wipe out skillet with a paper towel.
- Return skillet to high heat. Season burger patties on both sides with salt and pepper. Add 1 tablespoon butter and swirl until melted. Add burger patties and cook, without moving them, until a dark brown crust forms on the first side, about 2 minutes. You can reduce the heat a little if butter begins to smoke excessively. Flip burgers and cook on the second side until crust develops, 1 1/2 minutes longer. Transfer the patties to a plate and wipe out the skillet again.
- Spread 2 generous tablespoons of the kimchi pimento cheese onto one side of each of the 4 slices of bread. Divide the caramelized onions on top of the cheese. Add burger patties to two of the slices and close sandwiches.
- Add 1 tablespoon of butter to the skillet. Return heat to medium and swirl the pan until the butter melts. Add the sandwiches and cook, moving them around the pan, until deep golden brown on the bottom, about 5 minutes. Remove sandwiches from skillet, melt remaining tablespoon butter in pan. Return sandwiches to skillet and cook until second side is golden brown and cheese is melted. Serve immediately.
