BAKED GREEN BEAN FRIES
Steps:
- Preheat the oven to 425 degrees F.
- Spray a large baking pan with cooking spray.
- Mix the panko, Parmesan, onion powder, cayenne and 1/2 teaspoon salt together in a wide, shallow bowl. Whisk the eggs and milk together in another shallow bowl.
- Toss the green beans in the flour. Working a few green beans at a time, shake off the excess flour and dip in the egg. Let the excess egg drip off and then toss in the panko, patting firmly so the crumbs adhere. Arrange the breaded green beans in a single layer in the prepared baking pan and spray thoroughly with cooking spray.
- Bake until golden brown and crisp-tender, about 10 minutes.
BAKED PARM GREEN BEAN FRIES
Steps:
- Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper.
- Beat the egg in a shallow dish with 1 tablespoon water. In another shallow dish, stir together the Parmesan, garlic powder and some salt and pepper. Dip the green beans first in the egg mixture, rolling them to fully coat. Using a fork, gently transfer the green beans to the cheese mixture and roll to evenly coat them on all sides with the cheese.
- Transfer the green beans to the prepared baking sheets, making sure the beans are in a single layer and not touching. Bake until golden brown and crisp-tender, about 10 minutes.

- Preheat oven to 400 degrees F (200 degrees C).
- Pat green beans dry with paper towels if necessary; spread onto a jellyroll pan. Drizzle with olive oil and sprinkle with salt and pepper. Use your fingers to coat beans evenly with olive oil and spread them out so they don't overlap.
- Roast in the preheated oven until beans are slightly shriveled and have brown spots, 20 to 25 minutes.

I have been making these green bean fries for as long as I can remember. I absolutely LOVE eating my veggies this way...But green beans are one of my favorites, because they truly taste just like a french fry! I always sprinkle them with a little extra sea salt when they come out of the oven, and enjoy them warm with low sugar ketchup! I can almost gaurantee that you can get even the pickiest of eaters to not only eat but to love their veggies!

- Preheat oven to 425(F) degrees. Line a baking sheet with foil, and spray with non-stick cooking spray. If using frozen green beans, pop the bag of green beans in the microwave for 3-4 minutes, or until just de-thawed (or you could leave them out at room temperature for a few hours). If using fresh green beans, wash and snip off the ends. Place green beans on prepared baking pan, making sure they are evenly spread out, and none are laying on top of each other, (this will ensure even crispiness!) Sprinkle seasonings and parmesan cheese evenly over green beans. Place green beans in the pre-heated oven and bake for 10-15 minutes, or until golden brown and crispy! (To make them extra crispy, I like to broil them for an extra 1-2 minutes before pulling them out of the oven). Enjoy immediately with low sugar ketchup or dipping sauce of choice.

- Heat canola oil in a large skillet over medium high heat until it registers 325 degrees F on a deep-fry thermometer. Working in batches, dredge shallots in flour, separating the rings and coating them thoroughly; shake off excess flour. Add shallots to the skillet, a handful at a time, and cook, stirring constantly, until evenly golden and crispy, about 2-4 minutes. Transfer to a paper towel-lined plate. Preheat oven to 350 degrees F. Melt butter in a large oven-proof skillet over medium heat. Add shallot and mushrooms, and cook, stirring occasionally, until mushrooms are tender and browned, about 5 minutes. Stir in garlic, thyme and flour, and cook, stirring frequently, until fragrant, about 1 minute. Stir in chicken stock, scraping any browned bits from the bottom of the pan. Bring to a boil; reduce heat and simmer for 4-5 minutes. Str in green beans, and cook, stirring occasionally, until crisp-tender, about 5-6 minutes. GREEN BEAN FRIES
These are tasty alternatives to both regular french fries and also a way to get in your veggies! I make them by the truckload and freeze them. My husband hates green beans but gobbles these up! Serve with Ranch dressing or another favorite dipping sauce.

- Heat the oil in a deep fryer or electric skillet to 375 degrees F (190 degrees C).
- Combine the green beans and water in a saucepan. Cover and bring to a boil. Cook until the beans are bright green, about 4 minutes. Drain and transfer to a bowl. Cover with cold water and set aside.
