4 -5 large red potatoes
3 slices bacon, chopped
1 small onion, finely chopped
1 tablespoon all-purpose flour
1 tablespoon sugar
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup white wine vinegar
1/2 cup beef broth
1/2 teaspoon celery seed
4 knockwurst or 4 bratwursts
2 tablespoons parsley, chopped

Steps:

  • Cover potatoes with water in a medium saucepan. Bring to boil; simmer until tender, 25 to 30 minutes. Drain, cool slightly, and cut into slices. Place slices into a large heatproof bowl.
  • Fry the bacon in a medium saucepan over medium heat until almost crisp. Add the onion and cook until translucent, 5 to 10 minutes. Mix in the flour, sugar, mustard, salt and pepper. Stir in the vinegar, broth, and celery seeds. Cook, stirring often, until thickened.
  • Meanwhile, heat the knockwurst according to package directions; cut each into 6 to 8 diagonal slices. Add the knockwurst to the potatoes. Pour the sauce over and toss to coat. Sprinkle with the parsley and serve warm.

Simple meal we like to eat around Oktoberfest time. Serve with mashed or boiled potatoes, good hot German mustard, dark rye bread and beer (cider for the kids).

1 lb sauerkraut
caraway seed (to taste, I use 1/2 to 1 tsp)
1/2 teaspoon brown sugar (optional)
1 lb knackwurst of frankfurter

Steps:

  • Put sauerkraut in a large saucepan (add a little liquid if necessary - water, white wine, broth or beer).
  • Mix in caraway seed and brown sugar (if using).
  • Put knackwurst on top.
  • Cover and cook on low heat 30-35 minutes.

1 pound sauerkraut (1 can), drained
1 onion, sliced thin
1 tablespoon butter
1/2 cup dry white wine
1 cup chicken stock
1 tablespoon brown sugar
1 tablespoon white wine vinegar
Coarse salt and freshly ground pepper to taste
8 bratwurst sausages
12 small red-skinned potatoes

Steps:

  • Simmer the sauerkraut for 10 minutes in boiling salted water. Drain.
  • Meanwhile, in a large skillet, soften the onions in the butter, browning lightly. Add the sauerkraut, wine, stock, sugar, vinegar, salt and pepper. Bring to boil, turn down, cover and simmer, stirring occasionally, for 30 minutes.
  • Meanwhile, simmer the bratwurst in water to cover for 20 minutes.
  • Add the potatoes to the sauerkraut in the skillet and cook, covered, for 15 to 20 minutes or until tender.
  • While the potatoes are cooking, drain the bratwurst and brown lightly on all sides under a hot broiler.
  • To serve, put the sauerkraut and potatoes on a heated platter and arrange the bratwurst over the top.

1 tablespoon canola or vegetable oil
8 ounces bacon, cut into thirds
4 cloves garlic, chopped
1 large or 2 medium onions, chopped
1 cup tomato sauce
1/2 cup chicken stock
1/4 to 1/3 cup dark brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons brown mustard, plus more to serve
2 tablespoons cider vinegar
Black pepper
4 cups Cooked White Beans, recipe follows
6 knockwurst
Chopped scallions, for garnish
1 1/2 cups white Navy or white French dry beans
1 large bay leaf
Salt

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the oil in pan over medium heat, then add the bacon and cook to render the fat, but remove before crisp, 2 to 3 minutes. Place the rendered bacon on paper towels or a kitchen towel to drain.
  • Add the garlic and onions to the same pan and stir. Cook to soften, 4 to 5 minutes, then add the tomato sauce, stock, sugar, Worcestershire, mustard and vinegar. Season with black pepper and bring to a simmer. Add the beans and stir, then transfer to a casserole dish and arrange the bacon on top. Bake the beans for 2 hours.
  • Preheat the griddle. Halve the knockwurst and butterfly the pieces by cutting across but not all the way through. You will end up with 12 split, halved dogs. Grill to crisp on both sides. Arrange the knockwurst in the casserole dish.
  • Cool, cover and store for a make-ahead meal. Reheat in a moderate oven. Garnish with scallions and sever with extra mustard.
  • Soak the beans in water overnight. Rinse and pick through beans for stones or imperfect beans. Place in a pot and cover with fresh water, then add the bay leaf and bring to a boil. Season with salt, and cook beans at rapid simmer until tender, 35 to 40 minutes. Drain and reserve.

