PERFECT ICED TEA

- Hot-Brewed:
- Bring 8 cups water to a simmer; remove from the heat and add 3 tablespoons loose tea or 6 tea bags. Let steep about 4 minutes, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags. Let cool, then transfer to a pitcher, cover and refrigerate.
- Cold-Brewed:
- Combine 8 cups cold water and 6 tablespoons loose tea or 10 tea bags in a pitcher. Cover and refrigerate 15 to 36 hours, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags.
- Sweet Teas:
- Combine 3/4 cup each sugar and water in a saucepan and add 1 infuser, if desired. Bring to a simmer over medium heat, stirring until the sugar dissolves, then remove from the heat and let cool. Strain the infused syrup through a fine-mesh sieve (you'll get about 1 cup).
- Orange Add 6 strips zest
- Blackberries 1 cup
- Cinnamon 2 sticks
- Lavender 3 tablespoons dried
- Vanilla 1 halved bean
- Mint 3 sprigs
- Ginger 1 cup sliced
- Lemon 8 strips zest
- Nectarine 1 cup chopped
- Cucumber 2 cups chopped

- Empty the sugar and lemonade mix into the bottom of a 1 gallon pitcher. Tie the tea bags together and place into the pitcher. Pour the boiling water on top. Remove the tea bags once the tea is cool, and refrigerate the tea. Enjoy!

- Steep the tea bag in boiling water for about 2 minutes. Remove and discard bags. In a medium bowl, stir together the tea, sugar, orange juice concentrate and water until sugar is dissolved. Stir in whiskey. Cover and place in the freezer for at least 4 hours.
- Scoop out spoonfuls into a glass and top with a little bit of grapefruit soda.

SOUTHERN SWEET ICED TEA
This is how my Granny made sweet tea and it is some kind of sweet. Know that and beware. Pa-Paw used to down 2-3 glasses after working in the garden all day. Back off the sugar if you can't handle it. This one is for true southerners only ;)

Steps:
- In a large glass measuring cup, place the tea bags and add the baking soda.
- Pour the boiling water over the tea bags.
- Cover and steep for 15 minutes.
- Take out the tea bags and do not squeeze them.
- Pour the tea mixture into a 2-quart pitcher; add the sugar.
- Stir until the sugar is dissolved.
- Add in the cold water.
- Let cool; chill in the refrigerator and serve over ice.

GRANDMA'S ICED TEA
Steps:
- In a tea kettle, fill with water and bring to a boil. Remove from heat and remove kettle lid. Tie the tea bags together for easier handling!! Add tea bags and let cool to room temperature or a lttle warmer.
- Fill a 2 quart pitcher with ice and add frozen OJ, Splenda and lemon juice. Pour tea over ice reserving approximately 1/4 of the tea. Stir until blended and taste.
- Best stirred between 2 pitchers as the ice will work it's magic chilling and blending. Add additional ingredients to a slightly sweet taste if desired. Add remaining tea to maintain the "tea flavor".

Steps:
- Put the tea bags, sugar, honey and 1.5 litres water in a large jug. Leave to infuse for 10 mins, then remove and discard the tea bags. Chill until ready to serve.
- Stir in the lemon juice, lemon slices, orange slices and mint leaves. Fill the jug with plenty of ice and stir again.
- Fill tall glasses with ice and pour over the iced tea, then serve with extra honey to taste.
