SWEET AND SPICY MEATLOAF

Sweet and Spicy Meatloaf image

Provided by Food Network

Categories     main-dish

Time 2h30m

Yield 6 servings

Number Of Ingredients 20

2 tablespoons olive oil
2 green bell peppers, diced small
2 red bell peppers, diced small
1 large yellow onion, diced small
3/4 cup panko breadcrumbs
1/2 cup whole milk
2 heads garlic, roasted and mashed into a paste
2 heads garlic, roasted and mashed into a paste
1 cup ketchup
1/4 cup steak sauce
1/4 cup sriracha
1/4 cup maple syrup
1 tablespoon Montreal steak seasoning
2 pounds 80/20 ground beef
1 pound sweet Italian sausage, casings removed
3 eggs, beaten
1 bunch fresh Italian parsley, chopped
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Mashed potatoes, for serving

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
  • Preheat the oven to 350 degrees F.
  • Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
  • In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
  • In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
  • When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.

SAVORY BUTTERMILK MEATLOAF

Savory Buttermilk Meatloaf image

This meatloaf recipe is very flavorful, and as the proverbial description goes, 'melts in your mouth.' As far as vegetables, I only used onions, but their sweetness, along with the simple brown sugar glaze, were a great counterpoint to the others flavors.

Provided by Chef John

Categories     Main Dish Recipes     Meatloaf Recipes

Time 2h

Yield 6

Number Of Ingredients 16

2 tablespoons butter
1 yellow onion, diced
2 ½ pounds ground chuck
1 cup dry bread crumbs
¾ cup buttermilk
½ cup ketchup
2 eggs, beaten
1 tablespoon Worcestershire sauce
2 ½ teaspoons salt
1 teaspoon ground black pepper
1 teaspoon hot sauce
½ teaspoon dried tarragon
½ teaspoon Italian seasoning
¼ cup brown sugar
1 tablespoon Dijon mustard
1 teaspoon cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat.
  • Melt butter in a skillet over medium-high heat. Saute onion in hot butter until soft and translucent, 6 to 7 minutes. Cool to room temperature.
  • Combine cooled onion, beef chuck, bread crumbs, buttermilk, ketchup, eggs, Worcestershire sauce, salt, black pepper, hot sauce, tarragon, and Italian seasoning in a bowl; mix together with a fork and let sit until breadcrumbs absorb moisture, about 10 minutes.
  • Turn meatloaf mixture out into the center of the prepared baking sheet and form into a 9x5-inch loaf.
  • Bake in the preheated oven for 45 minutes. While meatloaf is baking, whisk brown sugar, mustard, and cider vinegar together in a small bowl. Spread brown sugar glaze over the top of the meatloaf and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

MEATLOAF BARBECUE BACON CHEESE BURGER RECIPE - (4.7/5)

Meatloaf Barbecue Bacon Cheese Burger Recipe - (4.7/5) image

Provided by Beefman-2

Number Of Ingredients 12

2 pounds lean ground beef, or a mix of ground feed and your choice of sausage
1 1/2 cup cheddar cheese, divided
1/2 cup Italian bread crumbs, or Panko crumbs
1 1/2 cup Bullseye barbecue sauce, divided
1 teaspoon ground mustard
1 teaspoon onion powder
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 medium red onion, diced
2 eggs, beaten
6 to 8 slices bacon

Steps:

  • Crack the eggs into a bowl and mix them thoroughly. Add the remaining ingredients into a separate large bowl, reserving 1/2 cup of the barbecue sauce, 1/2 cup cheese and the bacon. Add the egg mixture to the meat mixture and mix thoroughly. Place the meatloaf mixture into a large baking dish and form into a loaf. Pour the remaining barbecue sauce on top, sides and end of meatloaf. Sprinkle the cheese on top of the barbecue sauce. Place the bacon strips across the width of the meatloaf, covering it completely. It is okay if some of the bacon overlaps. Place in a preheated 375°F oven for 60 - 75 minutes, or until bacon is crispy and meatloaf is cooked through. Remove from oven and let the meatloaf rest for 10 minutes before slicing and serving.

SWEET & SPICY GLAZED BUTTERMILK MEATLOAF

Sweet & Spicy Glazed Buttermilk Meatloaf image

Panko bread crumbs really make the difference here. When the Panko is soaked with the buttermilk, it forms a squishy texture that is different from regular bread crumbs. The meatloaf will have a light consistency while, at the same time, a rich flavor from the buttermilk. Panko is Japanese breadcrumbs and available in most grocery stores. Note: Leftovers make great meatloaf sandwiches.

SWEET AND SPICY MEATLOAF

Sweet and Spicy Meatloaf image

I first had this at a church supper. It was delicious and asked for the recipe. I was amazed to see that there were not many ingredients in it. I now make this one and alternate it with my regular one Recipe #102545. The Sweet & Spicy Meatloaf has only a few ingredients and is delicious, and my regular one has more in it, but is delicious too. This has a nice sauce on top. I always thought that if there were more ingredients in a meatloaf, it would taste better, but not necessarily so. This is very, very tasty!