Takes a bit more time than just opening up a briny can of kraut and heating thru on the stove ... but it is SO worth it. Add some nicely browned Bratwurst, some applesauce (Apfelmousse), some fries...

GERMAN SAUERKRAUT:
3 Tbsp butter
1 medium granny smith apple
1 small onion, slivered
2 c cold-pack sauerkraut - good quality, not canned
1/4 c light brown sugar
1/2 c light brown beer
1/8 tsp black pepper
1/2 tsp caraway seed, optional
BRATWURST:
6 good quality bratwurst
1 1/2 c water
2 Tbsp butter
BACON ONION POTATOES
3 slice bacon, or 2 tbsp. of real bacon bits
1/4 c onions, diced or slivered
1/2 c balsamic vinaigrette
4 small potatoes, sliced 1/4" thick
3 Tbsp brown sugar
1/2 tsp seasoned salt
1/4 tsp pepper

Steps:

  • 1. Melt 3 T. butter in large skillet. Over medium heat, brown the apples and onions in the melted butter, until they are nicely caramelized and tender, stirring constantly.
  • 2. Put WELL-RINSED AND DRAINED sauerkraut in the pan with the apples and onions. Sprinkle the brown sugar over all, and toss well in the browned butter that's in the pan.Turn to LOW, add the beer, black pepper and [optional] caraway seed. Cover. Cook the sauerkraut/apple/onion/brown sugar/beer mixture over very low heat, stirring occasionally, until it's caramelized and a nice, golden brown color. I have actually let mine cook for as much as a couple of hours, on VERY LOW heat. Stir occasionally, to bring the browned stuff up from the bottom and give the rest of it a chance to brown. Don't let it burn, but a very slight scorch is a good thing. When it's browned to your satisfaction, slide it off the heat,and let it sit.
  • 3. ABout 1/2 hour before you want to eat, prepare the bratwurst: In a large skillet, place the bratwurst, water, and 2 T. of butter. Bring to a boil, then turn heat down to med., and cook 10 - 12 minutes, turning occasionally, until water evaporates and bratwurst begin to brown. The water will cook the brats through, and then all boil out, but the butter will cling to the brat skins, and brown them nicely. Turn, as needed, to keep them from burning on one side.
  • 4. While brats are simmering/browning, do the Bacon Onion Potatoes: preheat a large saute' pan on medium, 2 - 3 minutes. Cook the bacon until crispy, and chop it into small pieces. Pour off most of bacon grease, but do not wipe out pan. Place bacon pieces, onions and vinaigrette in pan and cook 5 - 6 minutes, stirring frequently, until onions are caramelized. Add remaining ingredients, cover and simmer on LOW until potatoes are cooked through, approx. 25 minutes. Keep covered so the won't cook dry. You can add a splash of beer, if necessary, and if desired, to keep potatoes moist and to "steam" cook them. Stir occasionally, gently, to keep from breaking potatoes apart.
  • 5. IF YOU DESIRE: after the brats are nicely browned, you can put them IN with the kraut, and smother them together for awhile, to let flavors blend, OR serve separately.
  • 6. Serve with dark brown bread and butter, some applesauce, and dark brown mustard. A real authentic German meal, as prepared in the Hessen style. The photos are mine, just as I made it two nights ago. It was fabulous!

1 (32 ounce) package sauerkraut, drained
5 large red potatoes, sliced
1 1/2 lbs knockwurst, chunked
caraway seed, to taste
1/4 cup brown sugar (to 1/2 cup)
1 cup chicken broth
5 large granny smith apples, cored, diced

Steps:

  • Layer in either a Dutch oven for stove top cooking, or in a crockpot.
  • Begin with potatoes, then sauerkraut, then a sprinkling of caraway seeds and half the brown sugar, then the apples, then the knockwurst, then the chicken broth, then the rest of the brown sugar.
  • Cover and cook on low for stove top, for 2 hours.
  • If using the crockpot, cover and cook on LOW for 7 hours.
