KRISTIN'S TURKEY BUTTERNUT SQUASH CASSEROLE
I got this recipes from Allrecipes.com member Mildred Sherrer, Fort Worth, Texas. This is my very tweaked version that cuts some of the fat and calories. I think this is a great recipe for a family.

Steps:
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch square baking dish.
- Heat olive oil in a skillet over medium heat; cook and stir ground turkey until crumbly and browned, 5 to 10 minutes. Add butternut squash and onion to ground turkey; cook and stir until squash is slightly tender, 5 to 10 minutes. Drain any excess grease from skillet.
- Whisk milk, mozzarella cheese, butter, eggs, salt, and pepper together in a bowl; stir into turkey mixture. Transfer squash-turkey mixture to the prepared baking dish. Sprinkle crackers over squash-turkey mixture.
- Bake in the preheated oven until cooked through and bubbling, 25 to 30 minutes.

TURKEY DINNER WITH ALL THE TRIMMINGS
Steps:
- In a medium pot with a candy thermometer or deep-fry thermometer attached, heat the broth. When the liquid reaches 165 degrees F, with barely any bubbles reaching the surface, add the turkey. Adjust the heat, if necessary, to keep the temperature at 165 degrees F. Using foil, cover the pot around the thermometer and poach the turkey until the internal temperature of the turkey reaches 150 degrees F, about 30 to 40 minutes. Turn off the heat and let the turkey rest in the poaching liquid for an additional 15 to 20 minutes.
- Meanwhile, heat a large nonstick pan over medium heat. When hot, add the olive oil. Add the onions and celery and cook until the vegetables are soft, about 5 minutes. Season with salt and pepper to taste. Add the poultry seasoning and bread. Stir to combine. Lower the heat to low and add the poaching liquid, 1/2 cup at a time (about 1 cup total), to the pan to moisten the bread. Stir well, and then cover. Cook until the bread is moist and hot, about 5 minutes. Stir in the parsley and season with salt and pepper to taste. Set aside.
- Remove the thermometer from the pot and bring the poaching liquid up to a simmer. In a small bowl, add the cornstarch. Whisk in about 1/2 cup of the poaching liquid, and then pour the mixture back in to the pot. Turn up the heat so that the liquid boils. Turn down the heat and simmer until the liquid thickens and reduces in volume by a third, about 10 minutes. If the liquid is too thin, mix more cornstarch with some liquid from the pot and stir it back into the simmering gravy. Season with salt and pepper to taste.
- Slice the turkey breast as thinly as possible. Serve with the stuffing, gravy and cranberry sauce.
THANKSGIVING CHICKEN OVER ROASTED VEGETABLES
If you're hosting a smaller group on Thanksgiving and can't commit to a turkey, or just want to create a holiday vibe on short notice, this one-pan roasted chicken is just the thing. Homemade poultry seasoning, filled with classic flavors like sage, rosemary and thyme, makes your whole kitchen smell just like the holidays.

- Rinse the chicken and pat very dry, inside and out. Combine the chopped rosemary, sage, thyme, 1 tablespoon salt, 1/2 teaspoon pepper and the nutmeg in a small bowl. Rub about two thirds of this salt mixture all over the chicken, inside and out. Stuff the herb sprigs inside the cavity. Set the chicken on a roasting rack to rest and dry at room temperature for 30 minutes.
- Preheat the oven to 400 degrees F.
- Scatter the sweet potatoes, Brussels sprouts and onions in the bottom of a large roasting pan. Drizzle with 2 tablespoons of the melted butter and sprinkle with the remaining salt-herb mixture. Toss well. Set the chicken and roasting rack over the vegetables. Roast until the chicken begins to brown, about 40 minutes.
- Toss the bread cubes in a large bowl with 2 tablespoons melted butter and season with salt and pepper. Remove the roasting pan from the oven. Carefully remove the rack and chicken and set aside; toss the bread cubes into the pan with the vegetables. Put the chicken and rack back over the vegetables and brush the chicken with the remaining 2 tablespoons melted butter.
- Continue to roast until the chicken skin is crisp and golden and the internal temperature reads 165 degrees F on an instant read thermometer when inserted into the thickest part of the thigh not touching bone, about 40 minutes more.
- Remove the chicken to a cutting board to rest for 15 minutes. Increase the oven temperature to 425 degrees F. Toss the vegetables and bread and return to the oven until the vegetables are tender and caramelized and the bread cubes are golden brown and crisp, 5 to 10 minutes.
- Carve the chicken into serving pieces and pour any accumulated juice from the carving board over the roasted vegetables and bread. Toss the vegetables and bread again and serve.
CHICKEN OR TURKEY TETRAZZINI DELUXE
Cooked chicken or turkey breast, pasta, veggies, sherry and broth with creamy and cheesy elements, all baked into a classic. This casserole is a great way to use leftover turkey or chicken. Delicious and freezes well too.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
- Preheat oven to 375 degrees F (190 degrees C).
- Meanwhile, melt butter in a large saucepan over medium heat. Add mushrooms, onion and bell pepper and saute until tender. KRISTEN'S KICKIN' CROCK POT CHICKEN
easy, healthy, and tastes great! i marinated this overnight so that it would be extra flavorful, but I'm sure it'd be just as good if dumped in crock pot in the morning. this is a fun recipe to play with. you can make it as mild or spicy as you'd like. i prefer really spicy but the rest of my family doesn't. i add extra jalapenos on my plate!

KRISTEN'S "CHICKEN" TURKEY DINNER!
My family loves this! They ask for it all the time. It tastes like Thanksgiving dinner and is so quick and easy, they think that I slave in the kitchen when I make it!

Steps:
- Preheat oven to 350.
- Pour the 2 cans of soup in the bottom of a baking pan.
- Place the chicken breasts over the soup.
- Place the swiss cheese slices over the chicken.
- Pour in the stuffing over the whole pan.
- Pour the melted butter over the stuffing to cover.
- If you need more butter to cover, you can melt more, but I use water if I have any dry spots. You don't want it to be mushy wet, just enough to be a little moist.
- Cover with foil and bake for an hour.
- If you want, after the hour, uncover the pan and cook for another 5 minutes to brown the stuffing a little more.
