KOREAN BBQ PULLED PORK SANDWICH WITH CILANTRO-LIME SLAW READY IN 15 MINUTES
Korean food is delicious, Korean BBQ is the bomb, and now Korean pulled pork BBQ? With some tart slaw? Sorry, these are all ours now, we're not sharing. Tip: Easier way to mince cilantro? Gather them all in one hand and lay on the cutting board. Use your knife in rocking motion to cut, then turn 90 degrees and repeat until the herbs are properly minced!

- Before You Cook Preheat the broiler If using any fresh produce, thoroughly rinse and pat dry Prepare a baking sheet with foil Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Make the Slaw and Prepare Ingredients Mince cilantro (no need to stem).Halve and juice lime.In a mixing bowl, combine slaw mix, cilantro, mayonnaise, 2 tsp. lime juice, 1 tsp. olive oil, and a pinch of salt and pepper. Set aside.Coarsely chop pulled pork. Excess pork fat will render while cooking and add flavor. 2 Start the Filling Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.Add onion to hot pan and stir occasionally until softened and lightly browned, 3-5 minutes. 3 Finish the FIlling Add pork, BBQ sauce, 2 Tbsp. water, and Sriracha (to taste) to pan. Stir occasionally, breaking up pork with a spoon, unti pork is warmed through and coated, 1-2 minutes. 4 Toast Rolls and Finish Dish Open rolls. Place on prepared baking sheet, open side up, and put under hot broiler until lightly toasted, 1-2 minutes.Keep an eye on oven as rolls may burn easily under broiler.Plate dish as pictured on front of card, topping bottom halves of rolls with pork and onions, crispy rice noodles, and top halves of rolls. - Put the pork in the slow cooker, pour 1/2 cup of the gochujang bbq sauce over it and cook on low heat for 8 hours.
- Remove the pork from the slow cooker and let it cool.
- Meanwhile, skim the fat from the juices and mix as much of the juices as you want into the remaining gochujang bbq sauce. Simmer in a sauce pan to reduce if necessary.
- Shred the pork with a pair of forks and mix in gochujang bbq sauce and juice mixture.
- Assemble sandwiches and enjoy.

- Slice the pork into extremely thin slices, then transfer to a large bowl. This works best when the pork is super cold or partially frozen.
- Add in all of the ingredients besides the canola oil, then mix until the pork and the vegetables are evenly coated with the marinade.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Heat the oil in a pan over high heat, add pork, being sure not to crowd the pan, stir-fry the pork in batches until slightly crispy on the edges, about 3-4 minutes. If you're using pork belly, cook for a bit longer, around 6-7 minutes.
- Sprinkle a bit of sesame seeds on top, then serve with rice!

- In a small bowl, whisk the first 7 ingredients until blended. Place roast in a 4- or 5-qt. slow cooker. Pour sauce mixture over top. Cook, covered, on low until pork is tender, 7-9 hours., Remove roast; cool slightly. Skim fat from cooking juices. Coarsely shred pork with 2 forks. Return pork to slow cooker; heat through. DIRTY SOUTH KOREAN PULLED PORK SANDWICH

- For the pulled pork: Rub the pork butt with the salt and brown sugar in a shallow pan. Cover and refrigerate for at least 24 hours.
- Preheat the oven to 225 degrees F. Pour out and discard the excess liquid from the pan. Roast the pork, uncovered, until the internal temperature reaches 180 degree F, about 6 hours.
- While the pork is roasting, make the quick pickles, kimchi slaw and Korean BBQ sauce.
- For the quick pickles: Cut the cucumber into 1/8-inch-thick slices and mix with the salt, sugar and chile flakes in a bowl. Refrigerate until ready to use
- For the kimchi slaw: Roughly chop the kimchi and mix with the mayonnaise in a bowl. Refrigerate until ready to use.
- For the Korean BBQ sauce: Blend the garlic, ginger, soy sauce, gochujang, brown sugar, vinegar, sesame oil, black pepper, red pepper flakes and onions together in a food processor until well combined.
- Remove the pork from the oven and pull into shreds with a fork while still hot. Put the pork in a large bowl, pour over the Korean BBQ sauce and mix well.
- To prepare the sandwiches: Put some shredded pork on a roll, top with some kimchi slaw and finish with some quick pickles. Repeat with the remaining rolls and serve.
- Cut the cabbage into 1-inch slices, put in a large container, sprinkle with the salt and add about 12 cups (3 quarts) of cold water so the cabbage is just covered. Cover with plastic wrap and refrigerate for 24 hours.
- Drain the cabbage and mix with the red pepper powder, fish sauce, ginger, garlic and sugar. Store in an airtight mason jar.
BBQ PULLED PORK SANDWICH

- Combine coleslaw mix, pepperoncini peppers, red onion, mayonnaise, lemon juice, red wine vinegar, 1 tablespoon granulated garlic, Dijon mustard, white sugar, salt, 1/2 teaspoon granulated onion, and lemon pepper in a large bowl. Toss until well combined. Cover and refrigerate until ready to use.
- Preheat oven to 300 degrees F (150 degrees C).
- Combine kosher salt, black pepper, 2 tablespoons granulated garlic, 2 tablespoons granulated onion, 2 tablespoons brown sugar, 1 tablespoon cayenne pepper, nutmeg, allspice, and cinnamon together in a bowl.
- Place pork shoulder in a large roasting pan. Rub with 1/4 cup molasses on all sides and between any crevices. Sprinkle with kosher salt seasoning mixture and rub over all sides.
- Cover pan tightly with heavy-duty aluminum foil and roast pork in the preheated oven until tender and a thermometer inserted reaches 200 degrees F (95 degrees C), 3 to 4 hours. Transfer pork to a cutting board, reserving pan juice, and allow to cool slightly before pulling. Using two forks, shred the pork shoulder into bite-size pieces. Transfer meat to a large bowl and toss with some of the pan juices to keep it moist.
- Pour reserved pan juices into a large pot over medium heat. Add barbeque sauce, coffee, 1 tablespoon molasses, 1 tablespoon brown sugar, dry mustard, and a pinch of cayenne pepper. Bring to a simmer, reduce heat, and cook for 15 minutes. Add shredded pork and stir until warm, about 5 minutes.
- Fill each hoagie bun with pork mixture. Top with 1 to 2 cups coleslaw. Garnish with 1 tablespoon onion and 1 tablespoon jalapeno.
