BEST WHITE ICING EVER
This icing recipe is #1! It's quick and easy to make, bright white for cake decorating, and you can easily change it's consistency! This is the most important icing recipe you'll ever have. It's so basic, it makes the hassle of cake decorating so much easier! If you wish, use half shortening and half unsalted butter.

Steps:
- In a large bowl, combine sugar, shortening, water and vanilla. Beat on low speed to combine, then beat on medium speed for a full five minutes. It won't look like Icing at first, but keep the mixer going for a full five minutes, and then you're done!
- Note: If you're not using this for decorating, but just for icing the cake, thin the icing by adding 3 tbs. of corn syrup, or water to the icing.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
- In a medium bowl, cream together the butter and sugar until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon and ginger; stir into the molasses mixture alternately with the milk. Finally, mix in the chocolate chips and raisins. Drop by rounded spoonfuls onto the prepared cookie sheets.
- Bake for 10 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

CRYBABY COOKIES

- Preheat oven to 350 degrees. Line baking sheets with Silpats. Into a medium bowl, sift together flour, baking powder, baking soda, cinnamon, salt, ginger, allspice, and nutmeg; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar until light and fluffy. With machine running, gradually add molasses and egg. Add dry ingredients, alternating with milk, starting and ending with the dry ingredients; scrape down bowl as necessary. Stir in coconut, walnuts, and raisins.
- Drop by tablespoons onto prepared baking sheets, leaving 2 inches between cookies. Bake until golden brown, 15 minutes. Remove from oven, and let cool on pans until almost, but not completely cool, about 5 minutes.
- Dip tops of cookies into icing, and decorate with sprinkles or chopped nuts.
CRY BABY COOKIES
These cookies are from 1937. They have been in my "special" cook-book for years, but I don't know where it came from. They are really good..the true old-fashioned kind! I usually get about 3 doz., but that depends on how big of a spoon you use to drop them on the cookie-sheet.

- In a seperate bowl, sift flour, cinnamon, ginger, salt and.
- soda together.
- Stir in raisins and nuts.
- Alternately add flour mixture and coffee, beating well after each addition.
- Drop from a teaspoon onto greased cookie sheets.
- Bake in a moderate oven (350 F) until done, about 7-10 minute.
CRY BABY MOLASSES COOKIES
Again another one of my Grandma Clark's recipes our family LOVES. It is at almost every family gathering. I have used 'store bought' icing before and it works OK but I prefer to make my own powdered sugar icing. This is a LARGE recipe and my servings are a guess as my family eats the cookies before I can count. I often half this recipe to make a more manageable number of cookies.

- Drop from a spoon onto pan.
- Bake at 350 F until lightly browned at edges (I believe 8-10 minutes but WATCH).
- Remove to wire cooling rack (if needed let sit on pan 1-2 minutes).
- Ice while hot/warm with powdered sugar icing.

- Preheat oven to 350 degrees. Cream together 1 cup butter and sugar. Add eggs and 3 tsp. vanilla and mix well. Combine flour, cocoa, salt, baking powder and baking soda. Add flour mixture to creamed mixture until completely incorporated. Roll into balls and place on parchment paper covered cookie sheet. Flatten balls with palm of hand. Bake for 10-12 minutes. Cool. Mix together cream cheese, 1/2 stick butter, and 1/2 tsp. vanilla. Add powdered sugar to spreading consistency. Ice cooled cookies and top each with a walnut half. Makes 6 dozen.

This was my Grandmother's recipe. It is a molasses cookie with coffee in it.

- Preheat the oven to 350 degrees F (175 degrees C).
- Dissolve the baking soda in the coffee.
- Cream the shortening with the white sugar. Beat in the eggs, coffee mixture, molasses, vinegar, 1/2 cup of the cocoa powder, spices, and flour. Dough should be thick and slightly sticky. Drop rounded spoonfuls of dough onto a greased cookie sheet.
- Bake for 10 to 12 minutes. Let cookies cool, then glaze.
- To Make Glaze: Combine the confectioner's sugar, 1/4 cup cocoa, and enough water to achieve a desired spreading consistency. Beat until smooth.
