AHI TUNA TARTARE WITH HERBED BROWN BUTTER AND FRESH APPLES
This is a really cool first course for any dinner party or special date night dinner. You have to find the freshest Ahi tuna.

- In a mixing bowl, add the tuna, shallot, ginger, lemon zest, lemon juice, olive oil, sesame oil, salt, and pepper, and toss gently. Add the diced Granny smith apples and toss to coat.
- In a small saute pan over high heat, melt the butter and cook it until it turns a deep rich brown. As soon as the butter turns brown, stir in the parsley, tarragon, and chives and remove from the heat. Spoon the butter over the tuna mixture and serve immediately with 1 apple slice on the side.
ROASTED APPLE BACON AHI TUNA
Steps:
- Take the four tuna fillets and wrap two pieces of bacon around the fillet. Place in refrigerator for later use. In a small bowl combine the red pepper, garlic, parlsey, shallot, vinegar and half of the oil and mix together with a whisk. Hold for later use. In a hot pan place a teaspoon of oil in a medium pan. Place the tuna steaks with the bacon crease down first. When the tuna and bacon are brown on one side turn them over and place into a 400 degree oven for another 5 minutes. In another small bowl toss watercress, the remaining oil, orange segments, avocado and salt and pepper. Toss the ingredients and divide into four seperat plates. Remove the tuna from the pan and cut diagonally with a sharp knife. Place the tuna over the watercress salad and drizzle roasted pepper relish over the tuna. Season with salt and pepper.
BAKED APPLES AND BACON
Steps:
- Preheat the oven to 375 degrees F.
- Arrange the bacon on a sheet tray, sprinkle with some of the thyme and bake until crispy, about 12 to 15 minutes.
- Slice the apples horizontally to create 5 to 6 cross sections of the apple. On a separate sheet tray lined with a silpat or parchment paper lay the apples out in a single layer and drizzle with a little olive oil. Sprinkle a little sugar and thyme on each slice then bake in the oven until the apples begin to dehydrate and sugar has melted and caramelized, about 8 to 10 minutes
- To serve, lay the apple and bacon slices, alternating, in a long overlapping line on a serving platter. Or, break the bacon pieces in half and reassemble the apple slices back together, placing crispy bacon pieces in between each slice. Garnish with arugula and serve.
BACON-WRAPPED TUNA STEAKS
This recipe came from my husband's cousin, who fishes for tuna off the Oregon coast each summer. The bacon helps hold the tuna together on the grill, and adds a nice moistness to the lean albacore meat. You could try it with other types of tuna, but I've only ever used albacore.

- Take as many bacon strips as you have tuna steaks, and lay bacon on a paper-towel lined plate. Microwave 2-3 minutes or until bacon is about half-cooked but still very pliable.
- Preheat outdoor grill to medium-high.
- Meanwhile, wrap a slice of cooled bacon around the perimeter of each tuna steak and secure to itself and to the fish with a toothpick or two. Depending on the size of your steaks, you might have to squeeze a bit to get the bacon to reach around, but a snug fit will hold the fish together when it shrinks during cooking.
- Sprinkle both surfaces of tuna steaks with garlic powder & seasoned salt. Spray both sides lightly with cooking spray to prevent sticking to grill. (You can also use a fish grilling grid or basket).
- Grill until fish is lightly browned and bacon is starting to crisp, about 5-7 minutes per side for well-done (I don't like any pink in my fish).
- Note: I use the low-sodium Kirkland brand bacon that Costco sells, and Mazola Pure olive oil spray.
BACON APPLES
I cooked apples that I stuffed with brown sugar and cinnamon over a campfire as a dessert for my family when we went camping. In the morning we had bacon with our breakfasts and the kids marinated the bacon in the leftover apples! The bacon was good but we ate the apples after and they where surprisingly good!

- Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire. Alternatively, preheat an outdoor grill.
- Place apples in a loaf pan. Combine brown sugar and cinnamon in a bowl; spoon into each apple.
- Place the loaf pan into the campfire or on the grill; cook for about 3 minutes. Carefully remove the pan from the fire and sprinkle bacon over apples. Place in the fire or on the grill for about 5 minutes more.

- With a sharp knife, cut the tuna into 4 large pieces for appetizer portion, 2 large pieces for dinner portion. Use your judgment on what shape you want to cut your tuna because not all tuna is the same size or shape. However, the shape should somewhat resemble a miniature brick.
- Season the tuna pieces with salt and pepper. Coat lightly on all sides with bread crumbs. Heat olive oil in a large heavy skillet over high heat. The pan should be as hot as you can get it. Place the tuna in the pan, and sear on each side for about 45 seconds for small portions, or 1 minute for large. Remove from pan. The tuna will be very rare.
- Slice each 'brick' into 1/4 inch thick slices, and fan out on a serving plate. Enjoy plain, or with the condiments of your choice.

- Spray a large skillet with cooking spray; heat over medium-high heat. Add tuna steaks to the hot skillet and sear 90 seconds on each side. Remove tuna steaks to a plate.

- Melt the butter in a bowl or plate large enough to hold the tuna steak Place tuna steak in bowl, coating both sides with butter Sprinkle half of cajun seasoning on each side of steak For an extra spicy treat, add black pepper.
- I recommend cooking this outdoors on your grill.
- Cooking indoors will generate excessive smoke.
- Heat your grill to the highest possible temperature Turn off burners (to avoid flame up) then immediately add steak Cook for 2 minutes on first side Flip and cook on other side for 1 minute.
- (The steak will be very pink inside - yum!) Remove and serve immediately as it will cool quickly.
- I recommend serving over garlic mashed potatoes with either wasabi mustard or wasabi mustard/mayo mix.

- Choose fresh or frozen tuna steaks. Ahi tuna is sold in form of large steaks or fillets that can be cooked in a similar fashion to beef steaks. Look for deep red tuna steaks with firm flesh. Avoid steaks that have a rainbow sheen or look dry, also avoid buying fish that looks mottled or pale in color. Buy a six-ounce steak per serving you need. If you're using frozen tuna steak, thaw it completely and put in the refrigerator before using. Fresh tuna is in season from late spring to early fall. If you're choosing fresh tuna, it's best to get it while it's in season. Frozen tuna is available all year round. Ahi or yellowfin tuna from the United States or Canada is the best choice, since it has relatively low levels of mercury and is not in danger of being overfished. Bluefin tuna should be avoided, as the mercury levels are higher and it is being over-fished across the world.
- Make a spice mixture for the tuna. Seared tuna is frequently coated with spices that complement the tuna's meaty flavour. You can use a steak rub or any other type of spice mix that includes ingredients like garlic powder, pepper and dried herbs. Try making your own spice mix by combining the following ingredients in a bowl (makes enough to coat one six-ounce steak): 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon red pepper flakes 1/4 teaspoon garlic powder 1/4 teaspoon dried basil 1/4 teaspoon dried oregano
- Heat your skillet or grill. Tuna steaks and fillets are easy to sear on either a grill or stove top. The key is to fully heat the cooking implement you're using before adding the tuna. This will ensure that the tuna cooks evenly and attains a good crunchy sear. If you're using the stove top, heat a cast iron skillet or other heavy skillet over medium high heat. Add a tablespoon of peanut oil or canola oil and heat it until the oil just begins to smoke. If you're using a grill, light the charcoal at least half an hour before you plan to cook the tuna. that way it will have plenty of time to get nice and hot before you add the tuna.
- Coat the tuna with your spice mixture. Each six-ounce steak or fillet will need approximately one to two tablespoons of seasoning. Pat the seasoning into the tuna on all sides so that it's completely coated. After you've coated the steak, allow it to sit out and come to room temperature before you place it on the grill or skillet.
