Steps:
- Into a large bowl sift together the flour, the baking powder, the salt, and the baking soda and stir in the raisins and the caraway seeds. Add the buttermilk and stir the mixture until it forms a dough. Turn the dough out onto a well-floured surface and knead it for 1 minute. Halve the dough, with floured hands shape each half into a round loaf, and transfer the loaves to a lightly greased baking sheet. Cut an X 1/4 inch deep across the tops of the loaves with a sharp knife and bake the loaves in the middle of a preheated 350°F. oven for 45 to 55 minutes, or until a tester comes out clean. Transfer the loaves to racks and let them cool.
GRANDPA MCANDREW'S IRISH SODA BREAD
My mom bugged grandpa for this recipe but he told her he didn't have one. So, when he made the bread one day she captured each ingredient in a bowl and measured it and put it in the bowl he planned to mix it in!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a cast iron skillet.
- In a medium bowl, mix together the flour, baking soda and sugar. Toss the raisins with the flour mixture until coated. Make a well in the center and add the egg, buttermilk, and melted margarine. Stir until all of the dry ingredients are absorbed. Turn the dough out onto a floured surface and knead for a few quick turns just to even out the dough. Handle the dough as little as possible. Pat into a flat circle, and place into the prepared pan.
- Bake the bread for 40 to 45 minutes in the preheated oven, or until the edges are golden.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cast iron skillet or a 9 inch round baking or cake pan.
- In a mixing bowl, combine flour (reserving 1 tablespoon), sugar, baking powder, baking soda, salt, raisins and caraway seeds. In a small bowl, blend eggs, buttermilk and sour cream. Stir the liquid mixture into flour mixture just until flour is moistened. Knead dough in bowl about 10 to 12 strokes. Dough will be sticky. Place the dough in the prepared skillet or pan and pat down. Cut a 4x3/4 inch deep slit in the top of the bread. Dust with reserved flour
- Bake in a preheated 350 degrees F (175 degrees C) oven for 65 to 75 minutes. Let cool and turn bread onto a wire rack.

REAL IRISH SODA BREAD
So many weird soda bread recipes out there. Rest assured that this one is the standard REAL one from Ireland. It is posted on the back of our equivalent of King Arthur flour, Odlums. You can add a handful of sultanas (golden raisins) for a fruit version. Simple, tried, tested and true.

- Sieve flour, salt and soda into a bowl. Add sugar if used.
- Rub in the margarine to resemble breadcrumbs, lifting mixture with fingertips to introduce air to the dough.
- Add sufficient buttermilk and mix to make a soft dough.
- Turn onto a lightly floured board and knead a little.
- Turn the smooth side up and shape into a round. Place the dough on a floured tin.
- Cut a cross over the top.
- Bake in a pre-heated oven, 400°F 200°C Gas 6 for 40-45 minutes.
- When baked the underneath when "tapped" should have a hollow sound.
- Cool on a wire tray. Cover with a tea towel to give a soft crust.

GLUTEN-FREE IRISH SODA BREAD
Searching for recipes for a gluten-free diet can be challenging during the holidays. Here is a recipe for Irish soda bread that I have adapted over time for St. Patrick's Day. The recipe calls for rice and tapioca flour instead of wheat and it still tastes yummy! Good if wrapped and left overnight, but I think it tastes great right out of the oven. Serve with butter or jam.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch round cake pan.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper or silicone baking mat.
