SIMPLE WHOLE ROASTED CHICKEN
The combination of unique ingredients make this chicken dish delicious. It roasts beautifully and is surprisingly fast once it's in the oven. I serve this with the Chimichurri Sauce I found on Allrecipes, and I can't get enough! Plus the leftovers are fantastic for sandwiches, salads, and Mexican dishes.

Steps:
- In a bowl, mix the salt, sugar, cloves, allspice, nutmeg, and cinnamon. Rub the chicken with the mixture. Cover chicken, and place in the refrigerator for 24 hours.
- Preheat oven to 500 degrees F (260 degrees C).
- Stuff the chicken cavity with the garlic. Place the chicken, breast side down, on a rack in a roasting pan.
- Roast 15 minutes in the preheated oven. Reduce heat to 450 degrees F (230 degrees C), and continue roasting 15 minutes. Baste chicken with pan drippings, reduce heat to 425 degrees F (220 degrees C), and continue roasting 30 minutes, to an internal temperature of 180 degrees F (85 degrees C). Let stand 20 minutes before serving.

KITCHEN KOUTURE CREAMY CHICKEN ENCHILADAS

Steps:
- Preheat oven to 400 degrees.
- Saute onion, jalopeno, & garlic in oil till tender.
- In a large bowl, combine chicken, lime juice, spices & worstershire.
- Put bowl mixture into sautee pan and mix well till heated.
- In a heated skillet, fry tortillas lightly in oil to soften.
- Place chicken mixture in a tortilla, sprinkle with cheese.
- In a 9x13 baking dish, roll up enchilada leaving seam side down.
- Sauce:.
- In a small bowl, mix sour cream, chilis, cilantro, lime, and spices.
- Melt butter in a medium saucepan; stir in flour to make a roux; stir and cook until bubbly; gradually whisk in chicken broth then bring to boiling, stirring frequently.
- Remove from heat; stir in sour cream mixture; pour sauce evenly over enchiladas.
- Top with remaining cheese (baking dish may be double-wrapped and frozen at this point) and bake at 400F for 20 minutes until cheese is melted and sauce near edges of baking dish is bubbly.

This recipe is used for my second cookbook in a series of Easy & Frugal recipes by Kitchen Kouture. http://www.food.com/cookbook/kitchen-kouture-quick-easy-chicken-576625. The concept is to cook the chicken on Sunday. Freeze the leftovers of the chicken in seperate zip lock bags. Cook as big or as many chickens as you want, depending on the amount of leftovers you want to freeze. A 4 lb chicken will make 2 meals ( 1.5 lb meat each bag), (2) 4 lb chickens 4 meals, and so on. Just take a ziplock bag out and unthaw when ready to use.

- Recipe 1:.
- Remove neck and giblets.
- Rinse chicken inside and out, pat dry.
- Mix all seasonings together.
- Rub seasonings onto chicken and inside the cavity.
- Stuff cavity with onions.
- Put chicken in a large ziplock bag and refrigerate overnight.
- Cook for 3 hours at 250 degrees.
- Basting every 30 minutes with roasting juices.

- Remove neck and giblets.
- Rinse chicken inside and out, pat dry.
- In a saucepan, simmer all ingredients for 5 minutes.
- Rub poultry seasoning on outside and cavity of chicken.
- Insert lemon into cavity.
- Put chicken into large ziplock bag with marinade and refrigerate overnight.
- Cook for 3 hours at 250 degrees, basting every 30 minutes with roasting juices.
