CREAMY CHICKEN ENCHILADAS

Steps:
- Heat oven to 350°F.
- Combine chicken, soup, 3/4 cup cheese, 1/2 cup sour cream and 3 Tbsp. cilantro. Spoon about 1/4 cup chicken mixture down center of each tortilla; roll up.
- Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray; top with salsa and remaining cheese.
- Bake 25 min. or until heated through. Top with remaining sour cream and cilantro.

- 1. Blend all but crab meat together. Stir in crab meat. Freeze on cookie sheet, cut into 1/4 sections while frozen. Cook frozen. Broil 5-7 minutes. Use less salt, less butter, more crab.

These were served at a party many years ago, and I have made them from time to time over the years, and they always disappear quickly. If you enjoy seafood, you will love these. Preparation time does not include freezing time.

Steps:
- Combine all ingredients (except muffins) till well combined.
- Spread evenly over split muffins (12 pieces).
- With sharp knife, cut into small pie shaped slices (I usually cut each in 4 pieces, but if you need more, you can cut them smaller).
- Place on cookie sheet.
- Put cookie sheet in freezer until crabbies are frozen.
- When frozen, remove from cookie sheet and place in plastic bag. Return to freezer and store till ready to use.
- When ready to serve, place on cookie sheet.
- Put under broiler until bubbly and crisp, approximately 5 minutes.

EASY ENCHILADAS (BEEF OR CHICKEN)
These easy enchiladas are my husband's favorite recipe of mine. Because of the many different options, it is very versatile.

Steps:
- If using chicken, boil chicken in water.
- Then rinse and shred with fork.
- Add onion and garlic.
- If using ground beef, brown with onion and garlic, drain.
- Add next 7 ingredients (worcestershire sauce through black pepper).
- In another skillet, heat oil.
- Add tortillas, one at a time, for 10 seconds on each side.
- Drain on paper towel.
- In 10x13 baking pan, pour just enough enchilada sauce in the bottom to coat the bottom of the pan.
- Fill each tortilla with a spoonful of meat mixture.
- Cheese, onions, and/or olives can be put inside each enchilada at this time, if desired.
- Roll tortilla and place seam side down in pan.
- Continue with remaining tortillas.
- Pour remaining enchilada sauce over tortillas and top with cheese (additional olives may be added if desired).
- At this time, pan may be refrigerated for several hours or overnight.
- Bake in 350 degree oven for 20 minutes (30 minutes if refrigerated).
- Top with sour cream.
- Enjoy!

- Instructions PREPARATION: Slice the english muffins in half through the center so you create 2 round halves. In a medium bowl, combine the Kraft Old English Cheese, butter, mayonnaise and garlic powder. You need to have the butter extremely soft for it to blend easily. Make sure everything is combined well and smooth. Stir in the crabmeat. Spread the crabmeat mixture over the tops of the english muffins. You want the top to be completely covered, but spread fairly thin with the mixture. You should have enough spread for all 12 muffin halves. Place the muffins onto a baking sheet and place it into the freezer. Let them freeze for 1 hour. Remove the muffins and place on a cutting board. Cut each muffin in half. Cut each half into 3 equal size triangles. You will get 6 pieces from each muffin. Place the triangles into a freezer container and return them to the freezer until you are ready to bake them. . BAKING: Preheat the oven to 400 degrees Place triangles onto an un greased baking sheet. Bake for 10 minutes, until the tops of the Crabbies are lightly browned. Serve at once. HEALTHY CHICKEN ENCHILADAS
A healthy Chicken Enchilada recipe that's easy to make for a weeknight dinner or you can prep ahead on the weekend, freeze and heat in the oven when you need them.

- Preheat Oven to 180'C / 350'F. Prep a large baking tray by rubbing a little olive oil on the base (you can use parchment paper to make clean up easier).
- Heat up a large pot on the stove top. Add olive oil and diced onions. Cook until softened (around 5 minutes). Add chicken pieces, salt and pepper. Fry until juices have evaporated and chicken starts to brown.
- Add cumin, oregano, smoked paprika, garlic. Fry for around one minutes, stiring to coat chicken evenly with spices.
- Pour in stock, tomato puree, beans and corn. Cover pot and allow to simmer on medium for 10-15 minutes until chicken is tender and sauce has thickened slightly. Remove from heat. Use a colander to drain the sauce from the chicken and set sauce and chicken filling aside. DO NOT THROW SAUCE AWAY.
- Soften your tortillas by wrapping in foil and heating in the oven for a couple minutes. This makes them easier to work with.
- Spread a teaspoon sour cream on each tortilla and spoon chicken and bean filling on top along the center. Roll up your tortilla and place seam side down in your baking tray. Repeat until all 8 tortillas are done.
- Spoon strained enchilada sauce over the rolled tortillas and top with grated cheese.
- Bake in the oven for 25 minutes until golden and serve.
