1000 Gr lamb meat
150 Gr green beans
2 md Potatoes
2 lg Tomatoes
2 md Carrots
3/4 Glasses of water
1/2 tb Granulated sugar
50 Gr okra
Garlic
15 Gibson onions
2 Green peppers fit for
Salt
4 tb Margarine
1 lg Eggplant
Filling
5 Fresh garlic petioles or

Steps:

  • PREPARATION: Slice the tomatoes into circles. Head, tail and string the beans and cut them into two. Scrape and cut the carrots lengthwise and cube them. After cutting the eggplants lengthwise in two, divide from the middle and cube. Peel the gibson onions. Remove the seeds of green peppers and cut into four. Peel and cube them potatoes. Scrape the fibres on top of the okras. If the garlic to be used is the fresh petioles, dice them. If cloves are used, peel them. Put the cubed lamb meat in big casserole, top with 1/3 of the tomatoes, green beans, carrots, eggplants, gibson onions, half of the tomatoes, green peppers, potatoes, garlic, okra and rest of the tomatoes. Add 1/2 tablespoon salt, the granulated sugar, the margarine, and the water. Cover and place in moderately hot oven. Allow to cook for almost 1.5 hours until the meat and beans are tender. My parents raised sheep for more than 30 years, so I have several lamb recipes. Not only are these chops tender, but they cook quickly. While the lamb broils, I saute zucchini and red pepper to accompany it. People always comment on this great combination. -Ruth Lee, Troy, Ontario

3 tablespoons olive oil, divided
2 tablespoons Dijon mustard
2 tablespoons balsamic vinegar
2 teaspoons dried thyme
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
12 lamb loin chops (1 inch thick and 3 ounces each)
1 medium sweet red pepper, thinly sliced
2 small zucchini, thinly sliced
1 medium sweet onion, thinly sliced

Steps:

  • In a small bowl, combine 2 tablespoons oil, mustard, vinegar, thyme, garlic, salt and pepper; set aside 1 tablespoon. Place the lamb chops on a broiler pan. Spread remaining mustard mixture over both sides of chops. Broil 4-6 in. from the heat for 4-6 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). , Meanwhile, in a large skillet, saute the red pepper, zucchini and onion in remaining oil until crisp-tender. Stir in reserved mustard mixture; toss to coat. Serve with lamb chops.

  • Put lamb pieces in a pot, pour 1/3 cup water over them, cover it and cook it over low heat until it releases its water and then absorbs it back. Add in olive oil and stir. Sprinkle salt and other spices. Put peppers first and stir it until they get tender, then add in onions and keep stirring. After they all get tender, pour pureed tomatoes and stir once. Cover it and cook for about 10 minutes more.
  • Finally, take it from fire and put the bay leaf on the top, cover it again. Let it rest for some minutes. The flavor of the bay leaf will spread into the dish during this time. As I don’t love a very strong flavor of bay in my dish, I use this method, but if you love it, you may put it into the pan with the spices.
