CORNED BEEF HASH PATTIES
This is a local breakfast favorite with over easy eggs and some steaming white rice. The mix can be made a day ahead to allow the flavors to blend. The patties will also be easier to make once the mixture has chilled.

Steps:
- Boil cubed potato in salted water till tender, drain and allow to cool.
- Combine the rest of the ingredients and mix well, mashing the potato into small chunks throughout the mixture.
- Chill for 2-3 hours or overnight.
- Heat enough oil in pan to evenly coat the bottom. (we are not deep frying these!).
- Form the mixture into patties dredge in panko or flour, shake off excess and fry on both sides till golden brown. Add more oil to frying pan as needed.
- Note: Prep and cook time does not include refrigeration time. This step is optional, patties can be formed and fried as soon as mixture is combined. It may be a little loose and not as easy to work with. End result will be just as yummy!

CORNED BEEF HASH

Steps:
- Heat 2 tablespoons butter with the vegetable oil in a large cast-iron skillet over medium-high heat until almost smoking. Add the onion, season with salt and pepper and cook until translucent, about 4 minutes. Add half of the vegetables and cook, stirring occasionally, until golden, about 5 minutes. Add the corned beef and cook until slightly brown, about 2 minutes.
- Meanwhile, mash the remaining vegetables in a bowl with the parsley and 3/4 cup cooking liquid. Add to the skillet and stir to make a large pancake, adding up to 1/2 cup more cooking liquid, if needed. Cook until the hash is dark on the bottom, about 2 minutes.
- Flip and continue cooking, turning occasionally and adding more butter if needed, until the hash is crunchy on the outside but still moist in the middle, 5 to 7 minutes. Add 1/4 cup cooking liquid 1 minute before serving.
CORNED BEEF HASH CAKES
This recipe is delicious, quick and easy. It goes great with green beans, and is the perfect way to use left over mashed potatoes. Serve with green beans for a quick supper or eggs and toast for a hearty breakfast.

- Heat oil in a large skillet over medium heat. Fry onion in oil until translucent. Transfer to a medium bowl, and mix with mashed potatoes and corned beef. Season with salt and pepper. Form into 8 patties. Fry patties in the skillet over medium-high heat until golden brown on both sides.

CORNED BEEF HASH QUICHE
If you're a fan of corned beef hash, this quiche will not disappoint. This is my favorite version of this delicious quiche.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Melt butter in a skillet over medium heat. Saute onion and ham in the melted butter until onions are soft and ham begins to brown, 8 to 10 minutes. Remove from the heat and set aside to cool.
- Whisk eggs, milk, garlic powder, salt, and pepper together in a large bowl.
- Evenly spread corned beef hash onto the pie crust, pressing firmly with the back of a spoon. Spread ham and onion mixture over top. Pour egg mixture over the top until filled; avoid overfilling. Top with Cheddar cheese.
- Place the quiche on a cookie sheet and bake in the preheated oven until crust is golden brown and center is set, 25 to 30 minutes. Remove from the oven and let stand for 10 minutes before slicing. Serve warm.

KUMARA AND CORNED BEEF HASH PATTIES

Steps:
- Cook the kumala in boiling salted water until tender, drain and mash.
- Cook the onion in the oil in a frying pan until soft but not coloured. Add the cabbage and curry powder and cook only until the cabbage is wilted.
- Add the onions to the kumala with the pineapple, egg and Lea and Perrins Worcestershire Sauce. Mix well.
- Flake in the Corned Beef and mix gently.
- Shape into 6-8 even sized patties and pan fry in a little oil until hot and golden on both sides.
- Serve topped with sliced tomato and a few lettuce greens and a drizzling of your favourite vinaigrette.

- Place the kumara in a saucepan, cover with cold water and sprinkle in some salt. Bring to the boil and cook until the kumara is just tender. Drain thoroughly and set aside.
- Heat some oil in a large frypan and cook the onions over a moderate heat until soft and starting to brown at the edges. Add the mustard, paprika, kumara and corned beef to the pan and cook for 5 minutes or so until the kumara starts to brown. Add a little more oil to the pan if needed.
- Meanwhile, heat a pan of water until boiling, reduce to a simmer and poach the eggs for 2 minutes, or until cooked to your liking.
