Perfectly soft, flaky, mile-high Knott's Berry Farm Buttermilk Biscuits copycat recipe!

2 cups flour
2 tablespoons baking powder
½ teaspoon salt
1 teaspoon shortening
1 cup + 2 tablespoons buttermilk
⅛ teaspoon baking soda
½ cup vegetable oil
butter or jam (for serving (see note))

Steps:

  • Preheat oven to 450 degrees and grease a 2 inch deep 9x13-inch baking pan.
  • In a medium bowl whisk flour, baking powder, and salt. Add shortening and mix well. (You can use a hand mixer for this or you can transfer to a food processor to blend in the shortening.)
  • Add baking soda to buttermilk. Pour into flour mixture and blend well.
  • Transfer dough to a well-floured surface. Sprinkle dough with flour and knead a few times but do not over work the dough.
  • Roll dough out 1/2 inch thick. Use a 2-inch round cookie cutter to cut dough into as many circles as possible. (You could also use a jar lid or drinking glass to cut circles).
  • Dip the biscuits in the vegetable oil being sure to coat all sides, and place side by side in baking pan. (They should be touching each other).
  • Bake for 8-12 minutes or until golden brown. Serve hot with butter and jam.

Knotts Berry Farm Cookies, or thumbprint cookies, are one of those desserts that you can never go wrong with. Everybody loves them, making them one of the best cookie recipes!

Number Of Ingredients 5

1/2 cup butter (softened)
1/3 cup sugar
1/4 tsp. almond extract
1 cup bread flour (Or all-purpose works just as well. Bread flour will just make your cookies more chewy.)
1/4 cup raspberry jam (Or other jam of your liking)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Combine butter, sugar, almond extract, and flour in mixer bowl.
  • Mix until well blended and forms a ball. (Mine was kind of dry and crumbly, so I added about a Tbsp. of milk.)
  • Roll into 3/4 inch balls and place on an ungreased cookie sheet.
  • Make an indentation on top of each cookie and fill with 1/2 tsp. of jam.
  • Bake 9 minutes.
  • Let cool and enjoy.

1 quart oil

Steps:

  • Soak chicken for at least 1 hour and pat dry.
  • Coat each piece of chicken with flour and shake off any excess flour.
  • Bring oil up to temp in an iron skillet or large frying pan and carefully drop in chicken pieces.
  • Cover and fry for 45 minutes or until golden brown and juices run clear.
  • Remove chicken when done and drain on paper towels.
