BEEF AND BROCCOLI STIR-FRY
Beef and broccoli stir-fry is an incredible dish. The florets of the broccoli soak up the stir-fry sauce, making it exceptionally delicious. Broccoli is the perfect match with beef as they are not only tasty but is a complete meal with protein and fiber.

Steps:
- Cut the beef into thin slices.
- Marinate the beef with (A) for 15 minutes.
- Cut the broccoli into florets. Blanch the broccoli in boiling water for two minutes. Drained.
- Combine ingredients in (B) to prepare the stir-fry sauce.
- Pan-fry the beef, single layer over medium heat until both sides turn brown. Remove the beef from the pan.
- Saute the garlic and ginger.
- Then add the broccoli to stir-fry until tender-crisp. Return the beef to the pan.
- Add the stir-fry sauce.
- Thicken the sauce with cornstarch slurry. Serve.

BEEF AND BROCCOLI STIR-FRY
A stir-fry like this one with only one superstar vegetable requires very little prep time, especially when you use prechopped broccoli florets.

- 1. Cook rice according to package directions, omitting salt.
- 2. Meanwhile, combine 1 tablespoon sherry, 1 tablespoon soy sauce, sugar, and beef. Stir together broth, cornstarch, hoisin sauce, Sriracha, and remaining 1 tablespoon sherry and 1 tablespoon soy sauce; set aside.
- 3. Heat 1 tablespoon oil in a large skillet over medium-high. Add beef mixture; sauté 3 minutes or until browned. Remove beef from pan. Add remaining 1 tablespoon oil to pan. Add ginger and garlic; cook 30 seconds, stirring constantly. Add broccoli and 1/4 cup water; cook 1 minute. Add scallions; cook 1 minute, stirring constantly. Add broth mixture and beef mixture; cook 2 minutes or until beef is thoroughly heated and sauce is slightly thick. Serve beef mixture over rice.

- Combine vegetables and 3 tablespoons water in large nonstick skillet. Cover and cook over medium-high heat 4 minutes or until crisp-tender. Remove and drain.

KONA K'S BEEF WITH BROCCOLI (& OTHER VEGGIES!) STIRFRY
Very easy & versatile recipe that I came up with one night when I was craving Chinese style beef with broccoli. I just threw in whatever veggies I could find in the fridge, so feel free to modify the recipe with the vegetables you have on hand. Also, the Mr. & I are garlic lovers, so please feel free to adjust the garlic according to your own personal tastes. You can adjust the amount of red pepper flakes depending on how much spice you like.

- To make the sauce: combine the flour, beef broth, soy sauce, oyster sauce, red pepper flakes & brown sugar in a small bowl. Whisk until well-mixed. Set aside.
- Heat vegetable oil in a large pan. Add the garlic once the oil is hot, and let cook until golden-brown.
- Add the beef and stir-fry for about 3-4 minutes, or until the beef is halfway cooked.
- Add the vegetables and stir-fry for about 3-4 minutes.
- Add the sauce and bring to a boil. Reduce heat and allow it to simmer for about 5 minutes, or until the sauce has slightly thickened.
- Sprinkle with sesame seeds right before serving. I like to serve with white rice.

- Prepare the beef:
- In a small bowl stir together the soy sauce, the sugar, and the salt, add the beef, and let it marinate for 20 minutes.
- Make the sauce while the beef is marinating:
- In a small bowl dissolve the cornstarch in the soy sauce and stir in the Sherry, the broth, the sugar, and the sesame oil.
- Heat a wok or large heavy skillet over high heat until it is hot, add 2 tablespoons of the vegetable oil, and heat it until it just begins to smoke. Stir-fry the beef in the oil in batches for 1 minute, or until it is no longer pink, and transfer it as it is cooked with a slotted spoon to a plate. Add the remaining 1 tablespoon vegetable oil to the wok, heat it until it is hot but not smoking, and in the oil stir-fry the gingerroot, the garlic, and the chili for 30 seconds, or until the mixture is fragrant. Add the broccoli and stir-fry the mixture for 1 minute. Add 1/3 cup water and steam the broccoli, covered, for 1 1/2 to 2 minutes, or until it is crisp-tender. Stir the sauce, add it to the wok with the beef and any juices that have accumulated on the plate, and cook the mixture, stirring, for 2 minutes, or until the sauce is thickened and the beef is heated through. Transfer the mixture to a heated platter and serve it with the rice.
KOREAN VEGETABLE-BEEF STIR FRY
A mildly spicy stir-fry. Serve over hot rice. As suggested by several reviewers, the sauce can be doubled. Just double the marinade ingredients and the water and cornstarch.

- Slice beef across the grain into bite-size strips. (If beef is partially frozen it is easier to slice).
- Combine green onions, soy sauce, garlic, sesame oil, sesame seed, red pepper flakes, sugar and pepper; add meat and marinate 30 minutes at room temperature.
- Drain meat, reserving marinade.
- Dissolve cornstarch in water and add to reserved marinade, mixing well.
- Preheat wok or large skillet over high heat; add 1 tablespoon oil, then add carrots and stir fry 3 minutes. Add broccoli and cauliflower slices and stir-fry 2 minutes (until vegetables are crisp-tender). Remove vegetables and keep warm.
- Add remaining oil to pan.
- Add half the beef to hot pan and stir-fry 2-3 minutes (until brown). Remove beef and stir-fry remaining meat. Return all meat to pan.
- Stir marinade a little and pour into skillet or wok. Cook and stir until thickened and bubbly. Stir in the vegies. Cover and cook 1 minute.
- Serve over hot rice.
